The reaction stability and antimicrobial activities of alliin and alliinase extractrd from garlic, effects of starch, protein and fat on the antimicrobial activities of alliin-alliinase reaction compounds and effects of heating, pH and Aw on the antimicrobial activities of the microencapsulated alliin-alliinase reaction compounds were studied, and the results are summarized as follows : The optimum pH and temperature of alliinase extracted from garlic bulbs were 6.0 and 37℃, respectively. Alliinase held the maxmum activity for 10 min. at the optimum temperature, and was relatively stable for 30 min. The activity decreased significantly after 35 min. at 37℃. The antimicrobial activities of alliin-alliinase reaction compounds varied among microorganism. MIC of the alliin-alliinase reaction compounds were 0.13-1.0% against Gram (+ve) bacteria, 1.0-1.5% against Gram(-ve) bacteria, 0.3% against yeasts, and 0.3-0.5% against molds. The antimicrobial activities of alliin-alliinase reaction compounds were not significantly affected by addition of starch, protein or fat, regardless of the tested concentrations. The antimicrobial activities of microencapsulated alliin-alliinase reaction compounds were significantly affected by pH and temperature. They were markedly decreased as pH and temperature increased from 6.0 to 9.0 and from 65℃ to 95℃, respectively. Water activity of a model food signficantly affected the antimicrobial activities of microencapsulated alliin-alliinase reaction compounds. The growth of bacteria was more severly affected by Aw than that of yeast.
