본 연구는 변성전분에 캡슐화된 향미성분의 보유 정도 및 안정성을 살펴보고, 향미성분 피복물질로서 변성전분의 가능성을 조사하기 위하여 수행되었다. 동결 건조를 이용한 향미성분의 미세캡슐화를 위해 native potato starch (NP), β-cyclodextrin (β-CD), maltodextrin (MD)와 NP를 각각 acid treatment 및 succination 처리한 acid-treated potato starch (ATPS) 와 succinated potato starch (SPS)를 피복물질로 사용하였고, d-limonene을 향미성분으로 사용하였다 (core : wall material=1:4, w/w). 피복물질의 점성과 미세구조는 각각 rapid visco analyzer (RVA)와 scanning electron microscopy (SEM)을 이용하여 분석하였다. 미세캡슐의 산화 안정성은 수분 흡수율과 25ºC와 37ºC에서 peroxide value (POV)와 acid value (AV)를 측정하여 살펴보았다. 미세캡슐의 내부 구조는 SEM을 이용하여 분석하였다. 미세캡슐화의 수율은 SPS (93.35%)로 캡슐화한 경우 d-limonene 보유 정도가 가장 높은 것으로 나타났다. β–CD (90.46%)과 APS (90.08%)로 캡슐화 한 경우 MD (74.50%)와 NP (69.72%)보다 수율이 높은 것으로 나타났다. 산화 안정성은 저장 온도가 높아질수록 감소하였으며, 피복물질 종류에 따라서는, SPS를 피복물질로 하여 향미성분을 캡슐화한 경우 가장 안정한 것으로 나타났다. 피복물질의 미세구조를 살펴보면, ATPS는 표면이 매끄럽지 못하고, SPS의 경우 pore가 형성된 것으로 나타났다. β–CD의 경우 SPS와 유사한 경향을 나타내었으며, MD의 경우 함몰되고 주름진 구조를 나타내었다. 구조적인 차이를 지니는 피복물질을 이용하여 제조한 미세캡슐의 내부구조는 SPS를 피복물질로 하여 캡슐화한 경우 일정한 크기의 pore가 균일하게 분포되어 있는 것으로 나타났다. 반면, NP와 ATPS는 pore의 분포가 불균일 하게 나타났다. β–CD와 MD의 경우 변성전분에 비해 pore 크기가 작은 것으로 나타났다. 변성 전분을 피복물질로 하여 캡슐화한 향미성분의 이화학적 특성과 안정성을 살펴본 결과, SPS가 미세캡슐화 수율이 높고, 향미성분의 저장 안정성을 향상시키는데 가장 우수한 것으로 나타났다.

The physicochemical properties of wall material, such as viscosity and microstructure, were measured using rapid visco analyzer (RVA) and scanning electron microscopy (SEM). The oxidative stability of microcapsules was evaluated by measuring moisture absorption, peroxide value (POV) and acid value (AV) at 25ºC and 37ºC. And the internal structure of microcapsule was observed by SEM. Microencapsulation yield (%) showed that SPS (93.35%) was most effective in the flavor retention. β–CD (90.46%) and ATPS (90.08%) were more effective than MD (74.50%) and NP (69.72%). Oxidative stability was decreased with increasing storage temperature. Among the wall materials, d-limonene of microcapsules in the SPS was the most stable. In scanning electron micrographs for wall materials, modified starch showed the rough surface in some ATPS and pores in SPS. The similar structure was obtained in β–CD compared with SPS. Microstructure of MD presented invaginations. In internal structure of microcapsules, freeze-dried d-limonene emulsion stabilized by SPS showed homogeneous distribution of pore with a regular size in contrast to the irregular arrangement of pore of NP and ATPS. Internal structures of microcapsule stabilized by β–CD and MD were presented smaller pore size than modified starches. Physicochemical properties and stability of flavor encapsulated in modified starches were investigated. Thus, the results of the present study showed that microencapsulated d-limonene with SPS showed the highest flavor retention and the good stability of d-limonene.
