Edible white jelly mushroom (Tremella fuciformis) was cultivated artificially and its antioxidant activity was measured. Various extracts were prepared from fruiting body of T. fuciformis and their antioxidant activity was measured. The following antioxidant activities of the methanol extract from T. fuciformis, and its subfractions were assessed : ABTS+ -radical-cation scavenging activity, 1,1-diphenyl-2-picrylhydrazyl (DPPH)-radical scavenging activity, superoxide-dismutase-like activity, and inhibition of human low density lipoprotein (LDL) oxidation. Among tested subfractions of the methanol extracts, the chloroform extract exhibited the strongest antioxidant activity. The Trolox equivalent antioxidant capacity of this subfraction was 7.89±0.08 (mean±standard deviation) μM Trolox/mg of sample. This fraction also scavenged DPPH radicals by 60% and 80% at 1000 and 5000 ppm and inhibited LDL oxidation by 40% and 80% at 100 and 1000 ppm. The chloroform subfraction was separated with three main peaks by HPLC. Peak 2 exhibited the strongest antioxidant activity in three main peaks and it cavenged DPPH radicals by 68.8±0.3% and 87.2±0.2% at 1000ppm and 2000ppm. Three main peaks in the chloroform subfraction exhibiting antioxidant activity were identified as linoleic acid, oleic acid, and mixture of five fatty acids (palmitic, stearic, margaric, linoleic, and oleic acids) by GC-MS analysis.
