S. cerevisiae와 Thermoanaerobacter. ethanolicus 두 종을 이용하여 에탄올을 생산한 결과, 6탄당인 글루코즈를 사용하는데 있어서는 S. cerevisiae가 더 높은 에탄올 생산량을 나타내었다. 염분농도에 의한 S. cerevisiae의 특성을 확인한 실험에서는 NaCl의 농도가 높아질수록 에탄올 생산은 거의 이루어지지 않았으며, 특히, 3%(V/V) 이상의 농도에서는 낮은 에탄올 생산을 나타내었다. 분리당화공정을 이용하여 에탄올을 생산한 결과는 0.51g ethanol/g dry food waste이였으며, 동시당화공정 적용시에는 0.41g ethanol/g hexose를 생산하는 것을 확인하였다. 이를 통하여 국내의 음식물쓰레기를 자원으로 이용하여 바이오에탄올의 안정적인 생산 가능성을 확인하였다.

In order to enhance the production efficiency of bio-ethanol, the study compared the saccharification efficiency of various enzymes, confirmed the characteristics of ethanol-producing microbes, as well as the tolerance of microbes to the salt concentration, which comprises the feature of domestic food waste, and also confirmed the ethanol production by applying separate hydrolysis and fermentation(SHF) process and Simultaneous saccharification and fermentation (SSF) process. As a result of confirming the production of glucose by using an various enzyme, glucoamlyase and complex-carbohydrase produced 0.52g glucose/g and 0.48g dry food waste, respectively, due to complicated properties and conditions of food waste. Also, as a result of saccharification from food waste by using an enzyme mixture, protease and the mixture of the above two enzymes(glucoamylase and carbohydrase) produced high glucose with about 0.7g glucose/g dry food waste. As a result of producing ethanol by using two types of S. cerevisiae and Thermoanaerobacter Ethanolicus, S. cerevisiae showed a higher production of ethanol in using glucose with hexose. In the test of confirming the characteristics of S. cerevisiae by salt concentration, the higher the concentration of NaCl, the fewer the ethanol production. In particular, when the concentration was over 3%(V/V), the ethanol production was low. As a result of producing ethanol by using SHF, there appeared 0.51g ethanol/g dry food waste; and when applying SSF, 0.41g ethanol/g hexose was confirmed to be produced. Through the process, the possibility of the stable production of bio-ethanol using domestic food waste as a resource could be confirmed.
