However, current generic HACCP model of Chinese cabbage Kimchi is too difficult to apply by small and medium enterprises. This study was to evaluate microbiological hazards in raw materials and manufacturing processes of Chinese cabbage Kimchi, which will be used as microbiological hazard analysis data by small and medium sized businesses. Sixteen raw materials and samples at 7 main processing steps (cutting, salting, washing, dewatering, seasoning, filling and fermentation process) were collected from 10 Chinese cabbage Kimchi manufacturing plants. The microbiological analyses were performed for aerobic plate counts (APC), coliform, E. coli and 7 pathogens (B. cereus, Cl. perfringens, E. coli O157H:7, L. monocytogens, Salmonella spp., S. aureus, and V. parahaemolyticus). Among raw materials, ginger showed the highest contamination levels of 7.96 log CFU/g of APC and 6.61 log CFU/g of coliform. The numbers of APC was decreased from 5.54 ~ 7.22 log CFU/g in salting process to 3.89 ~ 7.05 log CFU/g after washing, and then increased to 3.95 ~ 7.89 log CFU/g through dewatering process. APC levels in seasoning and filling were 6.50, 6.58 log CFU/g and 5.55, 5.25 log CFU/g of coliform, respectively. The high levels of contamination were obtained from non HACCP implemented plants which had poor sanitary management system. No pathogens were detected in all samples. Based on the results, the washing process was selected as CCP and the proper critical limitation was provided to control microbiological hazard. These results also indicates that the preventive measure should be implied at salting and dewatering steps to avoid the cross contamination.
