In order to acquired basis data on development of squid processing food, this study were investigated changes in physical properties and ingredient of boiled squid by acid solution (acetic acid, 0~5%) treatment and pre-boiling(at 55℃ or 80℃) and then main boiling at 100℃. The squid skin was well peeled at 55℃ pre-boiling, solidified at an early stage of 80℃ pre-boiling but removed by agitation. For width and length of the sample after main boiling, peeled sample with acid non-treatment & pre-boiling 55℃ was the least shrinkage, decrease in weight, most increase in width. Peeled sample with acid treatment & pre-boiling 55℃ tended to have much shrinkage. Non-peeled sample was not affected by treated acid solution. Color index, L*-value of 55℃ pre-boiling sample was the highest and a*-value the lowest, non-peeled sample showed the lowest L*-value and highest a*-value by the effect of chromatophore. Hardness of non-peeled sample was the highest, followed by pre-boiling 80℃ and 55℃ sample in the order. All of these three kinds, hardness of acid non-treatment sample was the highest, showed a tendency of the lower with higher acid concentration. As a result of observing with scanning electron microscope(SEM) the skin and muscle layer of boiled squid on boiling method, only sample of 55℃ pre-boiling with 0.5% acid treatment was removed all of the skin 1, 2, 3 and 4 layer, the rest of the samples was remained 3 and 4 skin layer. Proximate composition was moisture about 70% and crude protein about 20% with no difference between raw and boiled squids. Major free sugar in boiled squid was ribose and glucose in all treatment samples, but 55℃ pre-boiling sample was lower in glucose than other samples. Total free sugar content of non-peeled sample was the highest, followed by 80℃ pre-boiling sample in the order and 55℃ pre-boiling sample was relatively very low. Proline in free amino content of the all sample was the highest, followed by taurine and histidine in the order. Acid solution treatment concentration not effect on free amino content. Total free amino acid content of 55℃ pre-boiling sample was the highest, followed by 80℃ pre-boiling sample and non-peeled sample in the order. Inosine in the nucleoside was not detected from all samples and ATP content was the lowest. hypoxanthine contents of 55℃ and 80℃ pre-boiling sample had the highest, AMP and IMP contents were similar values, IMP content of non-peeled sample showed higher than peeled samples. Palmitic acid content was very high in about 40% saturated fatty acid, EPA and DHA was high in about 60% unsaturated fatty acid. Of these, DHA content was the highest, followed by palmitic acid and EPA in the order. these consist of about 85% of total fatty acid. All fatty acids content showed no definite difference on acid treatment and pre-boiling. Mineral P content was the highest on average, followed by K, Na, Mg and Ca content in the order, no effect by pre-boiling temperature or acid solution concentration.
