들깨와 참깨의 볶음조건에 따른 들기름과 참기름의 이화학적 특성, 산화안정성 및 관능적 특성의 변화를 조사하였다. 볶음온도 범위는 180oC~220oC, 볶음시간 범위는 5~75분이었으며, 각 볶음조건에서 볶음 과정이 끝난 시료는 엑스펠라를 이용하여 착유하였다. 볶음조건을 달리하여 착유한 들기름과 참기름에서는 이화학적 특성을 확인하기 위하여 지방산 조성 이외에, tocopherol, phytosterol, policosanol, squalene, lignan 등의 생리활성물질의 함량 변화를 측정하였다. 들기름과 참기름의 볶음 조건에 따른 지방산 함량을 조사한 결과, 볶음 시간이 길어짐에 따라 트랜스 지방산의 함량이 증가되는 경향을 보였으나, 최대로 검출된 트랜스 지방산은 0.87%였다. Tocopherol의 경우 들기름과 참기름에서 α-, β-, γ-, δ-tocopherol 4종 모두 검출되고, 그 중에서 γ-tocopherol이 가장 많이 함유된 것으로 나타났다. 각각의 볶음온도에서 볶음시간이 증가함에 따라 총 tocopherol 함량은 증가되는 결과를 보였으나 장시간 볶은 경우에서는 다시 감소하는 경향을 보여주었다. 들기름과 참기름 모두 phytosterol중 β-sitosterol 함량이 가장 높게 나타났다. Phytosterol은 들기름보다 참기름에서 약 두 배정도 높은 함량을 나타냈지만, policosanol 함량은 참기름보다 들기름에서 약 10배 높은 것으로 나타났다. 볶음온도 및 시간에 따른 들기름과 참기름의 phytosterol과 policosnaol의 함량 변화는 거의 없는 것으로 나타났다. 참기름에서만 검출되는 lignan의 경우에는 볶음 과정 후에 sesamol이 검출되었고, 총 lignan양은 볶음 과정을 거친 경우에 볶지 않은 경우보다 감소하는 것을 확인할 수 있었다. 들기름과 참기름의 인 함량은 볶지 않은 경우 검출되지 않은 반면에 가장 짧은 볶음 시간에서 가장 높은 함량을 보였으나 볶음시간이 증가 함에 따라 급격한 감소를 나타내었다. 한편 갈색도, 형광성은 각각의 온도조건에서 볶음 시간이 증가함에 따라 급격히 높아지는 결과를 보였다. 들기름과 참기름의 볶음 조건에 따른 산화안정성은 과산화물가와 공액이중결합 지방산의 함량을 측정함으로서 비교하였고 이와 함께 토코페롤과 전자공여능의 변화도 함께 조사하였다. 각 볶음온도에서 볶음 시간이 길어질수록 들기름과 참기름의 산화안정성이 높게 나타났다. 이러한 현상은 볶음온도와 시간이 길어짐에 따라 토코페롤을 비롯한 항산화물질의 증가와 관련이 있으며, 저장시간이 길어지면서 토코페롤과 전자공여능이 감소하는 것을 확인할 수 있었다. 이상의 결과를 종합해 보면 생리활성 물질의 함량변화와 산화안정성 및 기호성을 모두 만족시킬 수 있는 볶음 조건으로서 180→에서 45분, 200→에서 30분, 220→에서 15분이 최적 볶음조건으로 나타났다.

The objectives of this study were to investigate changes of chemical compositions, and oxidative stability as well as sensory evaluation of the oils prepared from perilla seed and sesame seed roasted at different roasting temperature (180oC - 220oC), and times (5 - 75 min). After roasting, the perilla oil and sesame oil were extracted from roasted seeds using expeller. Trans fatty acids in the perilla oil and sesame oil prepared at roasting conditions were identified, but no trans fatty acid in the oils prepared at unroasting condition were detectable. The content of nutraceutical constituents such as tocopherol, phytosterol, policosanol, squalene, and lignan in the perilla oils and sesame oils prepared at different roasting conditions were determined and lignan was only detected in sesame oil. Four tocopherol homologues α-, β-, γ-, and δ-tocopherol) were identified and γ-tocopherol was the predominant tocopherol in the both oils. The content of tocopherol of perilla oil and sesame oil increased as the roasting time increased at entire roasting temperatures. The content of phytosterol in the sesame oil was twice compared to that in the perilla oil. However, the content of policosanol in the sesame oil was much less than that in the perilla oil. There are no significant differences in the content of phytosterols, policosnaols, and lignan at different roasting conditions. Meanwhile, there were significant increase in the content of phosphorus, color intensity, and florescence intensity when the roasting time was increased at each temperature. Oxidative stabilities of perilla oils and sesame oils prepared at different roasting conditions were evaluated by peroxide value, and conjugate dienoic acid. The oxidative stability of perilla and sesame oil increased when roasting time increased at each temperature. However, longer roasting time exhibited the undesirable results of sensory evaluation for both oils. Hence, when both oxidative stability and acceptability in sensory evaluation are considered, optimal roasting times at each temperature were 45 min at 180oC, 30 min at 200oC, and 15 min at 220oC, respectively.
