커피를 물의 온도에 따라 온수를 사용하거나 냉수를 사용하여 추출할 수 있다. 전자를 온수 추출(hot water extraction)이라고 하고, 후자를 냉수 추출(cold water extraction)이라고 부른다. 특히, 냉수추출은 3시간 이상의 긴 추출시간을 특징으로 하며, 여과(dripping)와 침지(steeping)로 나뉜다. 추출된 커피의 이화학 성분은 추출온도, 추출시간, 커피입자의 크기, 추출시간 과 같은 다양한 추출조건에 영향을 받는다. 커피의 추출액에 존재하는 비휘발성 이화학 성분은 커피의 아로마와 향미에 중요한 영향을 미치며, 소비자의 관능 선호도와 밀접한 관련이 있다. 따라서 향미 선호도를 형성하는 추출조건을 연구하는 것이 중요하다. 최근 커피 시장에서는 냉수 추출 커피의 수요가 점점 증가하고 있다. 선행연구를 보면 온수추출커피의 추출조건을 다루는 연구들에 집중되어 있다. 반면 냉수 추출 커피의 추출조건에 관한 연구는 제한적이다. 따라서 향미 유도 이화학 성분과 관능 특성을 성명할 수 있는 냉수 추출 커피에 관한 연구가 필요하다. 본 연구에서는 추출방식(여과 vs. 침지)와 추출시간(3, 6, 9, 18시간)에 따른 냉수추출커피의 카페인, 클로로겐산, 트리고넬린과 같은 향미 유도 비휘발성 이화학 성분의 구성과 관능 특성을 조사하였다. 향미 유도 비휘발성 이화학 성분(카페인, 클로로겐산, 트리고넬린)은 HPLC(High Performance Liquid Chromatography) 기기분석을 이용하여 정량 분석하였다. 향미 특성은 정량 묘사 분석법(Quantitative Descriptive Analysis)을 사용하여 훈련된 패널에 의해 조사되었고, 제품 선호도 테스트는 비훈련 패널에 의해 수행되었다. 연구 결과, 추출방법(여과 vs. 침지)과 추출시간(3, 6, 9, 18시간)에 따른 향미유도 비휘발성 성분인 카페인, 클로로겐산, 트리고넬린의 함량에는 유의적인 차이(p<0.05) 가 있었다. 추출방식과 추출시간 간에 유의적인 상호작용(p<0.05)이 있었다. 여과식 냉수추출커피는 추출시간이 증가함에 따라 세 가지 성분 모두 감소하는 경향을 보였고, 침지식 냉수추출커피는 증가하는 경향을 보였다. 정량묘사분석법(quantitative descriptive analysis)를 교육받은 훈련된 패널을 대상으로 초콜릿(chocolaty), 와인 같은(winey), 산미(Acidity), 단맛(sweetness), 쓴맛(bitterness), 바디(body), 뒷맛(aftertaste)의 7가지 관능 묘사 어에 의한 모든 향미 특성은 여과와 침지, 두 가지 추출 방식에 있어 유의적인 차이(p<0.05)가 있었다. 추출시간에 있어서는 유의적인 차이(p<0.05)가 없었다. 비훈련 패널의 선호도 조사결과, 냉수추출커피는 여과와 침지, 두 가지 추출 방식 모두 18시간의 경우가 가장 선호되었다. 여과와 침지 두 가지 추출방식의 냉수추출커피와 온수추출커피인 에스프레소를 9점 기호 척도 법으로 비교하는 선호도 테스트에서는 여과식 냉수추출커피가 가장 선호되었고, 두 번째로는 에스프레소 방식의 온수추출커피, 마지막으로 침지식 냉수추출커피 순이었다. 따라서 18시간 추출한 여과식 냉수추출커피가 향미유도 관점에서 소비자들에게 가장 선호되는 것으로 나타났다.

Especially, the CWE can be characterized by long-term extraction longer than 3 hour, which is divided into two types, dripping and steeping. The chemical components of coffee extracted are affected by a variety of extraction conditions such as water temperature, extraction time, particle size and extraction method. Non-volatile chemical components present in the coffee extract, which are important for aroma and flavor of coffee, are highly related to the consumer sensory acceptability. Thus, it is important that the extraction condition which generate flavor acceptability is investigated. Recently, a needs of CWE-based coffee has been gradually increased in the market. Based on the previous study, it was mainly focused on the study dealing with HWE-based coffee depending on the extraction conditions. There has been the limitation on the study of CWE-based coffee as affected by extraction conditions. Therefore, it is necessarily to study on the CWE-based coffee that might be explained by flavor-contributing chemical and sensory characterization. This study was to investigate the composition profile of flavor-contributing non-volatile chemical components such as caffeine, chlorogenic acid and trigonelline and the sensory characterization of CWE-based coffee depending on the extraction time (3, 6, 9 and 18 h) based on two different extraction methods (dripping and steeping). Flavor contributing non-volatile components (caffeine, chlorogenic acid and trigonelline) were quantitatively analyzed using a HPLC instrumental technique. Flavor characteristics were investigated using a quantitative descriptive analysis (QDA) method by trained panels and a product-based preference test was conducted by untrained panels. As the results of this study, there were significant differences (p<0.05) in the concentrations of non-volatile components such as caffeine, chlorogenic acid and trigonelline by different extraction methods (dripping vs steeping) and time (3, 6, 9 and 18 h). A significant interaction (p<0.05) was found between the extraction method and the extraction time. As the extraction time increases, the CWE-based coffee extracted by dripping method showed a decrease in non-volatile components (caffeine, chlorogenic acid and trigonelline), but the one by steeping method indicated an increase in non-volatile components. There were significant differences (p0.05) was found in the extraction times. As a result of the untrained panel-oriented preference test, the best preference of CWE-based coffee in both extraction methods (dripping and steeping) was 18 h. In the preference test to compare two types of CWE-based coffee (dripping and steeping) with a HWE-based espresso using a 9-hedonic scale, the CWE-based dripping coffee was the best and the second was HWE-based espresso followed by CWE-based steeping coffee. This study indicated that the CWE-based dripping coffee at 18 h might be the most acceptable by consumer in the flavor-contributing point.
