This study was conducted as part of an effort to extend the eatable period before over-acidification of kimchi using an inhibitory effect of hop that may have on the growth of microorganisms participating in Kimchi fermentation. Fermentation patterns and sensory evaluation results were analyzed from Kimchi with different ratio, 0, 0.25, 0.5, 0.75, and 1% of the hop extract to Kimch weight. Beack kimchi, which is not seasoned with red pepper powder, was used for this study to minimize external factors. The study showed that the growth of microorganisms related to Kimchi fermentation was inhibited as the concentration of hop extract increased. Especially, Leuconostocs was found to be most affected by the hop among other test strains, while Saccharomyces was rarely influenced by the hop compared to lactic acid bacteria. The increase of pH level and titratable acidity became small as the concentration of hop extract increased in Kimchi. It was also observed that samples with hop extract was delayed in reaching the level of pH and titratable acidity at optimum maturity compared to the control sample. For Hunter's color value, a-redness and b-yellowness showed negative and positive values respectively with the increase of hop extract, which was believed that the dark green color of 10% hop extract used for Beack Kimchi influenced the result. The result of free sugar analysis using HPLC showed the decrease of sucrose, and the increase of glucose and fructose with the progress of fermentation. Mannitol was not detected on the 1st day of fermentation, but increased to 2850mg/L for control sample, and 490~622mg/L for the samples with hop extract by the 3rd day. Organic acid was either not detected or decreased with the progress of fermentation. Similarly, malic acid was either not found or degreased in all samples. On the contrary, lactic acid showed an increase as samples were fermented over time. However, lactic acid in the test samples with hop extract was produced smaller and later phase in the process of fermentation, which proved that the hop extract has an inhibitory effect on the growth of lactic acid bacteria. At the beginning of the test, lactic acid bacteria level was about 104 CFU/ml in all samples, and increased with the progress of fermentation. The bacteria was most increased between 5 to 7 days, and test samples were found to have at least 2 log cycle less bacteria than the control sample. Ascorbic acid, citric acid, and acetic acid increased with the progress of fermentation. According to the sensory evaluation, it was found that the addition of hop extract had no significant relation(p<0.05) to color preference, carbonated flavor, and mold taste when test samples were compared to the control one. It was also observed that 0.5% or higher concentration of hop extract was not preferred by the panel due to bitterness.
