In this study, researchers surveyed marketing strategy methods to raise awareness on blue crab foods ; create demand for changes and development; and design marketing strategies for processed crab products targeting different dietary lifestyle clusters, through a three-part study. Study 1 focuses on the current needs and demands for processed products. Research on crab preferences showed 84.7% of the surveyors like consuming crabs. The most frequent consuming location for crabs were ‘at home,’ with 61%; then restaurants with 34.4%; and food service facilities with 5%. Consumers replied that crabs were favorable to health (29.0%,) has good texture and taste (27.7%), and is nutritional(21.2%). However, 66.4% of the respondents answered that processed crab products have very low safety standards. The main reasons for purchasing processed blue crab products were taste with 22.5%, then meal replacement with 18.3%, and family preference with 12.9%. On the other hand, inconvenience factors for using crabs or processed crab meat were uncertainty about the raw material with 24.8%, storage and spoilage with 23.1%, and difficult cooking method with 19.1%. Study 2 analyzes the importance and performance of the sales promotion and performance factor. Highest regarded factor for both importance and performance was ‘marking the exact expiration date’, rating 4.42/5 and 3.22/5 respectively. Results from the Importance-Performance Analysis(IPA) show average importance of 3.96 and performance of 2.97. This shows performance is of less importance in processed blue crab product’s popularization. High in both customer importance and satisfaction, the first quadrant, which indicates the factors that should be maintained in the current state for the popularization and promotion of processed blue meat industry, showed easy cooking method, reasonable price, trendy menu, indication of place of origin, and specified expiration date as necessary factors. On the other hand, the third quadrant, which specifies factors of lesser importance to those questioned in importance and performance, showed various promotions - such as promotion through mass media, public institutions, trial programs, cooking demonstrations, crab specialty chains - to be relatively insignificant in terms of importance and performance. Study 3 uses cluster analysis to classify groups according to their dietary lifestyle. The resulting clusters were named ‘eat-out, well-being type’, ‘high interest in dietary life type,’ ‘and ‘low interest in dietary life type’. Cross analysis with the general features showed that the dietary clusters have significant difference in the following areas: age (p<0.01), monthly food expense(p<0.01), monthly income(p<0.01), level of education(p<0.01), cooking preferences(p<0.01), festival participation(p<0.01) and cooking demonstration participation(p<0.01). Overall results showed that the ‘eat-out, well-being type’ was over 50 years of age, with a monthly income of 4 million won (app. 3900 dollars) or more, and a college graduate willing to participate in festivals or cooking demonstrations. An effective marketing strategy for this cluster would be to hold blue crab related festivals and cooking demonstrations held in large supermarket chains or department stores. Nutritional content, additive content, ingredient content, and hygiene were significantly higher in ‘eat-out, well being type’ and ‘high interest in dietary life type’ clusters. The ‘eat-out, well-being type’ who were over 50 years of age and had high-income, showed strong purchase intent for crab stocks, miso paste, powdered blue crab, fried crab meat cutlets and blue crab feed. The ‘high interest in dietary life type’ cluster that were around 30-40 years of age preferred health supplements such as blue crab condiments, blue crab cosmetic products, blue crab concentrate, and blue crab kimchi. People with ‘low interest in dietary life type’ were low-income consumers at the age of 50 years or older. These consumers had high interest for instant food like pre-prepared soy sauce for crab marinara, crab ramen, soy sauce marinated crab, and spicy marinated crab. Results showed that consumers preferred blue crabs and crab processed foods for its taste and nutrition, but are also reluctant to processed blue crab products due to its difficult handling, complicated eating method and price burden. Further studies must be conducted to develop easy, affordable and safely processed blue crab products and to establish a strategic marketing plan targeting specific segment markets.
