Among the various activities, cooking causes a high concentration of PM2.5, which is several times of normal. It is reported that the highest concentration is observed when cooking with oil. There are many studies on the levels of atmospheric particles based on the concentration and chemical characteristics. However, there is a lack of research on the particle size when cooking indoor space. Therefore, in order to understand the physical and chemical characteristics of the particles generated during grilling, the emission factors of ultrafine particles from mackerel's roast were estimated. Moreover, the chemical composition of the generated particles was analyzed by measuring the compositon of carbon, ions and other metals. All the experiments were conducted using 194∼265 g of mackerel in this study. The experiment was started by operating the pump for 1 minute, then the stove was turned on, preheated the frying fan for 5 minutes, injected the cooking oil and finally the mackerel was injected after 1 minute. Initially, flipping was performed twice at intervals of 4 minutes, then flipping was performed twice at intervals of 2 minutes and finally the stove was turned off after 19 minutes of experiment. The experiment was terminated when the concentration of particles was completely dropped down to zero. A real-time particles measurement instrument, Portable Aerosol Spectrometer 1.109 (Grimm Aerosol Technik GmbH & Co., Germany) and a weight method based PM2.5 concentration instrument, PM2.5 Cyclone (URG-2000-30EH, USA) were used for this study. In case of real-time particles meter, density should be corrected. Therefore, in this study, the density was calculated by using the analytical value from the measuring device based on the weight method, and the weight concentration was calculated by measuring the particle size. It was confirmed that the particle diameter indicating the highest concentration in the case of the number concentration density per particle diameter was 29.1 % in the range of 0.28 to 0.35 ㎛. As a result of this study, the estimated density was calculated to be 2.25 g/㎤. Using this, it was confirmed that the particle diameter indicating the highest concentration in the case of the indicated weight concentration was a fraction of 16.1 % in the range of 0.35 to 0.4 ㎛. CMD(Count Median Diameter) is 0.31 ㎛ and MMD(Mass Median Diameter) is 0.42 ㎛, which indicates 0.11 ㎛ larger than CMD. Based on the above results, it can be seen that the PM2.5 emission factor of 2.6 ± 1.4 ㎎ is emitted from each mackerel. As a result of carbon analysis, the average amount of particles was observed as 73.97 % from carbon analysis results. It consisted of 100 % organic carbon and 57.13 % of OC1. Moreover, OC2 of 18.97 %, OC4 of 8.61 %, OC3 of 2.47 % and PC of 8.61 % were observed. Ion components were accounted as 1.22 % of the total fraction. Among these, the cation and the anion were accounted as 0.97% and 0.43 %, respectively. However, it was revealed that no metallic elements where released during the grilling of mackerel. A comprehensive analysis of the above results confirmed that the unknown component was 24.85 %. This unknown component is assumed as OM ' and the OM/OC coefficient was estimated by using the amount of analyzed carbon as 1.34.
