The objective of this study was to evaluate the effects of general characteristics, eating habits, unbalanced diet behavior, and degree of unbalanced diet by food group on toddlers’ unbalanced diet behavior through questionnaires and cooking activities by using 20 toddlers attending a kindergarten in an elementary school, Seosan-si, Chungnam province. The results will be used as the baseline data of nutritional education for improving toddlers’ eating habits and unbalanced diet. The results showed that unbalanced diet was the most serious problem among toddlers’ eating habits. The study evaluated how cooking activities influenced the unbalanced diet and the results revealed that overall eating habits were altered. When the gender effect was examined, male toddlers had less number of eating habits after the treatment and female toddlers showed no significant change in the number of eating habits between before and after treatments. The results indicated that it affected the eating habits of male toddlers more than that of female toddlers. The main change in unbalanced diet was ‘eating rice and side dishes evenly’ and unbalanced diet improved much. In other words, cooking activities enhanced the eating habits and nutritional knowledge. The results showed that toddlers noticed the importance of food, the pleasure of having meals, and improved their eating habit by touching, watching, and cooking foods. The study showed that cooking activities reduced overall unbalanced diet habits. It was found that cooking activities reduced the negative unbalanced diet behaviors. Regarding the question of “If I do not like the food, I turn my head away”, it was 3.84 on average before the treatment but it decreased to 3.16 after the treatment. Moreover, regarding the question of “If I do not like the food, I do not chew”, it was 3.32 on average before the treatment but it decreased to 2.74 after the treatment. Regarding the question of “If I do not like the food, I spit it out”, it was 3.26 on average before the treatment but it decreased to 2.58 after the treatment. Lastly, regarding the question of “If I do not like the food, I do not eat it and run away”, it was 2.84 on average before the treatment but it decreased to 1.74 after the treatment. Additionally, in the aspect of toddlers’ age, there was no difference between before and after the treatment for 5 years old toddlers. However, there was a significant difference for 6 and 7 years old toddlers. The results indicated that the effects of education were more effective to older kids. In other words, cooking activities eliminated the repulsion of toddlers against new foods, made them feel familiar to them, and reduced negative activities. It will be desirable to encourage toddlers to enjoy foods, have a positive attitude toward nutrition and food, and improve negative thoughts on foods and maladaptive behavior due to biased tastes and unbalanced diet through cooking activities. The results of unbalanced diet by food group showed that beans, seaweed, fish, and kimchi were less favored food in the order of less preferred. On the other hand, dairy products, grease and sugar, and fruits were highly preferred. The results revealed that toddlers liked soft, sweet, and easy-to-chew food but rejected hard, hard-to-chew, and foods with strong flavor. It could be due to the westernized foods and familiarity to instant and fast foods. The study evaluated the effects of cooking on the diet of 11 food groups and the results showed that toddlers had less unbalanced diet with vegetable, fish, kimchi, potato, grain, meat, and seaweed group, except bean, after cooking activities. In other words, the guidance on unbalanced diet through cooking activities improved the unbalanced diet of toddlers, helped them try to eat less favorite foods and feel familiar with food ingredients, and overcame the stereotype and avoidance of foods. As shown, cooking activities can be effective to correct unbalanced diet by changing unbalanced diet behavior and food preference. However, the effects were not generally significant on eating habits. The results implied that it would be necessary to help toddlers gain nutritional knowledge and form healthy eating habits through continuous education, not a short-term training. The results of this study revealed the treatment was more effective to kids between 6 and 7 years old. Therefore, it will be necessary to provide more knowledge to toddlers in these ages through nutritional education and study and instruct methods for toddlers to conduct. The existing cooking education can be boring to toddlers because the recipe is very conventional. Therefore, it will be needed to further study the cooking recipes for food groups less liked by toddlers and the shape of activities. Lastly, cooking activities shall be connected with the home activities persistently, not just ending as institutional activities. It is the most important to experience various foods in everyday life. Additionally, it is necessary to develop a nutrition education program for parents because the unbalance diet of parents has a great influence on the child’s diet. It is necessary to recognize the necessity of nutrition education for toddlers and make systematic education.
