실험 결과의 통계처리는 SPSS 12.0 Program-a- 이용하여 분산분석 (ANOVA)과 Ducan's multiple range test로 각 시료 간의 평균값에 대한 유의적 차이를 5% 수준에서 검증하였다.
성능/효과
L. monocytogenes 초기균수 105 CFU/mL에 citric acid0.5% 단독 처리했을 때 배양 초기에는 다소 약한 감소 효과가 나타났으나, 4시간 이후부터는 급격하게 증가하여 24시간 만에 1" CFU/mL에 이르렀다.박테리오신 30 BU/mL 단독 처리의 경우 9시간 만에 1 log unit 감소되었으며, citric acid 0.
