제안 방법
단기간 냉장저장 중 육제품의 아질산이온 잔류량의 변화를 살펴보기 위하여 C 회사로부터 제공받은 베이컨, 햄 및 냉동육제품과 L 회사로부터 구입한 비엔나소시지를 4℃ 냉장고에 보관하면서 8일동안 이틀마다 아질산 이온잔류량을 분석하였다. 이때 아질산이온 잔류량 분석 시작(0 day)은 소시지와 햄은 제조일로부터 2일, 베이컨은 4 일, 냉동 육제품은 14일이 지난 시료였다.

대상 데이터

데이터처리
실험결과는 SAS program(SAS Institute Inc., Cary, NC., USA)의 General Linear Model procedure# 이용하여ANOVA 분석하였으며, 각 저장 기간 사이의 유의성은 p<0.05 수준에서 Fisher's least significant difference test (Steel and Torrie, 1980)를 통하여 검정하였다.

육제품의 염용해성 단백질 함량은 3% NaCl 용액에 용해되는 단백질을 Biuret 방법에 의하여 분석하였다. 육제품 시료 5 g을 3% NaCl 20 mL과 함께 homogenizer(DIAX 900, Heidolph Co.
육제품의 염화물 분석은 AOAC(1994) 방법에 의해 시료 2.5 g을 분쇄한 후 0.5 N 질산은 20 mL를 넣고 70%의 nitric acid 15 mL를 첨가흐}여 시료가 녹을 때까지 hot plate 에서 약 10분정도 가열하였다. 시료가 용해된 후 hot plate 에 있는 동안 5 mL의 7.

성능/효과
육제품을 4℃에서 4주, 그리고 -2VC에서 4개월간 저장 하면서 아질산이온 잔류량을 측정한 결과를 Table 4와 5에 나타내었다. 4℃에서 저장한 비엔나소시지의 아질산이 온 잔류량은 초기에 18.16 ppm에서 14.49, 10.33, 8.58과 6.06 ppm으로 4주 동안 점차 감소하였으며, 베이컨은 초 기에 13.93 ppm이었으며 3주까지는 약 12.40 ppm으로 초기 농도와 유의적 차이가 없었으나 4주 후에는 9.73 ppm으로 현저히 낮은 값을 보였다. 햄에서의 아질산이온의 함량은 16.
