군 급식소 이용실태 조사 결과 아침에 잔반이 많은 이유는? | 2%)으로 나타났다. 중․고등학생의 식습관 조사(44,45)에 따르면 학년이 높아질수록 아침식사를 가볍게 하거나 결식 비율이 증가하는 것으로 나타났는데 군장병은 군에서 규칙적인 생활이 식습관으로 이어져 결식은 하지 않지만 그동안의 습관화된 아침 결식의 영향으로 아침식사에 잔반이 많은 것으로 사료된다. 잔반은 음식에 대한 수응도를 측정할 수 있는 하나의 지표(1)로 잔반량이 많다는 것은 수응도가 낮다는 것이므로 개선을 위해 다양화하고 기호도가 고려된 레시피 개발이 요구된다. |
