우리나라 연안에서 다량 서식하고, 식용으로 사용되고 있는 6종의 해조류(미역, 톳, 다시마, 김, 꼬시래기 및 파래)의 생화학적 조성과 지방산 함량을 조사한 결과는? | 우리나라 연안에서 다량 서식하고, 식용으로 사용되고 있는 6종의 해조류(미역, 톳, 다시마, 김, 꼬시래기 및 파래)의 생화학적 조성과 지방산 함량을 분석하였다. 수분함량은 11.47-13.95%로 종간의 차이가 거의 없었으며, 회분은 갈조류(24.95-26.50%)가 홍조류(19.15% 및 19.43%) 및 녹조류(19.25%) 보다 함량이 높았다. 단백질 함량은 홍조류(14.72% 및 15.44%)가 갈조류 및 녹조류에 비해 약 1.75-3.04배 높았다. 지질은 종간의 차이가 크지 않았으며(2.75-4.43%), 식이섬유는 톳(52.69%)과 파래(52.98%)에서 가장 함량이 높았다. 6종의 해조류 추출물의 지방산 중 C14:0, C16:0, C18:0, C16:1, C18:1n-3, C18:2n-6, C18:3n-6, C20:4n-6 및 C20:5n-3 등이 주요 지방산이었으며, 전체 지방산의 90% 이상을 차지하였다. C22:6n-3은 검출되지 않거나 미량 검출되었다. 주요 포화지방산은 palmitic acid (C16:0)이었으며, palmitoleic acid(C16:1)와 eicosapentaenoic acid (C20:5n-3, EPA)가 각각 주요 단일불포화지방산과 고도불포화지방산으로 나타났다. 시험된 해조류 지방산의 n-6/n-3 비율은 0.72-1.08%로 매우 낮은 값을 보였다. 종합해보면, 시험된 6종의 해조류는 식이섬유가 많고 n-6/n-3 비율이 매우 낮아, 우리나라 연안에서 서식하고 있는 해조류가 인간 건강에 유익할 수 있음을 의미한다. | |
