당질계 감미료와 비당질계 감미료에는 어떤 것들이 있는가? | 현재까지 개발된 감미료는 제조 방식에 따라 천연감미료와 인공감미료로 구분되며, 천연감미료는 다시 사용되는 원료의 특성에 따라 당질계 감미료와 비당질계 감미료로 분류된다(그림 1). 당질계 감미료는 포도당, 과당 등을 포함하는 단당과 설탕과 엿당 등을 포함하는 이당 및 이들의 혼합물, 올리고당류가 있다. 소비톨, 마니톨, 자일리톨 등의 당알콜류들 역시 당질계 감미료에 포함되어 있다. 비당질계 감미료는 배당체 형태의 스테비올 글리코사이드와 글리시리진, 단백질 형태의 타우마틴, 모넬린 등의 천연감미료와 사카린, 아스파탐, 아세설팜-K, 수크랄로스 등의 합성 감미료를 포함하고 있다. 일반적으로 인공감미료와 천연감미료를 포함하는 비영양감미료(non-nutritive sweetener)는 우수한 감미도를 나타낸다(그림 2). |
