What is claimed is: 1. A marine vessel reversing and trim deflector apparatus, comprising: a first deflector, having a degree of freedom allowing the first deflector to be moved into a water jet nozzle stream to deflect the water jet stream so as to provide a backing thrust; and a second deflector, coupled to the first deflector and configured to move in unison with the first deflector, such that the second deflector can be moved into the water jet stream so as to deflect the water jet stream thereby providing a trim force, and such that the trim force has substantially no backing thrust component. 2. The deflector apparatus of claim 1, wherein the first deflector comprises a reversing bucket. 3. The deflector apparatus of claim 1, wherein the second deflector comprises a trim deflector. 4. The deflector apparatus of claim 1, wherein the second deflector comprises a substantially planar surface that deflects the water jet stream. 5. The deflector apparatus of claim 1, further comprising a pivot that provides the degree of freedom for movement of the apparatus. 6. The deflector apparatus of claim 1, wherein the first and second deflectors form a unitary integral part. 7. The deflector apparatus of claim 1, wherein the second deflector has a substantially U-shaped profile. 8. The deflector apparatus of claim 1, wherein the second deflector is coupled to the first deflector by an articulated coupling that allows for motion of the second deflector with respect to the first deflector in at least one degree of freedom. 9. The deflector apparatus of claim 1, wherein the degree of freedom comprises angular positions about an axis and the degree of freedom allows for a first angular position about the axis and a second angular position about the axis. 10. The deflector apparatus of claim 9, wherein the deflector apparatus is configured so that it cannot be in both the first angular position and the second angular position simultaneously. 11. The deflector apparatus of claim 1, wherein the first and second deflectors are arranged with respect to one another so that they cannot both be placed in the water jet stream simultaneously. 12. The deflector apparatus of claim 1, wherein the first and second deflectors are arranged with respect to one another so that they deflect the water jet stream substantially exclusively. 13. A device for controlling thrust in a marine vessel, comprising: a deflector apparatus having a first deflector surface and a second deflector surface, comprising: the first deflector surface configured to deflect a water jet nozzle stream to provide a backing thrust when the deflector apparatus is in a first position; and the second deflector surface configured to deflect the water jet stream to provide substantially only a trim force when the deflector apparatus is in a second position; wherein the deflector apparatus is configured so that it cannot be in both the first and the second positions simultaneously. 14. The device of claim 13, wherein the deflector apparatus comprises an integral unit that includes the first and second deflector surfaces. 15. The device of claim 13, wherein the deflector apparatus comprises at least two components, a first component that includes the first deflector surface and a second component that includes the second deflector surface, the first and second components being coupled to one another. 16. The deflector apparatus of claim 13, further comprising a pivot that provides at least one degree of freedom for movement of the deflector apparatus. 17. The device of claim 16, wherein the pivot of the deflector apparatus provides a degree of freedom about an axis substantially perpendicular to a direction of the water jet stream. 18. The device of claim 13, wherein the first position is a first angular position of the deflector apparatus about a pivot, and the second position is a second angular position of the deflector apparatus about the pivot. 19. A method for generating a backing thrust and a trim force for use in a marine vessel control apparatus, comprising: deflecting with a first deflector in a first position a water jet nozzle stream in a first direction to provide the backing thrust; and deflecting with a second deflector, coupled to the first deflector, in a second position the water jet nozzle stream in a second direction to provide substantially only the trim force; moving the first and second deflectors in unison so that the backing thrust and the trim force are provided substantially exclusively of one another. 20. The method of claim 19, wherein the act of moving comprises rotating the first and second deflectors about a common axis to place the first and the second deflectors in the first and the second positions. 21. The method of claim 20, wherein the act of rotating the first and second deflectors comprises rotating the first and second deflectors into the water jet stream. 22. The method of claim 21, further comprising adjusting a magnitude of the trim force by adjusting a position of the second deflector to adjust an amount by which the second deflector deflects the water jet stream. 23. A method for providing reversing and trimming forces in a marine vessel, comprising: moving a reversing deflector and a trim deflector in unison along a common path of travel; deflecting a water jet stream with the reversing deflector at substantially a first end of the path of travel to provide a backing thrust; deflecting the water jet stream with the trim deflector at substantially a second end of the path of travel to provide substantially only a trimming force. 24. The method as claimed in claim 23, further comprising adjusting a magnitude of the trim force provided by the trimming deflector by adjusting an amount by which the trim deflector deflects the water jet stream. 25. The method as claimed in claim 23, wherein the act of moving the reversing deflector and the trim deflector comprises moving the reversing and trim deflectors to the second position so that the reversing deflector and the trim deflector cannot be in the water jet stream simultaneously. 26. The method as claimed in claim 23, further comprising the act of moving the trim deflector and the reversing deflector to an intermediate position between the first and second end positions that provides for the water jet stream to pass between the reversing deflector and the trim deflector substantially unimpeded.
