Percolating device, for example intended to equip a coffee machine, having a percolating chamber mounted in such a way that it can carry out a displacement in the vertical direction when a control handle is operated. A cap receiving a capsule of product to be infused is also displaced, when the handle is operated, towards the inside of the percolating chamber. A percolating head sliding freely inside the percolating chamber can occupy different relative positions inside the percolating chamber according to the size of the capsule loaded into the cap. A stop device makes it possible to lock the percolating head in a definite position in order to inject steam and/or water through the percolating head.

What is claimed is: 1. A method of preparing a food product from a cartridge, the method comprising: providing a cartridge having one of first and second dimensions, the second dimensions being larger than the first dimensions, and being held in a percolating chamber defined by a percolating assembly comprising a holding portion and a percolating head, the percolating head capable of arrangement in one of a first closed position with respect to the holding portion for containing a cartridge having the first dimensions and a second closed position with respect to the holding portion for containing a cartridge having the second dimensions, the percolating head in the first closed position being in fluid-tight association against a loading member and the percolating head in the second closed position being in fluid-tight association against the cartridge, the percolating head also capable of being locked in the percolating chamber in one of the first closed position and the second closed position; closing the percolating assembly in one of the first and second closed positions by bringing the percolating head into fluid-tight association in the first closed position against the loading member and bringing the percolating head into fluid-tight association in the second closed position against the cartridge; feeding a fluid into the cartridge; and outletting a mixture of the fluid and a substance from the cartridge to prepare a food product. 2. The method of claim 1, wherein the food product is a beverage. 3. The method of claim 1, further comprising stopping the percolating head at a first or second position for configuring the percolation chamber. 4. A method of preparing a food product from a cartridge, comprising: closing a percolating assembly about a cartridge having one of first and second dimensions, the second dimensions being larger than the first dimensions; displacing a percolating head of the percolating assembly by action of the cartridge to configure a percolating chamber according to the dimensions of the cartridge, wherein a recessed portion of the percolating head substantially defines the percolating chamber when the percolating head is in a first closed position for containing a cartridge having the first dimensions, and wherein the recessed portion of the percolating head and part of a holding portion of the percolating head substantially define the percolating chamber when the percolating head is in a second closed position for containing a cartridge having the second dimensions, the percolating head in the first closed position being in fluid-tight association against a loading member and the percolating head in the second closed position being in fluid-tight association with the cartridge, the percolating head also capable of being locked in the percolating chamber in one of the first closed position and the second closed position; feeding a fluid into the cartridge; and outletting a mixture of the fluid and a substance from the cartridge to prepare a food product. 5. The method of claim 4, wherein the food product is a beverage. 6. The method of claim 4, wherein the cartridge having the first dimension comprises a dose of a substance to mix with the fluid to prepare a food product. 7. The method of claim 4, wherein the cartridge having the second dimension has about between 1.5 and 3 doses of a substance to mix with the fluid to prepare a food product. 8. The method of claim 4, wherein the percolating head is movable axially within the holding portion between the first and second positions. 9. A method of preparing a food product from a cartridge having variable dimensions, comprising: closing a percolating assembly about a cartridge having a predetermined capacity; displacing a percolating head of the percolating assembly by action of the cartridge to configure a percolating chamber according to the dimensions of the cartridge, wherein the percolating head slides axially inside the percolating chamber and has a recess shaped to correspond to the shape of the cartridge such that when the cartridge is larger than the recess, the percolating head is pushed upwardly. wherein the percolating head is also capable of being locked in the percolating chamber in one of first and second closed positions; feeding a fluid into the cartridge; and outletting a mixture of the fluid and a substance from the cartridge to prepare a food product. 10. A method of preparing a food product from a cartridge, the method comprising: providing a cartridge having one of first and second dimensions, the second dimensions being larger than the first dimensions, and being held in a percolating chamber defined by a percolating assembly comprising a holding portion and a percolating head, the percolating head capable of arrangement in one of a first closed position with respect to the holding portion for containing a cartridge having the first dimensions and a second closed position with respect to the holding portion for containing a cartridge having the second dimensions, the percolating head in the first closed position being in fluid-tight association against a loading member and the percolating head in the second position being in fluid-tight association with the cartridge, the percolating head also capable of being locked in the percolating chamber in one of the first closed position and the second closed position; closing the percolating assembly by bringing the percolating head into fluid-tight association in the first closed position against the loading member and in the second closed position against the cartridge; injecting a fluid into the cartridge; opening the cartridge in the percolating chamber to release the mixture; and extracting a mixture of the fluid and a substance from the cartridge to prepare a food product. 11. The method of claim 10, wherein a recessed portion of the percolating head substantially defines the percolating chamber when the percolating head is in a first position for containing a cartridge having the first dimension, and wherein the recessed portion of the percolating head and part of a holding portion of the percolating head substantially define the percolating chamber when the percolating head is in a second position for containing a cartridge having the second dimension. 12. The method of claim 11, wherein the cartridge having the first dimension comprises a dose of a substance to mix with the fluid to prepare a food product. 13. The method of claim 11, wherein the cartridge having the second dimension has about between 1.5 and 3 doses of a substance to mix with the fluid to prepare a food product. 14. The method of claim 10, wherein the food product is a beverage. 15. The method of claim 9, wherein the food product is a beverage.
