A method of producing a crude product, comprising: providing at least one catalyst comprising vanadium, one or more compounds of vanadium, or mixtures thereof; and providing an additional catalyst, wherein the additional catalyst comprises one or more Column 6 metals, one or more compounds of one or more Column 6 metals, or mixtures thereof; and contacting a crude feed with the catalyst comprising vanadium, one or more compounds of vanadium, or mixtures thereof, and the additional catalyst to produce a total product that includes the crude product, wherein the crude product is a liquid mixture at 25° C. and 0.101 MPa, the crude feed having a total acid number (TAN) of at least 0.1, and controlling contacting conditions such that the crude product has a TAN of at most 90% of the TAN of the crude feed, wherein TAN is as determined by ASTM Method D664. 2. The method of claim 1, wherein contacting comprises contacting the crude feed with the additional catalyst in the presence of a gas comprising hydrogen, light hydrocarbons, inert gas, or mixtures thereof, subsequent to contact with the vanadium catalyst. 3. The method of claim 1, wherein the vanadium catalyst has, per gram of catalyst, at least 0.0001 grams of: vanadium metal, one or more compounds of vanadium, calculated as weight of vanadium, or mixtures thereof. 4. The method of claim 1, wherein the vanadium catalyst comprises in addition one or more metals from Column 6 of the Periodic Table, one or more compounds of one or more metals from Column 6 of the Periodic Table, or mixtures thereof. 5. The method of claim 1, wherein the vanadium catalyst comprises in addition molybdenum, one or more compounds of molybdenum, or mixtures thereof. 6. The method of claims 1, wherein the vanadium catalyst comprises in addition tungsten, one or more compounds of tungsten, or mixtures thereof. 7. The method of claim 1, wherein the vanadium catalyst comprises in addition a support, the support comprising theta alumina. 8. The method of claim 1, wherein the additional catalyst comprises in addition, one or more metals from Columns 7-10 of the Periodic Table, one or more compounds from Columns 7-10 of the Periodic Table, or mixtures thereof. 9. The method of claim 1, wherein the additional catalyst comprises in addition, one or more metals from Column 5 of the Periodic Table, one or more compounds of one or more metals from Column 5 of the Periodic Table, or mixtures thereof. 10. The method of claim 1, wherein the additional catalyst has, per gram of additional catalyst, from about 0.0001 grams to about 0.6 grams of: one or more Columns 5 metal, one or more Column 5 metal compounds, calculated as weight of metal, or mixtures thereof. 11. The method of claim 1, wherein the additional catalyst comprises in addition vanadium. 12. The method of claim 1, wherein the one or more catalysts comprise in addition a second additional catalyst. 13. The method of claim 1, wherein the TAN of the crude product is at most 50% of the TAN of the crude feed. 14. The method of claim 1, wherein the TAN of the crude product is in a range from about 1% to about 80% of the TAN of the crude feed. 15. The method of claim 1, wherein the TAN of the crude product is in a range from about 0.001 to about 0.5. 16. The method of claim 1, wherein the TAN of the crude feed is in a range from about 0.3 to about 20. 17. The method of claim 1, wherein the crude feed is contacted in a contacting zone that is on or coupled to an offshore facility. 18. The method of claim 1, wherein the method further comprises combining the crude product with a crude that is the same as or different from the crude feed to form a blend suitable for transportation and/or treatment facilities. 19. The method of claim 1, wherein the method further comprises processing the crude product to produce transportation fuel. 20. A method of producing transportation fuel, comprising: processing a crude product, wherein the crude product is obtainable by: providing at least one catalyst comprising vanadium, one or more compounds of vanadium, or mixtures thereof; and providing an additional catalyst, wherein the additional catalyst comprises one or more Column 6 metals, one or more compounds of one or more Column 6 metals, or mixtures thereof; and contacting a crude feed with the catalyst comprising vanadium, one or more compounds of vanadium, or mixtures thereof, and the additional catalyst to produce a total product that includes the crude product, wherein the crude product is a liquid mixture at 25°C. and 0.101 MPa, the crude feed having a total acid number (TAN) of at least 0.1, and controlling contacting conditions such that the crude product has a TAN of at most 90% of the TAN of the crude feed, wherein TAN is as determined by ASTM Method D664. 21. The method of claim 20 wherein the processing comprises distilling the crude product into one or more distillate fractions. 22. The method of claim 20 wherein the processing comprises hydrotreating.
