A display and/or operating device for controlling machines, comprising: a projection device for projecting an image onto a projection area, said image being an operating interface having an appearance; said operating interface for being projected onto a printing material of a press; said operating interface for being projected onto a printed printing material; an acquisition device for scanning said projection area; a control computer connected to said projection device and to said acquisition device by a connection for controlling said projection device and said acquisition device, said connection of said control computer to said projection device and to said acquisition device is at least one of wired and wireless; and said control computer being programmed: to carry out an analysis of said projection area with said acquisition device; and to control content of said image to be projected as a function of a result of said analysis of said projection area; and to change said appearance of said operating interface as a function of a color of the printing material. 2. The device according to claim 1, wherein: said operating interface has operating elements; and an appearance of said operating interface depends upon at least one of said operating elements one of touched and actuated on said operating interface. 3. The device according to claim 1, wherein changes made on said operating interface are displayed on said projection area by said projection device. 4. The device according to claim 1, wherein said operating interface is to be operatively connected to a press for controlling the press. 5. The device according to claim 1, further comprising a press, said operating interface being operatively connected to said press for controlling said press. 6. The device according to claim 5, wherein: said press has operating elements for setting a register; and at least one of said projection device, said acquisition device, and said control computer is configured to actuate said operating elements by touching a register mark on a printed sheet disposed in said projection area. 7. The device according to claim 5, wherein said press has an inking zone setting activated when a color measuring strip of a printed sheet disposed at said projection area is touched. 8. The device according to claim 1, wherein: a printed sheet serves as said projection area; and measured values are projected onto said printed sheet at a point at which said values are actually measured. 9. The device according to claim 1, wherein said projection device, said acquisition device, and said control computer, together, are portable. 10. The device according to claim 1, wherein: said projection area has functionalities; and said acquisition device acquires said functionalities; and said control computer incorporates said functionalities in an output of said image of said projection device. 11. The device according to claim 1, wherein if the changes made on said operating interface are not acceptable to an operator, the operator can change them again without difficulty, without first having to make a proof print. 12. The device according to claim 1, wherein said projection area has sides and said projection device and said acquisition device are on the same one of said sides with respect to said projection area. 13. A display and/or operating device for controlling machines, comprising: a projection device for projecting an image onto a projection area, said image being an operating interface having an appearance; said operating interface for being projected onto a printing material of a press; said operating interface for being projected onto a printed printing material; an acquisition device for scanning said projection area; a sheet support; a sheet-supporting desk having an interior, and said projection device being disposed underneath said sheet support in said interior of said sheet-supporting desk; a control computer connected to said projection device and to said acquisition device for controlling said projection device and said acquisition device; and said control computer being programmed: to carry out an analysis of said projection area with said acquisition device; and to control content of said image to be projected as a function of a result of said analysis of said projection area; and to change said appearance of said operating interface as a function of a color of the printing material. 14. The device according to claim 13, wherein a size of a printed sheet lying on said desk is registered by said control computer through said acquisition device and a size of said image projected is adapted automatically to said registered size of the printed sheet. 15. The device according to claim 13, further comprising a color-testing lamp for illuminating a printed sheet lying on said sheet-supporting desk, said color-testing lamp being connected to said control computer. 16. The device according to claim 15, wherein said projection device and said color-testing lamp are combined in one projection lamp. 17. A display and/or operating device for controlling machines, comprising: a projection device for projecting an image onto a projection area, said image being an operating interface having an appearance; said operating interface for being projected onto a printing material of a press; said operating interface for being projected onto a printed printing material; an acquisition device for scanning said projection area; said projection device being disposed on one side of said projection area and said acquisition device being disposed on another side of said projection area; a control computer connected to said projection device and to said acquisition device for controlling said projection device and said acquisition device; and said control computer being programmed: to carry out an analysis of said projection area with said acquisition device; and to control content of said image to be projected as a function of a result of said analysis of said projection area; and to change said appearance of said operating interface as a function of a color of the printing material. 18. A press, comprising: at least one printing unit; and a display and/or operating device for controlling said at least one printing unit having: a projection device for projecting an image onto a projection area, said image being an operating interface having an appearance; said operating interface for being projected onto a printing material of a press; said operating interface for being projected onto a printed printing material; an acquisition device for scanning said projection area; a control computer connected to said projection device and to said acquisition device by a connection for controlling said projection device and said acquisition device, said connection of said control computer to said projection device and to said acquisition device is at least one of wired and wireless; and said control computer being programmed: to carry out an analysis of said projection area with said acquisition device; to control content of said image to be projected as a function of a result of said analysis of said projection area; and to change said appearance of said operating interface as a function of a color of the printing material.
