A continuous method and system for processing whole muscle meat employs a mixer housing having a pair of parallel rotating shafts located therein. The parallel rotating shafts have a plurality of mixing elements thereon, such as frustoconical elements, blocking elements, or ellipsoid elements. The mixer housing has an input end to receive the meat ingredients, such as meat pieces, salt solution, water, preservatives, and other additives such as spices. The mixer housing has an output, which is separated a distance from the input, such that the output discharges the whole muscle meat product. As the ingredients including the meat move from the input to the output along the shafts, the mixing elements work the meat with the other ingredients thereby increasing ingredient incorporation including diffusion of the salt solution into the whole muscle meat pieces.

The element of claim 1 wherein the generally egg-shaped body has a width along the first axis in the range of approximately 3.4 inches to approximately 4.6 inches. 5. The element of claim 1 wherein the generally egg-shaped body has a length along the second axis of approximately 1.5 inches to approximately 2.5 inches. 6. The element of claim 1 wherein the generally egg-shaped body has a width along the first axis, a length along the second axis, and a ratio of the width to the length in the range of approximately 1.4 to approximately 3.1. 7. The element of claim 1 in combination with a continuous process meat mixer housing having a rotatable shaft therein, the shaft extending through the bore of the generally egg-shaped body perpendicular to the first axis of the generally egg-shaped body. 8. The element of claim 7 wherein the mixer housing includes a barrel having an inner diameter and the shaft has a centerline spaced from an interior surface of the barrel by a clearance distance, the ratio of the barrel inner diameter to the clearance distance being approximately 2. 9. A mixing element for a meat mixer, the element comprising: a body having a length;a pair of rim portions of the body at opposite ends thereof;a throughbore extending along the length of the body, the throughbore configured to receive a shaft therethrough; anda protuberance extending perpendicular to the length of the body and away from the throughbore, the protuberance having a rounded configuration without edges such that the protuberance is adapted for massaging whole muscle meat while preserving the structural integrity of the whole muscle meat, the protuberance having a decreasing cross-section as the protuberance extends away from the throughbore and a base portion adjacent the body that extends from closely adjacent one rim portion to closely adjacent the other rim portion along the length of the body. 11. The mixing element of claim 10 further comprising a second protuberance extending perpendicular to the length of the body, the second protuberance having a rounded configuration without edges. 12. A mixing element for a meat mixer, the element comprising: a body having a length;a throughbore extending along the length of the body, the throughbore configured to receive a shaft therethrough;a protuberance extending perpendicular to the length of the body and away from the throughbore, the protuberance having a rounded configuration without edges such that the protuberance is adapted for massaging whole muscle meat while preserving the structural integrity of the whole muscle meat, the protuberance having a decreasing cross-section as the protuberance extends away from the throughbore; anda second protuberance extending perpendicular to the length of the body, the second protuberance having a rounded configuration without edges,wherein the first and second protuberances are aligned along a common axis extending perpendicular to the length of the body. 13. The mixing element of claim 10 wherein the body has a cylindrical portion and the protuberance extends outward from the cylindrical portion. 14. The mixing element of claim 13 wherein the body has a curved transition portion extending between the cylindrical portion and the protuberance. 15. A mixing element for a meat mixer, the element comprising: a body having a length;a throughbore extending along the length of the body, the throughbore configured to receive a shaft therethrough; anda protuberance extending perpendicular to the length of the body, the protuberance having a rounded configuration without edges such that the protuberance is adapted for massaging whole muscle meat while preserving the structural integrity of the whole muscle meat,wherein the protuberance includes an ellipsoid-shaped portion having a rounded end point. 16. The mixing element of claim 15 further comprising a second protuberance extending perpendicular to the length of the body, the second protuberance having a rounded configuration without edges. 17. The mixing element of claim 16 wherein the first and second protuberances are aligned along a common axis extending perpendicular to the length of the body. 18. A mixing element for a meat mixer, the element comprising: a body having a length; anda protuberance extending perpendicular to the length of the body, the protuberance having a rounded configuration without edges such that the protuberance is adapted for massaging whole muscle meat while preserving the structural integrity of the whole muscle meat,wherein the protuberance includes an ellipsoid-shaped portion having a rounded end point, andwherein the body includes a cylindrical portion having a diameter extending generally perpendicular to the length of the body.
