A drum is positioned around an inner tube so that an annular space is defined between the drum and the tube. A rotatable spiral element defines a gas pathway in the annular space, such that rotation of the spiral pushes particulate solids through the drum while the solids are contacted with gas in the annular space.

A method of coating a plurality of edible particulate solids, comprising the steps of: introducing edible particulate solids into a drum having an interior wall concentric with an inner tube so that an annular space is defined between the inner tube and the drum;a spiral element being positioned in the annular space defining a spiral gas pathway in the annular space such that gas does not travel axially through the annular space except along the spiral gas pathway, the spiral element being rotatable to move solids through the drum;applying an edible coating material to the edible particulate solids to form coated edible particulate solids;rotating the spiral element to cause movement of the coated edible particulate solids through the drum;flowing gas from a gas entry zone along the gas pathway defined by the spiral element to dry or solidify the coating material on the edible particulate solids; anddischarging coated edible particulate solids from the drum. 2. The method of claim 1, wherein the inner tube is provided with apertures and gas is flowed from the inner tube into the annular space between the drum and the inner tube. 3. The method of claim 1, comprising the step of applying a flowable edible coating material to the edible particulate solids in an inlet tube having a diameter smaller than the drum to intimately distribute the flowable edible coating material on the edible particulate solids before the solids are introduced into the drum. 4. The method of claim 1, comprising the steps of: applying flowable edible coating material that is crystallizable upon cooling to the edible particulate solids, andproviding the gas at a lower temperature than the edible coating material to solidify the edible coating material on the edible particulate solids. 5. The method of claim 1, comprising the steps of: removing gas from the drum,conditioning the gas removed from the drum, andrecycling the conditioned gas to the gas entry zone. 6. The method of claim 1, wherein the drum is rotatable independently of the spiral element, and further comprising the step of rotating the inner tube with the spiral element independently of the rotation of the rotating drum. 7. The method of claim 1, comprising the step of: flowing the gas along the gas pathway countercurrently to the movement of the edible particulate solids in the drum. 8. The method of claim 1, comprising the step of: flowing the gas along the gas pathway co-currently with the movement of the edible particulate solids in the drum. 9. A method of contacting gas and particulate solids in the manufacture of edible products, comprising: providing a drum having an interior wall concentric with an inner tube defining an annular space between the tube and the drum;providing a rotatable spiral element in the annular space defining a spiral gas pathway such that gas does not travel axially through the annular space except along the spiral gas pathway;introducing edible particulate solids into the drum at a solids entry point;rotating the spiral element so that the particulate solids are pushed through the drum in the annular space;flowing gas from a source of gas into the annular space between the inner tube and the drum along the gas pathway defined by the spiral element; anddischarging the particulate solids from the drum. 10. The method of claim 9, comprising the steps of: removing gas from the drum,conditioning the gas removed from the drum, andrecycling the conditioned gas to the annular space.
