A seal for use in a valve, comprising: a ring-shaped cartridge, the cartridge having a first portion and a second portion opposite the first portion, and a compressible sealing portion captured between the first and second portions, the first and second portions having respective first and second curved surfaces adjacent to a sealing surface of the compressible sealing portion, wherein the curved surfaces enable a flow control member to compress the sealing portion prior to contacting the curved surfaces when the flow control member moves to a closed position, and wherein the sealing surface is curved, the sealing surface having a first radius of curvature and a second radius of curvature, the first radius of curvature being connected to and substantially equal to the radius of curvature of the first curved surface and the second radius of curvature being different than the first radius of curvature. 2. The seal as defined in claim 1, wherein the curved surfaces provide a first clearance between the flow control member and the first portion and a second clearance between the flow control member and the second portion when the flow control member first contacts the sealing surface, the first clearance being less than the second clearance. 3. The seal as defined in claim 1, wherein a radius of curvature of the first curved surface is greater than a radius of curvature of the second curved surface. 4. The seal as defined in claim 1, wherein the cartridge is coupled to a substantially flexible ring-shaped carrier. 5. The seal as defined in claim 1, wherein the first portion is coupled to the second portion to define a cavity to receive the sealing portion. 6. A seal for use in a valve, comprising: a ring-shaped cartridge, the cartridge having a first portion and a second portion, the first and second portions holding a sealing portion, the first and second portions having respective first and second curved surfaces adjacent to a sealing surface of the sealing portion, wherein radii of curvature of the curved surfaces enable an initial point of contact between a flow control member and the cartridge to be on the sealing surface when the flow control member moves to a closed position, and wherein the sealing surface is curved, the sealing surface having a first radius of curvature and a second radius of curvature, the first radius of curvature being connected to and substantially equal to the radius of curvature of the first curved surface and the second radius of curvature being different than the first radius of curvature. 7. The seal as defined in claim 6, wherein the radii of curvature of the curved surfaces provide a first clearance between the flow control member and the first portion and a second clearance between the flow control member and the second portion when the flow control member initially contacts the sealing surface, the first clearance being less than the second clearance. 8. The seal as defined in claim 6, wherein the radius of curvature of the first curved surface is greater than the radius of curvature of the second curved surface. 9. The seal as defined in claim 6, wherein the sealing portion is compressible. 10. The seal as defined in claim 6, wherein the sealing surface and at least one of the curved surfaces sealingly engage the flow control member when the flow control member is in the closed position. 11. The seal as defined in claim 6, wherein the sealing surface, the first curved surface and the second curved surface sealingly engage the flow control member when the flow control member is in closed position and the sealing portion is in a worn condition. 12. The seal as defined in claim 6, wherein the cartridge is coupled to a substantially flexible ring-shaped carrier. 13. The seal as defined in claim 6, wherein the first portion is coupled to the second portion to define a cavity to receive the sealing portion.
