The portable cooking oil filtering system as recited in claim 1, wherein the pump is reversible, such that, with the first valve in an alternate open position, the cooking oil is drawn through a line from the filtered oil tank, through the first valve and returned to the pump, and then delivered to the supply tank. 4. The portable cooking oil filtering system as recited in claim 1, wherein the cart includes a frame that defines a front upper compartment, a rear upper compartment, and a lower compartment. 5. The portable cooking oil filtering system as recited in claim 4, and further comprising at least one door for selectively closing access to the front upper compartment and at least one door for selectively closing access to the rear upper compartment. 6. The portable cooking oil filtering system as recited in claim 4, wherein the pump is mounted in the front upper compartment of the cart. 7. The portable cooking oil filtering system as recited in claim 4, wherein the supply tank is mounted in the rear upper compartment of the cart. 8. The portable cooking oil filtering system as recited in claim 4, wherein the centrifuge filter and the filtered oil tank are mounted in the lower compartment of the cart.
