A combustion convection oven has improved energy efficiency. The oven includes a moveable exhaust damper that selectively closes off the exhaust plenum so as to inhibit the escape of heated air from the oven's cooking cavity. The exhaust damper is open when the oven is in a heating mode with the burners on, but closed when the oven is in a heated mode where the burners are off. Thus, airflow through the oven is significantly reduced or eliminated when the burners are off. That damper, or another damper, may have a degree of openness that is controlled to be inverse to the speed of the oven's fan.

A method of reducing energy consumption when operating a combustion heated convection oven, the method comprising: operating the oven in a heating mode where: one or more burners of the oven, disposed in a combustion chamber, are on;heated air from the combustion chamber is supplied to a cooking cavity;a fan forcibly circulates air in the cooking cavity;an exhaust plenum is operatively open such that air may flow through the combustion chamber, through the cooking cavity, and through the exhaust plenum to outside the oven;thereafter automatically operating the oven in a heated mode where: the one or more burners are off;the fan forcibly circulates air in the cooking cavity;the exhaust plenum is substantially operatively closed so that air does not flow out of the cooking cavity, through the exhaust plenum, and then out the oven. 2. The method of claim 1: further comprising, thereafter automatically operating the oven in an ignition mode prior to reentering the heating mode;wherein in the ignition mode: the one or more burners are transitioned from being off to being on;the fan forcibly circulates air in the cooking cavity;the exhaust plenum is substantially operatively closed so that air does not flow out of the cooking cavity, through the exhaust plenum, and then out the oven;wherein the ignition mode is limited to last a predetermined time of not more than fifteen seconds and the oven transitions directly from the ignition mode to the heating mode;wherein the oven automatically transitions from the heated mode to the heating mode only through the ignition mode. 3. The method of claim 2: wherein the ignition mode comprises initiating heating of an igniter associated with the burner before supplying gas to the burners;wherein the ignition mode lasts for not more than about ten seconds. 4. The method of claim 1: wherein the oven comprises a damper associated with the exhaust plenum and operative to selectively move between a first position and a second position; the first position allowing airflow through the exhaust plenum; the second position substantially preventing airflow through the exhaust plenum;further comprising automatically moving the damper to the first position when the oven is transitioning into the heating mode;further comprising automatically moving the damper to the second position when the oven is transitioning into the heated mode. 5. The method of claim 4: wherein the damper is a first damper;wherein the oven further comprises a second damper distinct from the first damper and operatively disposed between the combustion chamber and the fan;wherein the second damper is operative to selectively move between a more open position and a more closed, but still open, position;further comprising automatically positioning the second damper, when in the heating mode, in the more open or more closed position depending on a speed of the fan such that the second damper is positioned in the more closed position when the speed is greater and in the more open position when the speed is lower. 6. The method of claim 4: wherein the exhaust plenum comprises an inlet port opening into the cooking cavity;wherein the exhaust plenum comprises a exit port selectively closable by the damper;wherein automatically moving the damper to the second position comprises moving the damper to substantially seal the exit port. 7. The method of claim 1 further comprising thereafter returning to the heating mode. 8. The method of claim 1: wherein the oven comprises a damper associated with the exhaust plenum and operative to selectively move between: a first position allowing airflow through the exhaust plenum;a second position allowing airflow through the exhaust plenum;a third position substantially preventing airflow through the exhaust plenum;wherein the first position constricts the exhaust plenum more than the second position;further comprising automatically positioning the exhaust damper, when in the heating mode, in the first or second position depending on a speed of the fan such that the exhaust damper is positioned in the first position when the speed is greater and in the second position when the speed is lower. 9. A combustion convection oven comprising: a housing having an air intake:a combustion chamber disposed downstream of the air intake and having a plurality of burners;a cooking cavity disposed downstream of the combustion chamber;a fan operable to forcibly circulate air in the cooking cavity;an exhaust plenum disposed downstream of the cooking cavity and leading from the cooking cavity to outside the housing;a first variable damper associated with the exhaust plenum and operative to automatically move between an open first position and a closed second position; the first position allowing airflow through the exhaust plenum; the second position substantially preventing airflow through the exhaust plenum;wherein the oven is operative in a heated mode and a heating mode;wherein, in the heated mode, the burners are off, the fan circulates air in the cooking cavity, and the first damper is in the second position;wherein, in the heating mode, the burners are on, the fan circulates air in the cooking cavity, and the first damper is in the first position. 10. The convection oven of claim 9: wherein the oven is further operative in an ignition mode where the burners are transitioned from being off to being on and the first damper is in the second position;wherein the oven is operative to transition from the heated mode to the heating mode through the ignition mode. 11. The convection oven of claim 9 wherein the first damper is disposed closer to an downstream portion of the exhaust plenum than an upstream portion of the exhaust plenum. 12. The convection oven of claim 11 wherein the first damper is disposed at an exhaust port of the exhaust plenum. 13. The convection oven of claim 9 further comprising: a controller disposed in the housing;an actuator operative to move the first damper between the first and second positions;wherein the controller is operative to control the operation of the fan, the burners, and the actuator. 14. The convection oven of claim 9 further comprising a variable second damper, distinct from the first damper, and operative to automatically variably restrict airflow through the oven inversely with a speed of the fan. 15. The convection oven of claim 9 wherein the first damper is further operative to automatically variably restrict airflow through the oven inversely with a speed of the fan.
