The anvil assemblies may have collapsible anvil support members that may be inserted through an opening in a patient and then expanded to be attached to an anvil plate assembly that has a staple-forming surface thereon. The anvil support member is attachable to the anvil plate assembly in such a way that when the anvil assembly is coupled to the stapling head of a circular stapler, the staple-forming surface is in substantial registry with the staples supported in the stapling head. An anvil for a surgical stapling instrument, said anvil comprising: an anvil plate assembly having a staple forming surface thereon; andan anvil support member configured to move between a radially collapsed position and a radially expanded position wherein, when said anvil support member is in said radially expanded position, said anvil support member is attachable to said anvil plate assembly, said anvil support member being couplable to an actuator portion of the surgical stapling instrument, and wherein said anvil support member comprises: a shaft configured for operable engagement with an actuation member of a surgical stapling device; anda plurality of arms pivotally coupled to a distal end of said shaft and being movable between said radially collapsed position wherein said arms are substantially coextensive with said shaft and said radially expanded position wherein said arms protrude laterally outward from said shaft and wherein each said arm has an attachment end configured to retainingly engage said anvil plate assembly. 2. An anvil for a surgical stapling instrument, said anvil comprising: an anvil plate assembly having a staple forming surface thereon; andan anvil support member configured to move between a radially collapsed position and a radially expanded position wherein, when said anvil support member is in said radially expanded position, said anvil support member is attachable to said anvil plate assembly, said anvil support member being couplable to an actuator portion of the surgical stapling instrument, and wherein said anvil support member comprises: a shaft configured for operable engagement with an actuation member of a surgical stapling device; anda linkage assembly movably journaled on said shaft and being movable thereon between said radially collapsed and expanded positions, said linkage assembly configured for attachment to said anvil plate assembly, wherein said linkage assembly comprises a plurality of jointed links, wherein each said link has at least one pivot joint therein and a proximal end that is retainingly engageable with said anvil plate assembly, and wherein each said jointed link comprises: a distal link having a distal end pivotally coupled to a distal end portion of said shaft and a proximal end;a proximal link having a distal end pivotally coupled to said proximal end of said distal link and a proximal end coupled to a lock ring movably journaled on said shaft for axial travel thereon; anda retention collar attached to said shaft between said distal end thereof and an attachment end, said retention collar configured to retainingly engage said lock ring when said linkage assembly is in said radially expanded position. 3. The anvil of claim 2 wherein said attachment end of said shaft is configured to operably engage a trocar shaft of a surgical circular stapling instrument. 4. The anvil of claim 2 wherein the anvil plate assembly is configurable between a first non-planar configuration and a second substantially planar configuration and wherein said anvil support member is attachable to said anvil plate assembly when said anvil plate assembly is in said substantially planar configuration. 5. An anvil for a surgical stapling instrument, said anvil comprising: an anvil plate assembly having a staple forming surface thereon; andan anvil support member configured to move between a radially collapsed position and a radially expanded position wherein, when said anvil support member is in said radially expanded position, said anvil support member is attachable to said anvil plate assembly, said anvil support member being couplable to an actuator portion of the surgical stapling instrument, and wherein said anvil support member comprises: a shaft assembly having a distal end portion and a proximal attachment portion that is configured for operable engagement with an actuation member of a surgical stapling device; anda plurality of arms wherein each said arm has a plate attachment end configured for retaining engagement with said anvil plate assembly, said plurality of arms pivotally coupled to said shaft assembly and being selectively movable between said radially collapsed position wherein each said plate attachment end is adjacent to said shaft assembly and said radially expanded position wherein each said plate attachment end is spaced away from said shaft assembly. 6. The anvil of claim 5 further comprising a biasing member interacting with said plurality of arms to bias said plurality of arms to said radially expanded position. 7. The anvil of claim 5 wherein said shaft assembly defines a shaft axis and wherein said plurality of arms comprises: a first pair of diametrically opposed arms pivotally coupled to said shaft assembly along a first pivot axis that is substantially transverse to said shaft axis; anda second pair of diametrically opposed arms pivotally coupled to said shaft assembly along a second pivot axis that is substantially transverse to said shaft axis and said first pivot axis. 8. The anvil of claim 7 further comprising means for releasably retaining the plurality of arms in said radially expanded position. 9. The anvil of claim 8 wherein said means for releasably retaining comprises a distal locking end coupled to a distal end of said shaft assembly and configured to retainingly engage proximal ends of each said arm when said arms are in said radially expanded position. 10. The anvil of claim 5 wherein said shaft assembly comprises: a shaft having a distal end and an attachment end for attachment to a trocar of a surgical circular stapling instrument, said shaft being pivotally coupled to said plurality of arms;a locking cap attached to said distal end of said shaft, said locking cap configured to retainingly engage a distal end of each said arm;a deformable lock member supported on said distal end of said shaft;a locking sleeve journaled on said shaft such that said shaft can move relative thereto, said locking sleeve having a distal end for selective contact with said deformable lock member when said shaft is moved in a proximal direction to cause said deformable lock member to bias proximal ends of the arms into retaining engagement with said locking cap. 11. An anvil for a surgical stapling instrument, said anvil comprising: an anvil shaft configured for attachment to an actuator portion of the surgical stapling device, said anvil shaft defining a shaft axis; anda reconfigurable anvil head assembly coupled to said anvil shaft, said anvil head assembly having an overall width measured along an axis that is substantially perpendicular to said shaft axis, said anvil head assembly being reconfigurable between a radially contracted first orientation wherein said overall width has a first magnitude and a radially expanded second orientation wherein said overall width has a second magnitude that is greater than said first magnitude wherein said reconfigurable anvil head assembly comprises: a centrally disposed anvil body attached to said anvil shaft;a pair of first anvil segments attached to first opposing ends of said anvil body and being movable relative thereto such that a magnitude of a first width measured between first outermost edges of said first anvil segments when said first anvil segments are in said first orientation is less than said magnitude of said first width when said first anvil segments are in said second orientation; anda second pair of anvil segments attached to second opposing ends of said anvil body and being movable relative thereto such that a magnitude of a second width measured between second outermost edges of said second anvil segments when said second anvil segments are in said first orientation is less than the magnitude of said second width when said second anvil segments are in said second orientation;wherein said first anvil segments move in a first direction when moving from said first orientation to said second orientation and said second anvil segments move in a second direction that is opposite to said first direction when said second anvil segments move from said first orientation to said second orientation. 12. An anvil assembly for a surgical stapling instrument, said anvil assembly comprising: an anvil shaft;an anvil linkage assembly selectively movable between a radially collapsed position and a radially expanded position, the anvil linkage assembly comprising:a plurality of first anvil plate segments movably supported relative to the anvil shaft; anda plurality of second anvil plate segments movably supported relative to the plurality of first anvil plate segments such that when the anvil linkage assembly is in the radially collapsed position, the plurality of second anvil plate segments are supported inboard relative to the plurality of first anvil plate segments and when the anvil linkage assembly is in the radially expanded position, the plurality of second anvil plate segments cooperate with the plurality of first anvil plate segments to form a continuous annular anvil plate, wherein the plurality of first anvil plate segments and the plurality of second anvil plate segments are movably coupled to a collar that is supported on the anvil shaft for axial movement thereon and wherein a distal link is attached to each of the first anvil plate segments and a distal end of the anvil shaft. 13. The anvil assembly of claim 12 wherein a tissue-penetrating tip is formed on the distal end of the anvil shaft. 14. The anvil assembly of claim 12 wherein the second anvil plate segments are located proximal to the first anvil plate segments when the anvil linkage assembly is in the radially collapsed position.
