Fixed-volumes of liquid are measured and dispensed from a container by empirically determining the liquid surface height and opening a dispensing valve for a time period that is calculated using a volume of liquid specified to be dispensed and the empirically-determined liquid surface height. The liquid surface height in the container is determined empirically for initial and subsequent volumes of liquid that are dispensed. Dispensing accuracy is maintained whether the container is full or nearly empty.

The apparatus of claim 7, wherein different polynomials are selectively evaluated by the computer responsive to the computer's receipt of different signals from the user interface. 11. The apparatus of claim 7, wherein different coefficients of the polynomial are determined by the computer responsive to the computer's receipt of different signals from the user interface, different signals from the user interface representing different selections of different volumes of liquid to dispense. 12. The apparatus of claim 7, wherein the computer is configured to evaluate a polynomial, the coefficients of which determine a length of time that the pinch valve is required to be open in order to dispense a user-specified volume of liquid from a particular container, through a particular discharge tube. 13. The apparatus of claim 12, wherein the particular container is a container having a particular size and wherein the particular discharge tube is a discharge tube having at least a particular inside diameter. 14. The apparatus of claim 7, wherein the user interface comprises a. plurality of different switches, and wherein the computer is configured to interpret multiple switch actuations as being corresponding selections of different volumes to dispense. 15. The apparatus of claim 7, wherein the electrically operable pinch valve is additionally manually operable, configured to manually dispense liquid. 16. The apparatus of claim 7, wherein the computer is configured to determine a valve open time at least once, prior to opening the electrically operable pinch valve. 17. The apparatus of claim 7, wherein the load cell supports only a portion of the weight of the container and its contents, the portion of the weight of container and its contents not supported by the load cell being supported by a surface. 18. The apparatus of claim 17, further comprising a fulcrum located between the container and the surface and, which supports the portion of the weight of the container and its contents that is not supported by the load cell. 19. A method of dispensing user-specified volumes of liquid from a dispenser comprising: a container that contains 1iquid to be dispensed;a load cell coupled to the container;an electrically operable pinch valve, operable to dispense liquid form the container;a user interface configured to enable selection of a first volume of liquid to dispense, from a plurality of different volumes of liquids to dispense: anda computer operatively coupled to the load cell, operatively coupled to the electrically actuated pinch valve and operatively coupled to the user interface:the method comprising:providing, a first signal from the user interface to the computer, the first signal identifying a first volume of liquid to dispense;providing a second signal from the load cell to the computer, the second signal from the load cell representing a partial weight of the container and its contents;evaluating a polynomial having coefficients with the computer, at least one coefficient of the polynomial operating on a value representative of the second signal; andopening the electrically operable pinch valve connected to the container responsive to a third signal from the computer for a length of time determined by the evaluation of the polynomial. 20.
