The watersports boat of claim 1, wherein the non-repositionable aft running surface section includes port and starboard recesses formed in opposed corners of the aft running surface section and spaced outboard the centerline, each of the recesses extending from a respective step at a forward end thereof aft to a respective aft edge thereof, the step forming the first and second non-repositionable side edges. 4. The watersports boat of claim 1, wherein the re-positionable aft running surface section includes an aft edge defining the aft-most point of water contact and opposed port and starboard edges extending longitudinally toward the aft edge and forming the first and second repositionable side edges. 5. The watersports boat of claim 1, wherein the re-positionable aft running surface section is substantially co-planar with the portion of the aft running surface immediately forward the re-positionable aft running surface. 6. The watersports boat of claim 1, wherein the re-positionable aft running surface section is a bottom surface of a running surface extension member mounted to the hull at a running surface extension member receiving area recessed into the aft running surface section. 7. The watersports boat of claim 1, wherein the re-positionable section of the aft running surface is repositionable about a pivot axis bisecting the centerline. 8. The watersports boat of claim 1, wherein the re-positionable aft running surface section is re-positionable between a first position and a second position for adjusting hydrodynamic lift at a stem of the hull. 9. The watersports boat of claim 1, further comprising a keel member having an apex lower than the aft running surface section, inclining toward the aft running surface section aft the apex, and meeting the aft running section forward the transom. 10. A watersports boat comprising: a hull having an underside extending from a forward bow to an aft transom along a longitudinal centerline, the underside defining a running surface that contacts water when the hull moves therein, an aft running surface section of the hull having:a repositionable aft running surface section having a forward edge and first and second repositionable side edges extending aft from the forward edge at acute angles thereto;a non-repositionable aft running surface section located forward of the re-positionable aft running surface section and having first and second non-repositionable side edges meeting the first and second repositionable side edges at the forward edge;wherein the first and second repositionable side edges being aft the first and second non-repositionable side edges and pivotable about a pivot axis perpendicular to the centerline; andwherein the first repositionable and non-repositionable side edges and the second repositionable and non-repositionable side edges both form complementary angles with the forward edge. 11. The watersports boat of claim 10, wherein the aft running surface section extends aft midship to the transom. 12. The watersports boat of claim 10, wherein the non-repositionable aft running surface section includes port and starboard recesses formed in opposed corners of the aft running surface section and spaced outboard the centerline, each of the recesses extending from a respective step at a forward end thereof aft to a respective aft edge thereof, the step forming the first and second non-repositionable side edges. 13. A method of operating a watersports boat, the method comprising: moving a watersports boat forwardly across water, the boat having a hull including an underside extending from a forward bow to an aft transom along a longitudinal centerline, the underside defining a running surface that contacts the water when the hull moves thereacross, an aft running surface section of the hull having a (a) a repositionable aft running surface section having a forward edge and first and second repositionable side edges extending aft from the forward edge at acute angles thereto, (b) a non-repositionable aft running surface section located forward of the repositionable aft running surface section and having first and second non-repositionable side edges meeting the first and second repositionable side edges at the forward edge, and the first repositionable and non-repositionable side edges and the second repositionable and non-repositionable side edges both form complementary angles with the forward edge;adjusting hydrodynamic lift at a stern of the hull by repositioning the re-positionable aft running surface section. 19. The method of claim 18, wherein the re-positionable aft running surface section is re-positioned about a pivot axis bisecting the centerline. 20. The method of claim 18, wherein the aft running surface section extends aft midship to the transom. 21. The method of claim 18, wherein the non-repositionable aft running surface section includes port and starboard recesses formed in opposed corners of the aft running surface section and spaced outboard the centerline, each of the recesses extending from a respective step at a forward end thereof aft to a respective aft edge thereof, the step forming the first and second non-repositionable side edges. 22.
