A system for screening and packaging meat products, comprising: a meat production apparatus comprising at least one packaging area, wherein meat product on a tray is conveyed to the at least one packaging area by a conveyor means;a means for capturing images of the meat products on trays conveyed along the conveyor means;a database comprising information relating to the suitability of meat products and trays for packaging; anda central processor adapted to receive information related to the captured images and, by referencing the suitability information in the database, evaluating whether the meat product and the tray are suitable for further packaging;wherein the processor is configured such that the step of evaluating the suitability of the meat product and the tray for further packaging comprises at least one of: determining the presence of abnormalities of said meat product and determining whether the meat product and the tray are in a desired orientation relative to one another;a directing means for directing the conveyance of the meat products on trays, wherein the directing means is electrically connected to the central processor;wherein the central processor is configured such that when, based on the evaluating step, the central processor identifies the meat product as unsuitable for further packaging, the directing means is positioned such that the tray containing the unsuitable meat product is conveyed away from subsequent processing operations that comprise a step of over-wrapping the meat product and the tray;a re-working area having a conveyance means for receiving trays containing unsuitable meat product conveyed away from the subsequent processing operations comprising an over-wrapping step;wherein the re-working area comprises a means for identifying those trays comprising meat products in an undesired orientation relative to the tray;a means for re-positioning the meat product on the tray such that the meat product and tray are suitable for packaging;wherein the central processor is configured such that when, based on the evaluating step, the central processor identifies the meat product as being free of abnormalities and in the desirable orientation relative to the tray, the directing means is positioned such that the tray containing the meat product is conveyed to subsequent processing operations comprising a step of over-wrapping the meat product and the tray; andwherein the image capturing means is selected from the group consisting of a digital color camera, a digital black and white camera, and a digital video camera. 2. The system of claim 1, wherein the processor is configured such that the step of determining whether the meat product and the tray are in a desired orientation relative to one another comprises comparing a captured image to a pre-existing image. 3. The system of claim 1, wherein the image capturing means is selected from the group consisting of a digital color camera, a digital black and white camera, and a digital video camera. 4. The system of claim 1, wherein the central processor comprise a means for storing information relating to the number of meat products in trays having abnormalities or that are in an undesirable orientation relative to the tray. 5. The system of claim 1, wherein the central processor comprise a means for storing information relating to the number of meat products in trays having abnormalities or that are in an undesirable orientation relative to the tray. 6. A system for screening and packaging meat products, comprising: a meat production apparatus comprising at least one packaging area, wherein meat product on a tray is conveyed to the at least one packaging area by a conveyor means;a means for capturing images of the meat products on trays conveyed along the conveyor means;a database comprising information relating to the suitability of meat products and trays for packaging; anda central processor adapted to receive information related to the captured images and, by referencing the suitability information in the database, evaluating whether the meat product and the tray are suitable for further packaging;wherein the processor is configured such that the step of evaluating the suitability of the meat product and the tray for further packaging comprises at least one of: determining the presence of abnormalities of said meat product and determining whether the meat product and the tray are in a desired orientation relative to one another;a directing means for directing the conveyance of the meat products on trays, wherein the directing means is electrically connected to the central processor;wherein the central processor is configured such that when, based on the evaluating step, the central processor identifies the meat product as unsuitable for further packaging, the directing means is positioned such that the tray containing the unsuitable meat product is conveyed away from subsequent processing operations that comprise a step of over-wrapping the meat product and the tray;further comprising a re-working area having a conveyance means for receiving trays containing unsuitable meat product conveyed away from the subsequent processing operations comprising an over-wrapping step;wherein the re-working area comprises a means for identifying those trays comprising meat products in an undesired orientation relative to the tray;a means for re-positioning the meat product on the tray such that the meat product and tray are suitable for packaging; anda means for conveying trays comprising re-positioned meat products to the subsequent processing operations;wherein the image capturing means is selected from the group consisting of a digital color camera, a digital black and white camera, and a digital video camera; andwherein the central processor is configured such that when, based on the evaluating step, the central processor identifies the meat product as being free of abnormalities and in the desirable orientation relative to the tray, the directing means is positioned such that the tray containing the meat product is conveyed to subsequent processing operations comprising a step of over-wrapping the meat product and the tray. 7. The system of claim 6, wherein the central processor comprise a means for storing information relating to the number of meat products in trays having abnormalities or that are in an undesirable orientation relative to the tray. 8. A system for screening and packaging meat products, comprising: at least one packaging area, wherein meat product on a tray is conveyed to the at least one packaging area by a conveyor means; a database comprising information relating to the suitability of meat products and trays for packaging; and a central processor adapted to receive information related to captured images of the meat products on trays conveyed along the conveyor means, and using the captured images to evaluate whether one of the meat product and the trays are suitable for further packaging by referencing the suitability information in the database; wherein the processor is configured such that the evaluating comprises determining the presence of abnormalities of said meat product and determining whether the meat product and the trays are in a desired orientation relative to one another; wherein the processor is configured based on the evaluating step, to identify whether the meat product is unsuitable for further packaging; a directing means electrically connected to the central processor conveying said trays containing said unsuitable meat product away from subsequent processing operations; wherein the processor is further configured to identify trays comprising meat products in an undesired orientation relative to the trays and conveying the trays to a reworking area to re-position the meat products on the trays such that the meat products and trays are suitable for packaging; wherein when the processor identifies meat products as being free of abnormalities and in the desirable orientation relative to the trays, conveying the trays containing the meat products to subsequent processing operations comprising over-wrapping the meat products and the trays. 9. The system as set forth in claim 8, further comprising discarding meat products comprising abnormalities as determined by said evaluating step. 10. The system as set forth in claim 9, wherein the step of determining the presence of abnormalities of the meat products comprises comparing the captured image to a pre-existing image. 11. The system as set forth in claim 8, wherein the captured images comprise a digital color image. 12. The system as set forth in claim 8, further comprising storing information relating to meat products having abnormalities. 13. The system as set forth in claim 8, further comprising storing information relating to meat products that are in an undesirable orientation relative to the trays. 14. The system as set forth in claim 8, further comprising providing a re-working area having a conveyance means for receiving trays containing unsuitable meat products. 15. The system as set forth in claim 8, further comprising storing information relating to a grade of the meat products, wherein the meat products comprise a subprimal portion. 16. The system as set forth in claim 8, wherein the captured image comprises one resulting from an image gathering means that is programmed to generate images automatically. 17. The system as set forth in claim 8, wherein the captured image is obtained from underneath the meat products as the meat products are conveyed on a transparent means of transport. 18. The system as set forth in claim 8, further comprising providing a report on the quality of the meat products on the trays as the meat products correspond to animals administered a drug. 19. The system as set forth in claim 8, further comprising illuminating the meat products at the time captured images are obtained. 20. The system as set forth in claim 8, associating a barcode with the trays.
