A composite wood board in accordance with claim 1, in which the thermoset organic binder is substantially formaldehyde free. 3. A composite wood board in accordance with claim 1, in which the board has a modulus of elasticity (MOE) of at least 1800 N/mm2. 4. A composite wood board in accordance with claim 1, in which the board has a modulus of elasticity (MOE) of at least 2500 N/mm2. 5. A composite wood board in accordance with claim 1, in which the board has a bending strength (MOR) of at least 14 N/mm2. 6. A composite wood board in accordance with claim 1, in which the board has a bending strength (MOR) of at least 18 N/mm2. 7. A composite wood board in accordance with claim 1, in which the board has an Internal bond strength (IB) of at least 0.28 N/mm2. 8. A composite wood board in accordance with claim 1, in which the board has an Internal bond strength (IB) of at least 0.4 N/mm2. 9. A composite wood board in accordance with claim 1, in which the board has a Thickness swelling after 24 hours in water at 20 ° C. of less than or equal to 10%. 10. A composite wood board in accordance with claim 1, in which the board has a water absorption after 24 hours in water at 20 ° C. of less than or equal to 30%. 11. A composite wood board in accordance with claim 1, in which the board is a wood particle board. 12. A composite wood board in accordance with claim 1, in which the board is an orientated strand board. 13. A composite wood board in accordance with claim 1, in which the board is a fiber board. 14. A composite wood board in accordance with claim 1, in which the board has a resin content (weight of dry resin to weight of dry wood particles) in the range of 8 to 18% by weight. 15. A composite wood board in accordance with claim 1, in which the thermoset organic binder comprises at least one Maillard reaction product. 16. A composite wood board in accordance with claim 1, in which the board comprises wax. 17. A composite wood board in accordance with claim 16, in which the board comprises wax in the range 0.1 to 2% by weight, preferably 0.5 to 1% by weight. 18. A composite wood board in accordance with claim 1, wherein the thermoset organic binder is a reaction product of curing an aqueous binder solution in which the ratio of the number of moles of the amine reactant to the number of moles of the reducing sugar ranges from about 1:4 to about 1:15. 19. A composite wood board in accordance with claim 1, wherein the thermoset organic binder is a reaction product of curing an aqueous binder solution in which the percent by dry weight of the reducing sugar reactant(s) with respect to the total weight of reactants in the aqueous binder solution ranges from about 73% to about 96%. 20. A composite wood board in accordance with claim 1, wherein the thermoset organic binder consists essentially of one or more reaction products of the reducing sugar reactant and the amine reactant. 21. A composite wood board comprising a collection of wood held together by a thermoset organic binder, wherein the thermoset organic binder is substantially formaldehyde free and includes at least one reaction product of: i) a reducing sugar reactant selected from the group consisting of: a reducing sugar; a reducing sugar yielded by a carbohydrate in situ under thermal curing conditions; and combinations thereof; andii) an amine reactant, wherein the amine reactant is a non-protein primary amine reactant NH2—R1, where R1 is alkyl substituted by amino and wherein R1 does not comprise a secondary amino group; andwherein the thermoset organic binder is a reaction product of curing an aqueous binder solution in which the percent by dry weight of the reducing sugar reactant(s) with respect to the total weight of reactants in the aqueous binder solution ranges from about 73% to about 96%, andwhere the composite wood board has:a modulus of elasticity (MOE) of at least 1800 N/mm2, and a bending strength (MOR) of at least 14 N/mm2, andan Internal bond strength (IB) of at least 0.28 N/mm2, anda thickness swelling after 24 hours in water at 20 ° C. of less than or equal to 12%, anda water absorption after 24 hours in water at 20 ° C. of less than or equal to 40%, anda resin content (weight of dry resin to weight of dry wood particles) in the range of 8 to 18% by weight. 22. A composite wood board in accordance with claim 21, wherein the thermoset organic binder consists essentially of one or more reaction products of the reducing sugar reactant and the amine reactant.
