Methods employing detergent compositions effective for reducing hard water scale and accumulation on hard surfaces, namely within food, beverage and pharmaceutical applications are disclosed. The detergent compositions employ phosphinosuccinic acid adducts in combination with an alkalinity source and optionally polymers, surfactants and/or oxidizers, providing alkaline compositions having a pH between about 10 and 13.5.

A detergent composition comprising: a phosphinosuccinic acid derivative comprising a phosphonosuccinic acid and mono-, bis- and oligomeric phosphinosuccinic acid adducts;a water soluble polymer selected from the group consisting of a polycarboxylic acid and hydrophobically modified polycarboxylic acid; andfrom 60-90 wt % of an alkalinity source comprising an alkali metal hydroxide, metasilicate, and/or silicate,wherein a use solution of the detergent composition has a pH between about 10 and 13.5;wherein the detergent composition does not contain an alkali metal carbonate and reduces the formation, precipitation, and/or deposition of hard water scale;wherein the use solution of the detergent composition comprises about 1,000-4,000 ppm of the alkalinity source, from about 1 ppm to about 500 ppm of the water soluble polymer, and about 0.1-400 ppm of the phosphinosuccinic acid derivative; andthe composition has more of the alkalinity source in weight percentage than of the phosphonosuccinic acid derivative. 2. The composition of claim 1, wherein the phosphinosuccinic acid derivative comprises at least 10 mol % of an adduct having a ratio of succinic acid to phosphorus from about 1:1 to about 20:1. 3. The composition of claim 1, wherein the phosphonosuccinic acid (I) and mono- (II), bis- (III) and oligomeric (IV) phosphinosuccinic acid adducts have the following formulas: where M is selected from the group consisting of H+, Na+, K+, NH4+, and mixtures thereof,wherein m plus n is greater than 2. 4. The composition of claim 3, wherein the phosphonosuccinic acid of formula I constitutes about 1-40 wt-% of the phosphinosuccinic acid derivative, the phosphinosuccinic acid adduct of formula II constitutes about 1-25 wt-% of the phosphinosuccinic acid derivative, the phosphinosuccinic acid adduct of formula III constitutes about 10-60 wt-% of the phosphinosuccinic acid derivative, the phosphinosuccinic acid adduct of formula IV constitutes about 20-70 wt-% of the phosphinosuccinic acid derivative. 5. The composition of claim 1, further comprising a nonionic surfactant, anionic surfactant, water, an oxidizer, or a combination thereof. 6. The composition of claim 1, wherein the water soluble polymer is a polyacrylic acid. 7. The composition of claim 1, wherein the phosphinosuccinic acid derivative constitutes about 0.1-40 wt-% of the detergent composition before formation of the use solution. 8. The composition of claim 1, wherein the phosphinosuccinic acid derivative constitutes about 0.1-20 wt-% of the detergent composition before formation of the use solution. 9. A method of reducing or preventing hardness accumulation on a hard surface comprising: contacting a hard surface with a use solution of the detergent composition according to claim 1. 10. The method of claim 9, wherein the phosphinosuccinic acid adduct comprises the phosphonosuccinic acid (I) and mono- (II), bis-(III) and oligomeric (IV) represented by the following formulas: wherein M is selected from the group consisting of H+, Na+, K+, NH4+, and mixtures thereof,wherein m plus n is greater than 2. 11. The method of claim 10, wherein the phosphonosuccinic acid of formula I constitutes about 1-40 wt-% of the phosphinosuccinic acid derivative, the phosphinosuccinic acid adduct of formula II constitutes about 1-25 wt-% of the phosphinosuccinic acid derivative, the phosphinosuccinic acid adduct of formula III constitutes about 10-60 wt-% of the phosphinosuccinic acid derivative, the phosphinosuccinic acid adduct of formula IV constitutes about 20-70 wt-% of the phosphinosuccinic acid derivative. 12. The method of claim 9, wherein the phosphinosuccinic acid derivative constitutes about 0.1-40 wt-% of the detergent composition before formation of the use solution, and the detergent composition further comprises an anionic surfactant. 13. The method of claim 9, wherein the hard surface contacted with the use solution is an interior or exterior hard surface. 14. A method of reducing or preventing hardness accumulation on a hard surface in a food, beverage and/or pharmaceutical cleaning application comprising: contacting a hard surface with a use solution of the detergent composition according to claim 1, and applying rinse water and/or rinse aid to the hard surface. 15. The method of claim 14, wherein the phosphinosuccinic acid adduct comprises the phosphinosuccinic acid adducts represented by the following formulas: wherein M is selected from the group consisting of H+, Na+, K+, NH4+, and mixtures thereof, wherein m plus n is greater than 2, and wherein the phosphonosuccinic acid of formula I constitutes about 1-40 wt-% of the phosphinosuccinic acid derivative, the phosphinosuccinic acid adduct of formula II constitutes about 1-25 wt-% of the phosphinosuccinic acid derivative, the phosphinosuccinic acid adduct of formula III constitutes about 10-60 wt-% of the phosphinosuccinic acid derivative, the phosphinosuccinic acid adduct of formula IV constitutes about 20-70 wt-% of the phosphinosuccinic acid derivative. 16. The method of claim 14, wherein the alkaline detergent composition further comprises an anionic surfactant. 17. The method of claim 16, wherein the water soluble polymer is a polyacrylic acid.
