The device according to claim 1, wherein the at least one detection sensor is a sensor which is sensitive to changes in lighting, or a sensor which is sensitive to movement. 4. The device according to claim 1, wherein the at least one detection sensor is a rotary unit which intercepts the movement path of the cartridge from the at least one insertion section towards the first standby zone. 5. The device according to claim 1, further comprising second retaining means positioned between the at least one insertion section and the first standby zone, the second retaining means in turn being able to move between a first position operable to retain the cartridge at a second standby zone and a second position operable to allow the cartridge to advance towards the first standby zone and movement means for moving the second retaining means between said first and second positions, and wherein the at least one check and control unit is operatively connected to the movement means for moving the second retaining means between said two positions. 6. The device according to claim 1, further comprising safety means for checking the correct positioning of the mobile part in the operating and/or home position, the safety means being operatively connected to the at least one check and control unit which is programmed to stop device operation when the safety means indicate incorrect positioning of the mobile part. 7. The device according to claim 1, wherein the first standby zone is formed either between the two parts, of the infusion unit or by one of said parts of the infusion unit. 8. The device according to claim 2, wherein the at least one check and control unit is programmed to allow the activation of water injection only when the first detection means indicate the presence of the cartridge in the housing. 9. The device according to claim 2, wherein the at least one detection sensor is a sensor which is sensitive to changes in lighting, or a sensor which is sensitive to movement. 10. The device according to claim 2, wherein the at least one detection sensor is a rotary unit which intercepts the movement path of the cartridge from the at least one insertion section towards the first standby zone. 11.
