Biotin is a water-soluble vitamin belonging to the B-complex that acts as a coenzyme for certain enzymes, such as carboxylases, transcarboxylases and decarboxylases. These enzymes catalyze the incorporation, transfer or elimination, respectively, of a carboxyl group to (or, from) a biomolecule. It plays as a growth factor which performs important biochemical functions in body. When lack of biotin, it causes serious human disorders such as inherited syndrome, Multiple Carboxylase Deficiency (MCD). Biotin is wide spread in animal and plant foods. Liver and yeast are the best sources of biotin and egg yolk, beans, and cereals also contain fairly good amount. There are many biotin added market foods and medical supplies in these days. Meanwhile, choline is a kind of vitimin which is an essential component in foods of mammals. It is important as a component of lecithin molecule and is also essential for synthesis of acetylcholine relating delivery of nerve stimulus separated from the end of parasympathetic nerves. When lack of choline, the accumulation of fat in liver causes liver scleroma as well as other biochemical abnormalities. Therefore choline is added to foods and medical supplies. These exists in extremely small amounts in foods especially in milk therefore the analyzing methods used often have many defects affected by proteins and other substances. Here, by establishing the analyzing methods, it will contribute to effectiveness in prevention and curing of diseases as well as processing and quality control of health foods. The microbial method in Food Official Dictionary takes long time, shows high contamination of other microbes and the reproducibility is very low. In this study, the simple and cost efficient HPLC method is used to enhance the sensitivity of detection for analysis of small amount substances. By comparing the HPLC method and the conventional microbial testing method through this study, the present HPLC method appears to be valuable, giving fast, reliable and accurate data. It is very effective for detecting biotin and choline in foods. Accordingly, the HPLC method could be recorded in Food Official Dictionarv.
