식이섬유보충용 식품의 기준 및 규격개선을 위한 기초자료를 마련하고자 식이섬유의 정의, 정의에 따른 식이섬유의 분류, 제시된 식이섬유의 제조공정, 식이섬유보충용 식품에서 식이섬유의 함량 표시, 식이섬유별 기능성 표시 허용범위, 열랑표시방안, 분석방법 등에 대해 문헌과 자료를 이용하여 이론적인 접근과 일부 실험적인 접근으로 결과를 분석하였다. 총 식이섬유는 식품자체가 함유한 식이섬유(dietary fiber)와 기준물질의 변형이나 제조과정을 거쳐 첨가되는 기능성 섬유 또는 첨가된 섬유(functional added fiber)로 구성되며 식이섬유 보충용 식품에 첨가되는 식이섬유는 기능성 섬유가 주를 이루나 일부 식품에서 추출하여 사용한다. 식이섬유는 용해도에 따라 불용성과 용해성 식이섬유로 나누며 일반적으로 80% 에탄올에도 침전되지 않는 성분인 용해성 식이섬유에 난소화성 올리고당, 폴리덱스트로오스 등이 있다. AACC에 의하면 식이섬유는 체내에서 소화흡수 되지 않고 대장에서 발효되는 탄수화물로 다당류, 올리고당류, 리그닌과 관련 식물성 물질이 포함된다. 여기에는 비전분 다당류(NSP), 저항전분(resistant starch), 리그닌과 난소화성 올리고당류, 폴리덱스트로오스가 포함된다. 분석방법은 승인된 AOAC방법을 기준으로 하여 불용성 식이섬유는 효소에 의한 분해 후 여과한 잔여물을, 용해성 식이섬유는 80% 에탄올에 침전되는 부분을 여과 건조하여 측정한다. 저항전분 중에 화학적 변성전분(RS4)과 저분자 용해성 섬유는 pancreatic gravimetric 방법, AOAC 후의 LC를 이용하는 방법으로 분석 가능하다. 식이섬유별 식이섬유 보충용 식품의 허용범위는 1일 권장량 이상의 경우 생리적인 문제점이 발견되나 독성을 나타내지 않으므로 특별한 제한이 없으며 기능성 표시도 현재 연구들이 진행되고 있기 때문에 규격화하기에는 더 많은 연구가 필요하다. 식이섬유는 탄수화물의 4 kcall/g 보다는 낮은 열량을 나타내나 열량은 소화율, 발생 가스에너지, 단쇄지방산의 조정, 발효열, 배변에너지 등에 영향을 받으므로 조건에 따라 달라진다. 국민들이 식이섬d유 섭취량이 권장하는 $20{\sim}35$ g/day 보다 낮으므로 식이섬유를 첨가한 식품의 개발이나 식이섬유 보충용 식품의 관심이 증가되어야 한다.

To prepare the basic information for improvement of standard and regulation of dietary fiber (DF) supplemented foods, the definition, classification and component of dietary fiber, manufacturing procedure, content of DF in dietary fiber supplemented foods, a permitted limit in labeling for health claim of each dietary fiber component, energy value and analytical method for DF were investigated by literature review and experimental approach.
Dietary fiber is defined as the edible parts of plants or analogous carbohydrates that are resistant to digestion and absorption in the human intestine with complete or partial fermentation in the large intestine. DF includes polyaccharides, oligosaccharides, lignin, and associated plant substances (AACC). Total dietary fiber is the sum of dietary fiber, which consists of nondigestible carbohydrates and lignin that are intrinsic and int and intact in plant, and functional (added) fiber which consists of isolated, nondigestible carbohydrates that have beneficial physiological effects in human. Most of DF in dietary fiber supplemented foods are functional fiber which are included polydextrose, resistant oligosaccharide, some of resistant. starch and so on. Total dietary fiber is classified insoluble and soluble DF by solubility. The determination of total dietary fiber by an enzymatic-gravimetric procedure has been adopted official AOAC method(985.29, 991.43 992.16, 993.19, 2000.11, 201.03). Some of soluble DF(unprecipitated by 80% ethanol), such as polydextrose, fructan, resistant oligosaccharide, are analyzed by LC after AOAC (enzymatic-gravimetric) method and RS4 resistant starch could be digested by pancreatic gravimetric method. The beneficial physiological effects of total dietary fiber are included to reduce blood glucose and cholesterol, reduce colon cancer and constipation, etc. The energy value of each DF is ${\sim}$ 2 kcal/g (under 4 kcal/g) and is changed by the condition of digestibility, fecal energy, gaseous energy, heat of fermentation, kinds of short chain fatty acids. The recommended dietary reference intake of DF is suggested 20(25)-35 g/day and 15-30 g/day of DF might be taken using dietary fiber supplemented foods for Korean. It is hard to suggest the labeling the functionality per each added DF in dietary fiber supplemented foods currently, clinical experiments for functionality of DF in human would be continued.
