배 원황 품종의 수확 후 생리는 호흡급등형 패턴을 보이는 것으로 조사되었다. 당도 및 전분지수를 고려한 원황의 수확적기는 만개 후 125일이었다. 상온 유통의 예냉처리는 10℃로 하는 것이 품질, 과실갈변, 저장기간이 우수하였고 약 7일 연장이 가능하였다. 예냉과 1-MCP 병행 처리는 예냉 단독 처리보다 5일, 무처리보다 10일까지 품질이 연장되었다. ‘만풍배’의 적정 수확시기는 만개 후 160일 전후였으며 수확이 늦을수록 당도는 증가하고 산도는 감소되었지만, 174일 이후에 수확한 과실은 경도가 낮아졌다. 만풍배를 1℃에서 저장하였을 때 저장 후 당도는 계속 증가하였다. 5주간 저온저장 후 품질은 167일에 수확한 과실이 당도는 가장 높았으나 경도가 가장 낮았다. 850g 이상의 과실은 6주 저장 후에 550g의 소과에 비해 경도가 낮게 나타났으며 소과에서는 바람들이가 나타나지 않았다. 만풍배의 아표피층은 층수가 적고 두께가 얇은 특징을 갖고 있고 이로 인해 재배나 선과과정에서 코르크가 쉽게 벗겨져 과피 갈변이 나타나는 것으로 조사되었다. 만풍배의 착색봉지 사용은 과피색이 우수해지는 장점이 있지만 과피가 얇아지기 때문에 투광성이 좋은 황색봉지나 신문봉지를 이용하는 것이 유리할 것으로 판단되었다. 만수에서 투광성이 낮은 착색봉지는 미세 열과를 발생시키기 때문에 투광성이 좋은 봉지를 이용하는 것이 유리하다.
배 신품종의 시기별 신초 적심처리에 의한 꽃눈형성 정도는 한아름, 원황, 화산 품종에서는 6월 하순경 일찍 처리하는 것이 좋았고 만풍배는 7월 중순 이후에 처리하는 것이 우수하였으며 모든 품종에서 신초를 유인하는 것이 액화아 형성정도가 무처리에 비해 우수하였다. 따라서 결과지가 부족한 나무는 철저한 유인을 실시하여 액화아 형성을 유도하는 것이 유리할 것으로 판단되었다. 원황은 6월 20일과 7월 5일에 하기 전정한 나무에서 생산된 과실의 과중이 우수하였고 경도, 당도, 산함량 등의 과실 특성은 큰 차이가 없었다. 원황을 일시에 수확하는 경우 과 중은 350∼650g까지 다양하고 550∼650g의 과실은 당도도 높고 충분히 성숙하였지만 350∼ 549g의 과실은 미숙상태로 수확되었다. 특히 착과된 위치에 따라 햇빛이 투과되는 정도가 적은 수관 하부에서 생산된 과실은 상대적으로 성숙정도가 늦은 과실이 수확되었다. ‘원황’은 유통기간이 짧아 밀증상, 내부갈변 등의 문제를 일으킬 수 있는 품종으로 적숙기 7∼10일 이전부터 550g부근의 과실부터 수확하고 4∼5일 간격으로 2∼3회 분산 수확하는 것이 품질이 우수하고 수량도 증수할 수 있다. 원황과 만풍배에서 동계 가지 절단 정도에 따라 꽃눈형성 및 단가지 형성 정도를 관찰한 결과 원황에서는 총눈수와 꽃눈수가 무처리에서 가장 많았으며 1/2 및 1/3 절단 처리간에는 차이가 전혀 관찰되지 않았다. 만풍배에서 1/2 절단 처리구의 총눈, 꽃눈, 꽃눈형성율이 가장 작았고 절단 길이에 따라 비례하였다. 신품종인 원황, 만풍배를 재배할 경우, 나무 내부에 발생되는 불필요한 햇가지는 6월 하순 이전에 하기 전정의 실시가 필요하며, 7월 이후에는 하기 전정의 효과가 떨어진다. 원황과 만풍배의 하기 전정에 의한 과실 특성은 과중이 다소 적거나 유사한 경향이며, 하기 전정의 시기가 늦어지면 과중이 다소 작아지는 경향을 보였고, 당도에서는 처리 간에 차이가 거의 없다. 원황, 만풍배의 하기 전정에 의한 과실 수량을 보면 주당 수확과수 증가로 10a당 수량에서 원황은 10% 이상, 만풍배는 9.7∼22.1%가 증가되었다.
만풍배, 원황, 추황배, 한아름, 신고 등 5품종의 개화기 저온 피해 정도 조사결과, 4℃에서는 10분 처리에서도 만풍배를 제외한 품종에서 90%이상의 피해율을 보였으며 3℃에서는 30분 이상, 2℃에서는 60분 이상, 0℃에서는 180분 이상 저온에 노출될 경우 화기의 90%이상이 피해율를 입었다. 0℃에서는 60분에 만풍배, 원황, 추황배의 피해율이 낮았으며 만풍배는 180분에도 다른 품종보다 피해율이 낮았다. 개화기 저온에는 한아름, 원황, 신고보다 만풍배, 추황배가 강한 것으로 나타났으며, 저온에 강했던 추황배나 만풍배의 질소 수준이 다른 품종보다 더 낮은 경향을 확인 할 수 있었다. 개화기가 빨랐던 신고에서 개화기 전후의 저온으로 꽃잎이 어린 과실 계속 붙어 있을 경우 얼면서 과피에 상처를 유기하고 과정부 얼룩 및 미세 열과 증상이 발견되었다. 기상재해로 인한 꽃눈 고사, 개화기 저온피해 등 정상 착과가 어려운 경우 결과지 길이별 과실품질에 대한 정보 제공하고자 한아름, 원황, 화산 만풍배의 5cm미만, 10~15cm 및 20cm 이상 결과지의 정아와 20cm 이상 결과지의 액아의 과실품질 조사결과 품종에 관계없이 액아보다는 정아가, 결과지 길이가 짧을수록 좋았다. 특히 만풍의 경우 과실이 작으면 경도가 높아져 소과가 생산되는 액화아나 20cm 이상의 결과지에는 가급적 착화시키지 않는 것이 좋을 것으로 판단되었다. 2012년 8월말 태풍으로 인한 배 과수원의 수형 및 품종별 피해 조사결과 Y자형보다 배상형의 피해가 더 컸으며, 품종별로는 추황배, 신고, 황금배순으로 숙기가 늦을수록 낙과율이 적었다. 과수원 위치별 낙과 피해 조사결과는 품종과 관계없이 가장자리보다 가운데인 3번째 열이 피해가 적었다. 낙과피해율이 방풍망이 없는 관행재배의 30.4%보다 파풍망이 있을 경우 16.5%로 감소되었다. 낙과의 가공 활용을 위해 숙기가 다른 원황, 신고, 추황배 3품종의 가열배즙을 제조결과 품종에 따른 총 폴리페놀과 총플라보노이드 함량은 추황배의 함량이 가장 많았으며 원황, 신고 순이었고, 품종별 항산화 활성은 추황배 > 신고 >원황 순이었지만, 기호도는 원황 > 신고 > 추황배 순이었다. 품종에 따른 가열 배즙의 기호도 조사 결과 원황 중과와 대과는 전체 선호도가 7.17, 7.83으로, 8월말에 낙과가 되어도 숙기가 가까워 가열배즙으로 이용할 수 있지만, 신고나 추황배는 향, 색, 맛, 전체선호도 등 조사항목 모두 낮은 점수를 보였으며, 풋내 등 기호도가 낮아 가공 이용이 어려울 것으로 판단되었다. 품종에 따른 배건과의 기호도 조사 결과 원황의 전체 선호도가 높았으며, 신고의 경우 중간정도였으나 갈변 현상이 있어 색도에서 점수가 낮았으며 추황배는 가열배즙과 마찬가지로 향, 색, 맛, 전체선호도 등 조사항목 모두 낮은 점수를 보였다. 하지만 배에서 분리된 폴리페놀은 면역강화, 총 콜레스테롤 및 중성지질 감소 등의 효과가 우수한 것으로 보고되어 있어, 총폴리페놀 함량이 높은 추황배는 기능성 및 항산화활성 증진을 위한 가공 원료로 활용할 수 있을것으로 판단되었다.

The proper harvest time in ‘Wonhwang’ pear was 125 days after full bloom (DAFB) for soluble solid contents (SSC) and starch index. Ten ℃ precooling before room temperature storage results better fruit quality, core browning, shelf-life; extension about 7 days. Precooling with 1-MCP treatment was prolonged than only precooling (5 days) and (10 days). The proper harvest time in ‘Manpungbae’ pear was about 160 DAFB. The characteristics of late harvest were increased SSC and decreased acidity. The fruits harvested after 174 DAFB was decreased firmness. SSC of ‘Manpungbae’ fruits increased continuously during storage at 1℃. After 5 weeks storage at low temperature, the fruits harvested at 167 DAFB had the highest SSC and lowest firmness. After 6 weeks storage, the lower firmness was observed in bigger fruits (weighing over 850 g) and no pithiness fruit was observed in smaller fruit. The morphological characteristics of ‘Manpungbae’ were few and thin hypodermis layers so that peel brown appeared because cork tissue was easy to take off in growing and selection. The use of black outer paper bags make fruits into excellent coloration in ‘Manpungbae’ fruits however it also make peal thinner. ‘Mansoo’ pear trees should use the bags with higher light transmittance of the paper, because micro-crack on the ‘Mansoo’ pear fruit with black outer paper bags occurred much more.
The proper time of pinching for the formation of floral bud was at the end of June in ‘Hanareum’, ‘Wonhwang’, and ‘Whasan’ pear cultivar and after mid-July in ‘Manpungbae’. The treatment of bending shoots was better to form axillary floral buds than non-treatment in every cultivar. It was recommended that exhaustive shoot-bending induced formation of axillary floral buds when the trees had less bearing branches.
In ‘Wonhwang’, heavier fruits were harvested in trees pruned at 20th June and 5th July, but not firmness, soluble solid contents, and acidity. Fruit weight of ‘Wonhwang’ pear varied from 350 to 650 g in once-over harvesting. The fruits ranged between 550 to 650 g were ripened into maturity with higher soluble solid contents, however the fruits ranged between 350 to 549 g were harvested in unripen. Especially fruits borne in lower position of canopy were unripen because of the light penetration into the canopy. The shelf-life of ‘Wonhwang’ was short because of water core and inner browning. Therefore it was recommended that the fruits weighting about 550 g were selected and harvest at 7 to 10 days before maturity as first harvesting, since then 2 to 3 times at interval 4 to 5 days
Non-pruned trees had the most total bud and floral bud. There was no difference with cut into 1/2 and 1/3. The treatment of cut into 1/2 in ‘Manpungbae’ was the lowest total bud, floral bud the rate of floral bud formation and they were proportional to cut length.
The proper time of pruning to remove the shoots located into the canopy was end-June however the effect of the pruning became week after July in ‘Wonhwang’ and ‘Manpungbae’. The fruit weight of ‘Wonhwang’ and ‘Manpungbae’ was similar after summer-pruning. The fruit weight tended to be smaller when summer-pruning was carried out late however there was no difference among pruning time. The yield per 10 a was increased over 10 % in ‘Wonhwang’ and 9.7 to 22.1 % in ‘Manpungbae’ as a result of summer pruning.
Freezing hardiness of floral bud in blooming period of five pear(Pyrus pyrifolia) cultivars, Manpungbae, Wonwhang, Chwhangbae, Hanareum, Niitaka, according to degree and duration of low temperatures was investigated by floral bud’s damage. More than 90% of damage was revealed when over 30min at 3℃, 60min at 2℃, 180min at 0℃ except Manpungbae. Flower and fruit characteristics, in Hanareum, Wonwhang, Hawsan, Manpungbae, were investigated by bearing branch lengths and flower bud position such as below 5cm, 10~15cm, and above 20 cm length with terminal bud, and above 20cm length with axillary bud for investigation on possibility of alternative use of long bearing branch and axillary bud in case of die-backof spur flower bud. In flowering characteristics by flower bud position in the above 20cm length, the terminal bud was late in flowering period. Fruit weight, number of seeds and were more the blow 5cm and 10~15cm length. In fruit characteristics by flower bud position in the aboce 20cm length, the terminal bud had small fruit weight. As the results, value of alternative use of long beraring branch in pears had a little expected for fruit weight especially axillary bud.
Due to the typhoon at late Aug. 2012, there is big damage in pear orchard at close to harvest time. Y-type tree shape was less damage than T-type of it and fallen fruit rate of late maturity variey was less among the varieties. Fallen fruit rate as location of orchard was less damage in center than edge regardless cultivars. Windbreak net reduced fruit fallen 30.4 to 16.5%. For the use of processing of fallen fruit by typhoon of pear cultivars with different maturity, Wonwhang’, ‘Niitaka’, ‘Chuwhangbae’ and its quality and antioxidant activities were evaluated. The characteristics of fallen pear were investigated. Fruit firmness of ’Wonwhang’, early mature culivar, was low, while that of ‘Niitaka’ and ‘Chuwhangbae’, mid and late mature cultivars, were high. Sugar content was not
significantly difference. Chwhangbae was high in total phenolics and flavonoids contents. Antioxidant activity was Chuwhangbae, Niitaka, Wonwhang in order, but sensory was the opposite.Wonwhang was close to harvest time, so it used to heating pear juice, but Chuwangbae, late maturity variety, had a smell of fresh young greens. Dried pear as cultivars was the similary results From these results, we confirmed that pear when fallen after late August can be used as a materials of vinegar regardless of maturity.
