1. 건강기능성식품 개별인정형(체지방저하효과)등록을 위한 양파껍질 기능성원료개발 및 기능성 원료를 함유한 제품개발
(1) 양파껍질로부터 기능성 원료제조의 표준화 규격 설정

1. 건강기능성식품 개별인정형(체지방저하효과)등록을 위한 양파껍질 기능성원료개발 및 기능성 원료를 함유한 제품개발
(1) 양파껍질로부터 기능성 원료제조의 표준화 규격 설정
① 세척방법(1종세척제, 과산화수소수, 초음파세척, 데치기) 및 여과공정(filter press 응집제 조건변경-규조토, 활성탄)에 따른 양파껍질 추출분말의 수득율 변화(지표성분: quercetin)를 측정한 결과 규조토 구간에서 수득율이 높은 것으로 선정되었다.
o 제조 과정 중 지표물질의 추출효율 증대 및 유해물질(잔류농약, 중금속) 안정성 확보를 위해 세척공정(수세→1종 세척제→과산화 수소처리→1종 세척제사용) 개선 및 제조공정(추출→ filter press 여과(규조토 충진제)→동결건조) 개선을 통하여 양파껍질 추출물 제조
② 현장생산을 위한 pilot plant 운전조건 설정 위한 공장scale 생산에 따른 표준화설정
o 양파껍질 74kg으로부터 양파껍질 추출분말 1,838g 획득(2.48% 수율)하였다.
o 쿼세틴 수득에 따른 수율계산 : 수거된 양파껍질(100%) →수세 및 건조 양파껍질 (원료로부터 53.0%)→ 주정추출액(원료로부터 40.1%) → 동결건조물(원료로부터 38.8%)
③ 양파껍질 추출물은 일반성분(수분 6.87%, 조단백질 1.74%, 회분 7.38%, 환원당 2.14% 및 나트륨 479mg%), total phenol (681.67 mg/g) 및 total flavonoid (372.00 mg/g), quercetin (286.00 mg/g) 함량을 나타내었다.
(2) 양파껍질 추출분말의 유통기한 안정성 검정
① 지표성분인 쿼세틴 함량을 온도(30℃, 50℃, 70℃), pH(4, 7, 10) 및 자외선 노출조건에 따라 측정
o 자외선노출에 따른 양파껍질추출물은 노출 48시간이후 감소하여 72시간에 89.9%로 감소한 254.44 mg/g의 값을 나타내었다. 따라서 양파껍질 추출물은 자외선에서 장시간 노출에 따른 기능활성의 감소가 예견되므로 제품제조 후의 유통안정성을 위해서 자외선차단 포장방법(캡슐 및 플라스틱용기 병에 보관 등)이 강구되어야 할 것으로 사료되었다.
o 양파껍질추출물은 30℃와 50℃에서 72시간동안 264.18~273.27 mg/g의 함량을 유지한 반면 70℃의 경우 72시간 저장 후 252.03 mg/g으로 0시간에 비해 92.8%로 감소하였다. 따라서 양파 껍질 추출물은 저장온도의 경우 상온유통에서는 안정성이 있어 보였으며, 자외선 노출에서는 포장용기의 필요성이 대두되었다.
② 양파껍질추출물의 저장온도별(25℃, 35℃, 45℃)에 따른 생리활성 영양성분(총페놀, 총플라보노이드 및 쿼세틴)의 변화측정
o 양파껍질 추출물의 총페놀, 총 플라보노이드 쿼세틴을 가속 실험을 통한 유통기한 예측 실험 결과 총페놀 367일, 총플라보노이드 4,967일, 쿼세틴 316일로 예측되었다.
③ 기능성 원료 양파껍질추출물 잔류농약 59종(불검출), 중금속(납은 0.11~0.12 mg/kg, 비소 0.78~0.87 mg/kg, 카드뮴 0.01~0.02 mg/kg, 총수은 불검출) 및 대장균군을 측정(불검출)을 통하여 유해물질 검사에서 안정적인 범위를 나타내었다.
(3) 기능성원료를 소재로 함유한 건강기능성 제품의 개발
① 양파껍질 추출물을 이용한 건강기능식품 개발에 대한 소비자 인지도 조사 실시
o 양파껍질을 활용한 건강기능식품 개발을 위한 기초자료로 활용하고자 성인 남·녀 547명을 대상으로 건강기능식품 개발에 대한 설문조사 결과 양파껍질을 이용하여 개발되기를 원하는 건강기능식품의 형태는 음료류가 34.2%로 가장 선호하는 형태였고, 다음으로 제형류(28.1%), 과자류(10.5%) 순이었다. 이러한 소비자 인식조사를 기반으로 선정된 품목은 음료와 과자류에 속하는 쿠키, 양갱 및 젤리 등 4종이었다.
② 양파껍질 추출물(체지방 저하효과)을 함유한 양갱의 품질특성
o 양파껍질추출물이 첨가된 양갱 수분 58.27 %, 5.09%, 조지방은 0.19% 조회분이 0.39% 이었다. 양파껍질추출물을 첨가한 양갱의 저장중 pH의 변화는 80일동안 6.29~7.26 범위에서 증가하였다가 제품군은 저장 100일 이후 감소하였다. 총산의 함량은 저장 0일차에 0.43mg%에서 저장 80일경에는 0.36mg%로 감소하였다가 저장 100일에 0.42mg%로 증가하였다. 수분활성도 0.95이었으나, 저장 중에는 서서히 감소하여 저장 100일경에는 활성도 값이 모두 0.93을 나타내었다.
o 플라보노이드 및 쿼세틴의 함량은 저장 100일동안 감소하여 각각 1.28mg/g 및 0.77mg/g이었다. 이 함량은 제조일에 비교하여 잔존율 85.9% 및 70.6% 였다.
o 양파껍질 추출물 함유 양갱의 미생물학적 안전성 검증 결과은 저장 80일간 생균수는 5 CFU/g미만으로 검출되었고 이후 3.05×106 CFU/g(저장 100일)의 생균수가 측정되었다.
o 양파껍질 추출물 함유 양갱의 색도는 저장기간동안 명도의 증가가 나타났지만 기호도 검사결과(9점평점) 저장 80일까지 냄새 (6.40)을 제외한 맛, 색, 조지감 및 전반적 기호도에서 7점이상 점수를 나타내었다. 의 평균이상의 기호도 점수를 얻어 제품이 양호하다고 판단할 수 있으며, 양파껍질추출물 첨가 양갱은 가공 적성도 만족하는 기능성이 증대된 효과적인 기호식품이 될 수 있을 것이라 사료된다.
③ 양파껍질추출물(체지방 저하효과)을 함유한 쿠키 개발
o 총산의 경우 제조 당일 제품군 0.48mg/g 함량 저장기간에 따라 총산의 함량은 감소하는 경향을 나타내었다(0.36~0.48mg/g). 양파껍질추출물을 함유한 쿠키의 pH 6.30로 저장기간에 증가하는 경향을 나타내었다(6.30~6.47). 수분활성도 (Aw)는 0.08 저장기간 120일동안 0.08~0.19로 ) 모두구간에서 증가하는 경향을 나타내었다.
o 쿠키의 생리활성 성분인 플라보노이드 및 쿼세틴의 함량결과 저장일동안 플라보노이드는 다소 감소를 나타내어 저장일 120일에는 1.99mg/g 즉 78.6%의 잔존율을 나타낸 반면 쿼세틴은 저장일 동안 1.29~1.35mg/g 범위의 안정적인 값을 나타내었다.
o 양파껍질추출물 함유 쿠키는 저장 120일까지 미생물학적(생균수 <5 CFU/g미만, 대장균군 불검출) 품질 안정성을 나타내었다.
o 조직감 및 색도특성결과 저장기간에 따라 경도 및 갈변도 감소, 명도 및 황색도 증가를 나타내었지만 소비자 기호도 검사 결과 저장 120일까지 6점 이상의 점수를 유지하였다.
o 쿠키의 경우는 다른 식품군(음료, 양갱, 젤리)와 비교하여 저장기간에 따라 영양생리활성 성분을 가장 안정적으로 유지할 수 있는 식품군으로 사료된다.
④ 양파껍질추출물(체지방 저하효과)을 함유한 젤리 개발
o 양파껍질추출물을 함유한 젤리는 pH 5.67로 저장기간(30일)에 따라 증가한 반면, 총산은 감소하는 경향을 나타내었다(0.35~0.58 mg/g). 젤리의 수분활성도 (Aw)는 0.94로 저장기간 30일동안 증가하는 경향을 나타내었다.
o 양파껍질 추출물을 첨가 젤리의 total phenol, total flavonoid 및 querctin은 5.84 mg/g, 1.37mg/g 및 1.29 mg/g이었고 저장일 30일 이후 각각 4.73 mg/g(잔존율 81%), 1.28 mg/g (잔존율 93%)및 1.08 mg/g (잔존율 84%)로 감소하였다.
o 양파껍질추출물 함유 젤리는 대조군 젤리에 비해서 미생물학적 안정성을 나타내었다. 무첨가군 젤리의 경우는 저장일 10일 이후 106CFU/g 이상의 생균수가 측정되었고 30일 이후에도 대장균군이 검출이 된 반면 양파추출물이 함유된 제품군은 저장 30일에 2.13×102CFU/g의 생균수가 측정되었고 대장균군은 30일에도 검출되지 않았다.
o 저장기간에 따른 젤리의 조직감(hardness, adhesiveness, springiness, cohesiveness)은 저장 기간에 따라 hardness, adhesiveness, springiness 감소 반면cohesiveness는 증가하는 경향을 나타내었다.
o 저장기간에 따른 젤리의 색도 변화는 저장일(30일)에 따라 명도, 적색도, 황색도의 전반적인 다소 증가하는 경향이 나타났으나 갈변도의 변화는 나타나지 않았다.
o 저장기간에 따른 젤리의 관능적 특성변화는 제조일 이후로 저장기간에 따라 감소하는 경향을 나타내었지만 무첨가군에 비교하여 안정적인 관능품질기간을 유지하였다(무첨가 젤리 10일, 양파껍질추추출물 첨가 젤리 20일까지 6점 이상 유지)
⑤ 양파껍질추출물(체지방 저하효과)을 함유한 음료 개발
o 양파껍질추출물을 함유한 음료의 0일차에는 총산 0.12mg/g, pH 6.07이었다. 모든 온도구간에서 (25℃, 35℃, 45℃)에서 저장 30일에 총산은 감소(25℃: 0.12~0.06 mg/g, 35℃: 0.12~0.06 mg/g, 45℃: 0.12~0.06 mg/g)하였고 pH는 상승(25℃: 6.51~6.99, 35℃: 6.51~7.01, 45℃: 6.51~6.99 mg/g)하였다. 저장일 30일부터 150일까지 모든 온도구간의 총산과 pH는 일정범위를 유지하였다.
o 양파껍질 추출물 함유한 음료는 저장일 150일 동안 미생물학적 (생균수 <5 CFU/mL, 대장균군 불검출) 관능적 (소비자 기호도 검사결과 7점이상 유지) 품질 안정성을 유지하였다.
o 제조된 음료의 총페놀 함량은 0.93mg/g, 플라보노이드 함량은 0.25mg/g, 쿼세틴 함량은 0.17mg/g함량으로 나타났다.
o 저장기간에 따른 총플라보노이드 및 쿼세틴의 함량 변화를 통하여 유통기한 설정한 결과 총 플라보노이드 기준으로 30일, 쿼세틴으로 55일로 예측되었다.
o 이러한 결과로부터 양파껍질 추출물을 함유한 수용성 상태의 음료식품군에서는 생리기능성 원료 물질의 안정성이 매우 낮으므로 이를 개선하기 안정제(캡슐화 등) 첨가 등의 추가적 연구가 필요하다고 생각된다.
2. 식이성 비만 동물모델에서 양파 추출 쿼세틴 보충섭취가 지방 감소에 미치는 영향에 관한 유효성 평가
1) 본 연구는 고지방으로 유도된 비만 동물모델에서 양파껍질추출물을 용량별로 8주간 보충섭취한 후 체중 및 체지방 감소에 미치는 효과를 평가하였다.
2) 실험기간 동안 실험동물의 체중변화는 대조군에 비해 고지방 식이를 한 군에서 유의적으로 증가하였다가 용량별 양파껍질 추출물을 첨가한 세 군에서 유의적인 차이를 가지며 감소하는 경향을 보였다. 내장지방 무게를 살펴보면, 비만유도대조군에서 각각의 4군데 내장지방의 무게가 유의적으로 증가하였다. 양파껍질추출물 섭취 군에선 내장지방 무게가 감소하는 경향을 보였고, 총 내장지방무게를 살펴보면 체중에서의 결과와 마찬가지로 비만대조군에서 정상대조군에 비해 그 무게가 유의적으로 증가하였다가 양파껍질추출물에서 감소, 특히 QE 2 그룹 (0.5 mg quercetin/d 섭취)에서 유의적으로 감소하는 것을 확인하였다. 이를 통해 양파껍질 추출물의 항비만효과를 관찰할 수 있었다.
3) 혈중 내 비만과 관련된 생화학적 지표를 살펴보면 total cholesterol과 Triglyceride 에선 그룹간의 차이가 없다가 QE2와 QE3에서 유의적으로 증가하였고, LDL-cholesterol은 정상 대조군에 비해 고지방 대조군 및 고지방+양파껍질 추출물 그룹에서 증가하는 경향을 보였다. HDL-cholesterol은 반대로 정상 대조군에 비해 고지방 대조군 및 고지방+양파껍질 추출물 그룹에서 감소하는 것을 확인하였다. 공복혈당은 고지방대조군에서 상승되었다가 양파껍질추출물에 의해 감소하는 경향을 나타냈는데 특히 QE2 그룹에서는 그 농도가 유의하게 감소하는 것을 관찰할 수 있었다.
4) UCP-1 유전자의 경우는 양파껍질추출물 섭취에 따라 간조직의 발현도가 증가하는 양상을보였고, QE2 그룹에서 현저하게 상승되는 것으로 나타났으나 그 외 유전자 발현도에는 현저한차이를 관찰할 수 없었다. Epididymal fat의 경우, FAS는 QE1에서 감소하는 양상을 보였으나 전체적으로 큰 차이는 없었다. 이에 반해 CPT-1과 UCP-1의 조직내 발현도는 양파껍질 추출물의 보충섭취에 의해 증가하는 패턴을 보였다. 이러한 결과에 근거했을 때 양파껍질추출물의 체중감소효과는 지방산 합성의 저하보다는 오히려 지방산 산화의 항진을 통해 유도될 수 있을것으로 판단된다.
(5) 이상의 결과를 종합했을 때, 쿼세틴을 지표물질로 하는 양파껍질추출물의 보충섭취는 고지방 유도 비만모델에서 체중감소와 체지방감소에 대한 효과를 나타내었다. 특별히 일일 0.5 mg 쿼세틴 보충 섭취군(QE2그룹)에서는 체지방량의 감소가 유의하게 나타나는 것을 확인할 수 있었고 공복혈당농도도 유의하게 감소하였다. 하지만 양파껍질추출물의 항비만효과에 대한 기전에 대해서는 명확하지 않으므로 이를 규명하기 위해 향후 체중조절 관련 바이오마커와 유전자 발현변화에 대해 다양한 관점에서의 후속연구가 요구된다.
3. 인체적용실험을 통한 양파껍질주정추출분말의 체지방 감소에 미치는 효과 분석
1) 본 연구는 인체실험을 통한 양파껍질주정추출분말을 12주간 섭취한 후 체중 및 체지방 감소에 미치는 효과를 평가하였다.
2) 무작위배정, 이중맹검, 위약대조 임상시험를 통해 관찰한 결과, 대조군에 비해 양파껍질주정추출분말을 먹은 군에서 유의적인 체중변화가 일어났다.
3) 이중에너지방사선흡수법으로 측정한 체지방율이 위약군에서는 유의적인 변화가 없었지만, 양파껍질주정추출분말을 섭취군에서 유의적으로 감소가 관찰되었다.
4) 가스호흡분석기를 통해 분석한 휴식대사량이 위약군과 양파껍질주정추출분말 섭취군 모두에서 증가하였다.
5) 비만과 관련된 지표인 렙틴은 위약군과 양파껍질주정추출 분말 섭취군 모두에서 감소하였고, 아디포넥틴은 증가하였다.
6) 지질 과산화와 관련된 malondialdehyde가 약군과 양파껍질주정추출분말 섭취군 모두에서 감소하였다.

Foods have long built up their products with vitamins and other nutrients to enhance their benefits. Progress in nutrition science and food manufacturing a removing the industry toward designing foods to promote optimal health and wellness as well as prevent the onset of chronic disease. This trend has brought the supplements often called nutraceuticals and stimulated producing functional food. According to some market surveys, the global market of these functional foods has been up to 117 Billion $ (2010) being in the United states, the largest market segment, followed by Europe and Japan. Even if functional foods are in their nascent state, holding only a few percentage of the total food supply, they are growing rapidly with an annular growth rate of 6.6%, thus functional foods industry will show a leveraging growth as long as health-conscious consumers are demanding for various products. Today, primary agriculture was exposed to competition based mainly on price and quality. Product differentiation is very important factor for a successful competition in food industry. This trend impacted to make high valuable product in a unique way. Functional food processing brought from crops had to present scientifically data regarding material origin (involving intake safety), standard processing condition and validation of biological marker compound. For these reason onion peel, known having biological ingredients such as quercetin and flavonoids, was used to process a high value added function product. The objective of this study was to set standard processing condition of onion peel extracts (OPEs), and also to develope functional food having body fat reducing effect from OPEs.
A. Development and quality characteristics of OPEs
1. Changes of qucercetin contents during processing of OPEs
o The processing of OPEs was tripled and the qucercetin was evaluated processing step, respectively, to establish to the standard manufacture of OPEs. The contents of quercetin were of 18.64 mg/g (in onion peel), 1.27 mg/g (after extracting and filtering) and 291.10mg/g (in final powder product). The results were shown that the content of quercetin as a biomarker compound was maintained following the processing.
2. Stability at temperature and UV explosion of qucercetin contents during processing of OPEs
o The degradation of quercetin in aqueous preparations with DMSO when exposed to UV-light, three different temperatures (30℃, 50℃, 70℃) was studied for 72 hrs. The results indicated quercetin degradation in OPEs according to time of exposure of UV-rays used. Losses of quercetin within 72 hrs were 254.44mg/g (89.9%). 30°C and 50°C exposure had a similar ranges (264.18~273.27 mg/g) of the quercetin contents before the exposure but 45°C exposure was 92.8 % (252.03 mg/g) for quercetin degradation in OPEs.
3. Assessment of hygienical and chemical risk
o Coliform bacteria test, residual pesticides (Diazinon and 58 other) and mercury did not detected but 3 heavy metals (Pb, As, Cd) were found within ranges of 0.11~0.12 mg/kg, 0.78~0.87 mg/kg and 0.01~0.02 mg/kg respectively.
4. Changes of total phenols, flavonoids and quercetin contents as biomarker compound in onion peel extracts (OPEs) during storages (180 days).
o The OPE were processed (n=3) with pilot scale and the levels of total phenols, flavonoids and quercetin in OPEs were measured during 180 days, shown in ranges of 598.57~626.73 mg/g and 211.73~233.64 mg/g, respectively. Total phenols had a consistent rages during 120 days but the contents was decreased after 150 days (25℃: 678.00~731.87mg/g, 35℃: 682.62~737.21 mg/g, 45℃: 680.32~731.01 mg/g). However, flavonoids was steady ranges during storages (25℃: 388.77~413.89 mg/g, 35℃: 392.41~411.93 mg/g, 45℃: 395.39~418.24 mg/g). Quercetin as a marker compound of OPEs, was in the ranges of 258.21~292.12 mg/g (at 25℃), 255.86~300.99 mg/g (at 35℃) and 270.20~288.59 mg/g (at 45℃) respectively. From these results, this study was predict shelf-life of OPEs. Total phenols, flavonoids and quercetin as nutrition values were used to estimate shelf-life with Arrhenius equation. The estimated shelf-life were 367 days, 4,967 days and 316 days respectively.
5. Research on perception of health functional foods and preference of desired OPEs
o Questionnaires were distributed to the 582 adults (34.2% male, 65.8% female) living in the Gyeongnam province. The major information sources on biological effects of onion were TV/radio (37.1%), followed by from people around (32.8%), internet (11.0%) in that order. Reducing cholesterol effect was the most important factor in terms of perception and concern on biological function of onion. Over 72% of subjects had experience of taking the processed onion products, and among all types of the onion products, onion juice (53.5%) was eaten most frequently. The most considerate factor for processing onion peel derived functional foods was taste & odor (30.2%), the convenience of taking (28.5%) and nutrition value(26.8%) in that order.
6. OPEs application products (Yanggaeng, cookie, jelly and drink)
o Yanggaengs (AY) added with onion peel extract (OPE) were made and stored in retort pouching film bags at 25oC. Comparing with control Yanggaengs (CY;without OPE), physicochemical characteristics including proximate composition, total acidity, pH, water activity, color value and texture profile, and microbiological analysis, the contents of total phenol, total flavonoid and quercetin, and sensory evaluation were evaluated during 100 days of storage. The pH of all products (AY and CY) increased, whereas the total acidity
and water activity (Aw) of those decreased with storage times. The lightness (L value) in color value and the hardness in texturometer were higher in CY than AY, and the values of those in all products increased with storage days. Viable cell counts in all products were detected in below 5 CFU/g and coliform group were not detected during the storage of 80 days but the cell counts (3.05×106 CFU/g) of AY were founded at 100 days. The contents of total phenol, total flavonoids and quercetin were higher in AY than CY during storage times, and the level of total flavonoids and quercetin in AY were retained 85.9% and 70.6% of product at 0 day, respectively, after 100 days of storage. In sensory evaluation, color value in AY was higher than CY at 0 day of storage, and the values decreased without significantly during storage times, whereas the values of taste, texture and overall acceptance were no significant in between AY and CY, and decreased with significantly during storage (p<0.001). However, the effect of adding onion peel extract in AY appeared until 20 day of storage with high score (over 8.80) in sensory evaluation and lightness and △E in color difference meter, and was maintained its quality during the storage of 100 days.
o Cookie (AC) added with onion peel extract (OPE) were made and stored in OPP (oriented polypropylene) film bags at 25oC. Physicochemical characteristics including proximate composition, total acidity, pH, water activity, color value and texture profile, and microbiological analysis, the contents of total phenol, total flavonoid and quercetin, and sensory evaluation were evaluated during 120 days of storage. The pH and Aw of AC increased, whereas the total acidity decreased with storage times. Viable cell counts in AC were detected in below 5 CFU/g and coliform group were not detected during the storage of 120 days. The contents of total flavonoids in AC were retained 78.6% after 100 days of storage but the level of quercetin in AC had a consistent range (1.29~1.35mg/g) during storage. From changes of total flavonoids and quercetin in AD during 150 days, this study was predict shelf-life of AD by a using Arrhenius equation. The estimated shelf-life were 30 days and 50 days respectively.
B. Antiobesity effects of OPEs in high fat-fed rats
o The aim of the present study was to examine the effect of quercetin-rich OPEs on anti-differentiation in 3T3-L1 preadipocytes and the antiobesity in high-fat fed rats. We found that lipid accumulations and TG contents in 3T3-L1 cells were markedly suppressed by OPEs. The mRNA levels of activating protein (AP2) were down-regulated and those of carnitine palmitoyl transferase-1 a (CPT-1a) and fatty acid binding protein 4 (FABP4) were up-regulated by 75 and 100 lg/ml OPEs. Body weight, retroperitoneal and mesenteric fat weights of SD rats were significantly lower in the 8 week high fat (HF) diet + 0.72% OPEs group than in the HF group. Peroxisome proliferator-activated receptor (PPAR)c mRNA levels were down-regulated in the epididymal fat of OPE than those of control and HF, and significant down-regulation of CCAAT/enhancer binding protein (C/EBP)a mRNA levels in OPE was also observed than the control. The mRNA levels of CPT-1a and uncoupling protein-1 (UCP-1) were up-regulated by the OPE, while those of fatty acid synthase (FAS) and acetyl-CoA carboxylase (ACC) were down-regulated in HF and OPE groups compared to control group. These results suggest that quercentin-enriched OPEs may have antiobesity effects by suppressing preadipocyte differentiation and inhibiting adipogenesis.
C. Effects of OPEs intakes onbody composition in overweight and obese adults
o This study investigated the effects of 12-week's intake of quercetin contained in onion peel extracts on variations of weight loss, body composition, resting metabolicrate (RMR), blood lipids and blood glucose levels in over weight and obese adults with BMI≥ 23. The study was designed as a randomized, double blind study in which 72 subjects had participated. The test group was administered with a capsule of 180 mg onion peel extracts, containing 50 mg of quercetin twice a day, where as the placebo group was administered with a capsule containing 180 mg of lactose mixed formulation twice a day. After the intake of onion peel extracts for 12 weeks, the difference in anthropometric data showed significant reductions of body weight, BMI, waist circumference, hip circumference, thigh circumference and triceps skin fold thickness (TSF) in the OPE group(p<0.05). After the intake of onion peel extracts for 12 weeks, the variation in body composition showed significant reduction of total body fat (kg) as measured by Bio electrical Impedance Analysis (BIA) and also showed significant differences of arm fat and percent age of total body fat (PBF) as measured by Dual X-ray Absorptometry (DXA) in the OPE group. On the other hand, there were no changes of body composition in the placebo group. The RMR was significantly increased in both group. It also increased significantly in the out comes after corrections with body weight and free fat mass. Respiratory quotient (RQ) showed significant increase in the OPE group. The blood glucose was increased, whereas the blood leptin was decreased significantly in both groups. The level of triglyceride showed significant increase in the placebo group, but the OPE group had no significant difference. In this study, it was observed that 12-week's supplementary in take of onion peel extracts having quercetin as a marker substance had effect on weight loss and BMI reduction, and body fat reduction, as well as on change in RMR in over weight and obese adults.
