▣ 수산물의 영양성분 분석
- 수산물성분표 발간을 위하여 주요 수산물의 영양성분을 분석하였으며, 고등어, 갈치,전갱이 등의 어종은 어획지 및 계절별 영양성분 변화를 분석

- 수산생물 자원의 고도이용을 위한 생리활성 정보를 제공하기 위하여 수산생물의 건강기능성 탐색시스템을 확립하여 생물활성소재 정보를 공개하고 있으며, 해조류와 갑각류에 각각 함유되어 있는 폴리페놀 및 카로테노이드 등 수산물 유래 유용 생리활성 물질 탐색
▣ 모자반류를 이용한 건강기능식품 소재 개발
- 괭생이모자반, 외톨개모자반, 참모자반 주정추출물로부터 항염증 및 항비만 소재 개발 및 건강기능식품 개발을 위한 활성 소재 대량생산과 공정 표준화
- 톱니모자반 주정추출물의 퇴행성관절염 및 심혈관계 질환 억제 소재 개발 및 건강기능식품 개발을 위한 전임상 시험 완료

A. Nutritional composition analysis of commonly consumed seafood
We have analyzed the nutrient composition including proximate composition, fatty acid composition, amino acid and vitamin etc., of commonly consumed seafood for revision of Seafood Nutrient Composition Table in Korea.
B. Analysis of nutritional composition variation of regional and seasonal fisheries products
We analyzed seasonal and regional variations of nutrient composition of eight fishery products such as chub mackerel, Japanese spanish mackerel, blackthroat seaperch, horse mackerel, hairtail, tail fish, blue abalone and trumpet shell caught in the coast of South Korea.
The crude lipid content of chub mackerel was positively correlated with total length since April. The content of the fish with size over 35cm caught in September was 15-35 g/100g.
The crude lipid content of hairtail increased since October, and decreased since February next year.
In Japanese spanish mackerel, the crude lipid decreased from January and showed no significant difference afterwards (3 g/100g or less than that). It was the highest in December 2012 and January 2013.
In horse mackerel, the crude lipid content increased from March and reached highest from July to September.
The crude lipid content of blackthroat seaperch was the highest in August and decreased.

We published 'Chemical Composition of Marine Products in Korea, Second Edition' in 20 09 and 'Fatty acid Composition of Fisheries Products in Korea' in 2012 using nutritional com position analysis data of fisheries products.

2. Development of health functional materials from fisheries products
A. Development of anti-hypertensive materials from jellyfish
We isolated anti-hypertensive peptides from jellyfish and identified their structure as DPGLQGAHG and Tyr-Ile(YI). YI plays as a competitive inhibitor against angiotensin-converting enzyme.
B. Development of circulatory system modulating active materials from marsh snail
To isolate circulatory system modulating active material from marsh snails, we investigated the circulatory system modulating activity of the ethanolic extract of seven marsh snails including S. coreana, Korean. nodifila, S. forticosta, Koreol. globus ovalis, S. libertina, S. tegulata, S. gottschei. Among these marsh snails, the ethanolic extract of S. coreana, Korean. nodifila, and S. forticosta showed potent activity (63%, 69%, 56%) on circulatory system modulation.
We isolated anti-hypertensive compound from marsh snails extract and it was identified as fatty acids(C16:0∼C24:0). These showed potent ACE inhibitory activity.
C. Development of UV-absorbing materials from seaweeds
Among three Russian seaweeds (Mastocarpus sp., Gloipeltis sp., Alaria marginata), Gloipeltis sp. extract showed the highest scanning peak. We isolated a novel UV-absorbing material from Gloipeltis sp. extract and it showed the maximum absorption wavelength at 333nm and a molecular weight of 242 da. We isolated a novel UV-absorbing material from the 50% ethanolic extract of Ishige sinicola and it showed the maximum absorption wavelength at 336 nm.
D. Development of functional materials from seafood processing by-products
To develop the antioxidant and anti-hypertension materials from Red snow crab shell, we hydrolyzed the Red snow crab shell using 2.4L of Alcalase and fractionated its hydrolysate by two ultrafilteration membranes with 3 and 10 kDa (below 3 kDa, between 3 and 10 kDa, and above 10 kDa). Among these fractions, <3 kDa fraction exhibited potent ABTS+ radical scavenging and SOD-like activities, reducing power, and ACE inhibitory activity. We were isolated six peptides from active <3 kDa fraction.
The Flavourzyme hydrolysate of Red snow crab shell showed antioxidant and elastase inhibitory activities. Among three molecular weight fractions (<3kDa, 3kDa-10kDa, >10kDa), <3 kDa fraction exhibited the most potent ABTS+ radical scavenging and elastase inhibitory activities. We isolated an active peptide from <3 kDa fraction and it was identified as YLSGAVIQEPYLSPVYLQKYRNYR with molecular weight of 1,075da.
E. Development of skin-whitening materials from brown alga E. bicyclis
Among twenty seaweeds extracts, the ethanolic extract of Eisenia bicyclis showed the most potent tyrosinase inhibitory activity. The ethanolic extract of E. bicyclis. Of the organic solvent fractions, EtOAc fraction of Eisenia bicyclis exhibited the most potent tyrosinase inhibitory activity. We isolated five compounds from EtOAc fraction of Eisenia bicyclis and their structure were identifed as phloroglucinol, dioxynodehydroeckol, eckol, dieckol, and fucofuroeckol-A, respectively. We assessed the inhibitory activity against tyrosinase and melanin synthesis of fucofuroeckol-A. It showed 20 times stronger tyrosinase inhibitory activity and 130 times stronger melanin synthesis inhibitory activity than arbutin, used as a positive control. We filed a patent application and transferred technology of melanin synthesis inhibitory activity material derived from E. bicyclis

B. Analysis of polyphenols and carotenoids from seaweeds
Among twenty seaweeds, the order of polyphenol contents was:
Esenia bicyclis > Gloiopelis furcata > Chondracanthus tenellus > Sargassum serratifolium > Sargassum thungergii
Among thirty seaweeds, the order of carotenoids contents was: Colpomenia sinuosa > Undaria pinnatifida > Grateloupia crispata > Porphyra tenera
Among fifteen crabs and shrimps, the order of carotenoids contents was: Erimacrus isenbeckii (shell) > Chionoecetes opilio (shell) > Porunus trituberculatus (shell)
4. Development of health functional food materials from Sargassum sp.
A. Anti-inflammatory and obesity effect of the ethanolic extract of Sargassum horneri
1) Anti-inflammatory effect of the ethanolic extract of Sargassum horneri
SHE significantly inhibited the production of NO, PGE2, and pro-inflammatory cytokines in a dose-dependent manner and suppressed the expression of iNOS and COX-2 in LPS-stimulated RAW 264.7 cells.
2) Anti-effect of the ethanolic extract of Sargassum horneri
MME significantly inhibited intracellular fat accumulation in a dose-dependent manner in MDI-stimulated 3T3-L1 cells.
B. Anti-inflammatory and obesity effect of the ethanolic extract of Myagropsis yendoi
1) Anti-inflammatory effect of the ethanolic extract of Myagropsis yendoi
SHE significantly inhibited activation of MAPK, Akt and NF-kB transcription factor in a dose-dependent manner in MDI-stimulated 3T3-L1 cells, significantly suppressed the production of inflammatory cytokines and the expression of iNOS and COX-2. Eckol, 6,6’-bieckol and phlorofucofuroeckol B(PFF-B) were isolated as anti-inflammatory active materials from MME.
Among these compounds, 6,6’-bieckol and PFF-B significantly inhibited the expression of iNOS and COX-2.
2) Anti-obesity effect of the ethanolic extract of Myagropsis yendoi
EMM significantly inhibited intracellular fat accumulation in a dose-dependent manner in MDI-stimulated 3T3-L1 cells.
C. Anti-obesity effect of the ethanolic extract of Sargassum fulvellum
SFE significantly inhibited intracellular fat accumulation in a dose-dependent manner in MDI-stimulated 3T3-L1 cells.
D. Standardization of mass production process of Anti-inflammatory and obesity materials
E. Inhibitory activity of degenerative arthritis and cardiovascular disease of the ethanolic extract of Sargassum serratifolium
