탈취공정에서 탈취장치에 따라 트랜스지방산 함량이 0.54~0.87%(평균 0.71%) 생성되어 국제 관리 규격인 1.0% 보다 낮은 수치로 분석되었고, 토코페롤 함량은 24~33%(평균 28%) 감소된 748~856 ppm(평균 791 ppm)이 검출되어 항산화능을 발휘하는 최저 수준인 340~600 ppm을 초과하여 보전된 것으로 분석되었다. 탈취장치별 트랜스지방산 생성율/토코페롤 손실율의 순위는 Type II-PC: 0.54%/24% < Type I-TG: 0.73%/28% < Type III-TF: 0.87%/33%의 순으로, Type II-PC가 상대적으로 양호한 성적을 보였다. 이러한 결과로부터 트랜스지방산의 생성과 토코페롤의 손실은 탈취장치의 stripping unit 구조보다는 주로 탈취온도, 탈취시간 등의 운전조건에 의해 영향을 받으며 탈취장치의 stripping unit 구조에 따른 특이한 유의적 차이를 보이지 않았음을 알 수 있었지만, 증류효율이 높은 stripping unit의 기하학적 구조에 의한 온화한 탈취 운전조건의 적용에 의해서 개선될 수 있음을 시사하였다.
현재 국내의 대형 유지정제 및 가공업체에서 운전되고 있는 탈취장치의 대부분은 이번 조사 대상의 탈취장치 범주에 속하기 때문에 국내에서 생산되는 탈취 대두유의 전반적인 품질은 종래의 품질 규격인 풍미와 색택 그리고 안정성을 유지하면서 고품질 유지의 새로운 규격인 트랜스지방산 저함량 유지와 토코페롤 고함량 보전의 조건을 비교적 충족시키고 있는 것으로 추정된다.
그러나 소비 시장에서 요구하는 더욱 엄정한 권장 기준 즉, 트랜스지방산 함량 0.5% 이하의 생성과 토코페롤 함량 900 ppm 이상의 보전을 위해서는 보다 발전된 탈취방식에 대한 검토가 필요한 시점이다. 따라서, 현재의 고온장시간(260°C/60분) 탈취방식에서 1차 저온장시간(230°C/30~45분)과 2차 고온단시간(250°C/10~15분)의 2단 가온 탈취방식(dual temperature deodorization), tray/packed column 조합 탈취장치 그리고 dry ice condensation unit에 의한 고진공생성장치(high vacuum production technology)를 통합한 새로운 탈취기술로의 전환이 요구된다.

It becomes an emerging issue due to health implication that formation of trans fatty acids and loss of tocopherols can be induced by high temperature treatment used in the industrial deodorization of soybean oil. Crude soybean oil is generally treated by refining process including a deodorization step by steam distillation under vacuum for improvement of organoleptic quality and oxidative stability. The level of formation of trans fatty acids by geometric isomerization and loss of tocopherols by distillation removal/thermal degradation due to decreased heat stability is a sensitive index of the degree of undesirable changes during deodorization. The main objective of this study was to evaluate the effects of deodorization step on formation of trans fatty acids and loss of tocopherols during industrial refining of soybean oil and to propose a latest alternative deodorization technology. Refined-bleached soybean oils and refined-bleacheddeodorized soybean oils were obtained from some markets and 3 refinery factories, which are operating with the selected industrial deodorizers: a tray deodorizer with gas lift pump(Type ITG); a packed column deodorizer with structured packing(Type II-PC); a tray deodorizer with thin-film panel(Type III-TF). The result demonstrated that trans fatty acids were created in the range of 0.54% to 0.87% and losses of tocopherol were occurred in the scope of 24% to 33%(contents of retention : 748~856 ppm). This favorable result means that the contents of trans fatty acid were lower than 1% of target figure for international quality standard and the contents of tocopherol were higher than 340~600 ppm of minimum level for prevention of oxidation. Most of major refineries in domestic are presently operating with ones similar to selected industrial deodorizers investigated in this study. So it can be evaluated that they fully meet the requirement for lower formation of trans fatty acids and higher retention of tocopherols as new indexes of international quality standard for high quality edible oils and fats. In comparison at selected industrial deodorizers, there is no especially significant difference even though Type IIPC showed the lowest formation of trans fatty acids and the highest retention of tocopherols among selected industrial deodorizers. This result represented that formation of trans fatty acids and loss of tocopherol were not influenced by different geometric feature of stripping units at selected deodorizers but mainly by deodorizing temperature & deodorizing time. However, a stripping unit with higher vaporization efficiency leads milder operation condition for deodorization and it can induce lower formation of trans fatty acids and higher retention of tocopherols. It is nowadays required for advanced deodorization technology to satisfy more strict level of the customer’s requirements i.e., the contents of trans fatty acid lower than 0.5% as well as the contents of tocopherol higher than 900 ppm and loss of tocopherols lower than 25%. Therefore, the conventional operating conditions in local should be revaluated in direction to reduce formation of trans fatty acids and loss of tocopherols during deodorization. In conclusion, it is recommended that the present deodorization with severe operating conditions of high temperature/long time (260°C/60 min) in common should be switched to a novel deodorization technology: a tray deodorizer integrated with structured packing under mild operating conditions of dual temperature deodorization process (230°C/30~40min & 250°C/10~15 min) based on dry ice condensation unit for high vacuum production.
