Monitoring food safety is important because the tainted food can do harm to people. The food safety can be measured in the number of harmful microbes, which causes the food decomposition. The conventional methods such as direct microscopic count and plate count are time-consuming. Therefore the real-time food monitoring is practically impossible. In this thesis, we propose a method based on image analysis to reduce processing time while retaining accuracy as possible. High-resolution microscopic digital images are used for analysis. After removing noises, the regions that represent individual microbes or colonies are located using adaptive thresholding and connected component analysis. Each region is classified into three classes - bacillus, coccus, and yeast. Yeasts are discriminated using contour analysis, and bacilli and cocci are distinguished by geometric features after segmenting by topographic analysis. Then, we count the number of microbes in the region. Experiment showed that the system meets the requirement set by the food engineers. The logarithm of proportion of the estimated number to the ground truth was between -0.09 and 0.22, while the requirement was between -0.5 and 0.5. Furthermore, the average processing time was 11.9 seconds per image, which is substantially shorter than the conventional approaches.
