This research investigated the risk of food additives intake for school children from ages 7 to 12, by examining their snack consumption using the results of 2001 and 2005, National Health and Nutrition Survey. In addition, I investigated the method to reduce the consumption of food additives through the published data and developed the informative materials for risk and safe intake of food additives for school children. 1. According to the report of 2001 and 2005 National Health and Nutrition Survey, 4.0% (2001) and 1.7% (2005) of elementary school children skipped the meals since they had snacks. 41.5% (2001) and 33.5% (2005) of children ate the snack 2 times a day. 46 %( 2001) and 42% (2005) of the children consumed the confectionery most, such as cookies and chips. Annual intake of instant noodles per person per day was 16.9g in 2001 and 16.5g in 2005. The elementary school children consumed the processed foods containing food additives most, such as chips, cookies, crackers, bread, ice cream, and soft drinks, etc. In addition, the elementary students were interested in nutrition information, especially weight controlling diet (19.1%) and food and nutrition information (16%). 2. The usage of food additives was investigated in frequently consumed foods by children, such as coke, instant noodles, snack, ice cream, yogurt, juice, and fish cakes. Result shows that most soft drinks have color additives and acidulant and instant noodles have chemical seasoning of Na-L-glutamic acid. Yogurt has a sweetener and an antioxidant and the confectionery has food color, emulsifier, and preservatives. Antioxidants and acidulant were included in juice, while fish cakes have chemical preservatives and seasoning. Among these food additives, tar food color was the major food additives in ice cream. Based on these results, the intake of tar color additives through ice cream was investigated. The results of the estimated daily intake (EDI) of tar color show that elementary school children consumed 0.0210 mg (2001) and 0.0178 mg (2005) of FD& C Yellow No. 4 via ice cream, which was the highest amount compared to other tar color additives. 3. To evaluate the risk of tar color additives intake, the ratio of Estimated Daily Intake (EDI) and Acceptable Daily Intake (ADI) was calculated for individual color additives. Consumption of tar color through ice cream was 0.00003~0.0595% in 2001 and 0.00003~0.0505% in 2005, which are all below safe level of 10%. 4. Several methods to reduce food additives intake were introduced. They included reading food labels, how to make healthy drinks, cooking method of processed ham and sausages, and making natural seasonings, etc. Based on these methods, the study guideline and power point presentation for food safety emphasized on food additives for both student and parents were developed. In conclusion, instant processed foods with various food additives are main snacks for elementary school children. Information about food additives wasn't delivered properly to parents and children due to the lack of information in the label. Therefore, informative materials for risk and safety of food additives for parents and children are needed, which will help elementary students to develop a desirable habit for snack consumption.
