(Yorkshire × Landrace) × Duroc 3 원 교잡종 암퇘지와 거세돼지 총 96 두를 16 돈방에서 체중 90kg 시부터 비육후기 사료를 무제한 급여하고 110kg(대조구) 혹은 고체중(암퇘지와 거세돼지 각각 135 & 125kg)에 도살하여 도체를 분석하였다. 일당사료섭취량은 거세돼지와 고체중 출하 구가 각각 암퇘지와 110kg 출하 구보다 높았으나(P<0.01) 일당증체량과 사료효율은 두 출하체중 구간 차이가 없었다. 135kg 및 125kg 생체중에 보정된 암퇘지와 거세돼지의 등지방두께는 각각 23.7 & 22.5mm 로서 각각 성의 110kg 출하체중 구의 수치(19.7 & 21.1mm)보다 높았다(P<0.01). 등심을 제외한 부분육 수율은 두 성 혹은 출하체중간 통계적인 차이는 있었으나(P<0.05) 수치상의 차이는 비교적 작았다. 등심의 단백질 함량은 고체중 출하 구가 110kg 출하 구보다 높았으나(P<0.01), 조지방과 수분 함량 및 색깔 등과 같은 이화학적 특성은 성 혹은 출하체중간 차이가 없었다. 관능평가에서 등심부위 신선육의 향, 상강도 및 전체적인 기호도는 고체중 출하 구가 110kg 출하구보다 높았으나(P<0.01) 등심, 삼겹살 및 뒷다리 가열육에 대한 기호도에서는 두 출하체중 구간 차이가 없었다. 현행 도체등급 판정 기준 및 도체 가격 하에서 110kg 대비 135 & 125kg 암퇘지와 거세돼지는 각각 두당 약 -35,000 원 및 3,500 원의 한계수익이 발생하나 만일 A & B 등급의 도체중 상한선을 적용하지 않는조건으로 계산하면 고체중 암퇘지와 거세돼지는 각각 두당 약 22,000 원 및 11,000 원의 한계수익이 발생할 수 있을 것으로 추산되었다. 이상의 결과를 종합하면, 현행 도체등급 판정 기준하에서도 120~125kg 출하돈이 110kg 출하돈보다 소비자의 기호에 더 잘 부응할 수 있고 수익은 후자와 동등 혹은 다소 향상될 수도 있을 것으로 사료된다. 더욱이 현행 A & B 등급의 도체중 허용범위가 철폐되거나 ‘고체중’ 도체를 수용할 수 있도록 상향조정되기만 한다면 본 실험에서 설정했던 암퇘지와 거세돼지의 표적체중 즉 135 & 125kg 이 적정수준일 것으로 예측된다. CHAPTER Ⅲ: 저에너지 사료를 급여한 비육돈의 출하체중 110kg 부터 135kg 범위에서 도살체중이 성장성적 및 육질에 미치는 영향 본 실험은 비육돈에 저에너지 사료를 급여했을 때 도살체중이 성장효율과 도체 품질에 미치는 영향을 조사하여 적정 도살체중을 추정할 목적으로 수행되었다. (Yorkshire × Landrace) × Duroc 교잡종 암퇘지와 거세돼지에게 3,060kcal DE/kg 의 저에너지사료를 생체중 80kg 부터 급여하여 110, 125, 혹은 135kg 에 도살한 다음 한국에서 선호도가 가장 높은 부위인 삼겹살과 선호도가 가장 낮은 뒷다리 및 등심에 대한 이화학적 특성과 관능검사를 실시하였다. 일당증체량과 일당사료섭취량은 공히 125 및 135kg 구가 110kg 구보다 높았고, 사료효율은 반대로 110kg 구가 높았다(P<0.01). 등지방두께는 도살체중이 증가하면서 증가하였고(P<0.01 와 P<0.05), 암퇘지보다 거세돼지에서 높아(P<0.01) 125kg 거세돼지의 등지방두께(24.6mm)는 135kg 암퇘지의 수치(24.2mm)와 비슷하였다. 삼겹살, 뒷다리 및 등심의 이화학적 특성은 도살체중의 영향을 거의 받지 않았으나, 110kg 과 125kg 도살체중 사이 뒷다리의 적색도 증가(P<0.05)는 주목할만 하였다. 삼겹살에 대한 관능평가에서는 이 부위의 매우 중요한 품질 특성인 지방층:근육층 비율이 125kg 도살체중에서 가장 높았으나(P<0.05) 전체적인 기호도는 도살체중과 무관하였다. 뒷다리와 등심 부위에서는 상강도는 110kg 과 125kg 도살체중 사이 증가한(P<0.01) 반면 색깔, 향, 이상취 및 육즙참출 정도는 도살체중의 영향을 받지 않았다. 또한 등심 부위의 전체적인 기호도는 110kg 과 125kg 도살체중 사이 증가하였다(P<0.05). 가열육에 대한 관능평가에서는 110kg 과 125kg 도살체중 사이에 등심 색깔이 진해진(P<0.05) 경우 외에는 색깔, 향, 이상취, 다즙성, 연도, 맛 및 전체적인 기호도 중 어느 품질 특성도 출하체중 변화로 인해 변하지 않았다. 결론적으로, 본 연구에 쓰인 저에너지 사료를 급여할 때 본 연구에 쓰인 돈군의 암퇘지와 거세돼지의 적정 도살체중은 각각 125∼135kg 및 125kg 수준이다. CHAPTER Ⅳ-1: 비육돈에서 사료의 에너지 수준과 도살체중의 영향 (성장성적과 도체의 등급 및 육질특성에 미치는 영향) 생체중 80.2±0.2kg 의 (Y × L) × D 교잡종 암퇘지와 거세돼지에게 .중에너지. 혹은 .저에너지.(3.2 vs 3.0 Mcal DE/kg) 사료를 급여하고 110, 125, 혹은 138kg 에 도축한 다음 이들 도체의 주요 부분육에 대한 이화학적 및 관능 품질 특성을 2(성) × 2(사료) × 3(도살체중) 요인분석 실험설계 하에 본 실험을 수행하였다. 일당증체량과 일당사료섭취량은 암퇘지에서보다 거세돼지에서 컸고(P<0.01), 110kg 도살체중 구보다 125 및 138kg 구가 컸다(P<0.01). 또한 일당증체량과 사료효율은 중에너지 구가 저에너지 구보다 컸던(P<0.01) 반면 일당사료섭취량은 저에너지 구가 중에너지 구보다 컸다(P<0.01). 등지방두께는 도살체중이 증가할수록 증가하였으나(P<0.01) 성혹은 사료의 영향을 받지는 않았다. 도체의 지방침착도는 암퇘지와 저에너지 구가 각각 거세돼지와 중에너지 구보다 높았다(P<0.01). 육질등급은 저에너지 구가 중에너지 구보다 우수하였으나 도살체중의 영향은 받지 않은 반면 육량등급은 일차적으로 A 와 B 등급에 요구되는 도체중 상한선 때문에 도살체중 125kg 과 138kg 사이 급격히 저하되었다. 삼겹살, 뒷다리 및 등심의 pH, 육즙참출율 및 색깔관련 변수 등을 포함한 이화학적 특성에 있어서는 비록 몇몇 경우에는 통계적인 유의성이 발견되기는 하였으나 품질적인 척도에 있어서는 어느 처리요인의 영향도 받지 않았다. 관능평가에서 삼겹살 신선육의 기호도는 어느 처리 요인에 의해서도 영향 받지 않았다. 뒷다리 신선육의 상강도는 중에너지 대비 저에너지 구에서 높았고(P<0.01) 도살체중 110kg 과 125kg 사이 증가하는 경향을 보였으며(P=0.10), 등심에서는 이들 두 도살체중 사이 본 변수의 증가는 유의성이 있었다(P<0.01). 가열육에서는 삼겹살과 뒷다리의 기호도에서 저에너지 구가 중에너지 구보다 우수하였으나 도살체중은 세 부위 모두에서 본 연구에서 평가된 모든 관능품질 특성에 영향을 미치지 않았다. 결론적으로 이상의 결과는 도체의 품질을 저하시키지 않고 도살체중을 138kg 까지 높일 수 있고, 저에너지 사료는 도체 및 주요 부분육 품질에 다소간의 유익한 효과가 있음을 시사한다. CHAPTER Ⅳ-2: 비육돈에서 사료의 에너지 수준과 도살체중의 영향 (등심근의 근섬유 특성에 미치는 영향) 본 연구에서는 Ⅳ-1 단원 연구의 도체분석에 쓰였던 공시돈 도체의 등심시료를 이용하여 비육돈의 성, 사료의 에너지 수준 및 도살체중이 근섬유 특성에 미치는 영향을 조사하였다. 도살체중이 증가함에 따라 총근섬유(Types Ⅰ, ⅡA & ⅡB) 수 및 Type Ⅱ B 근섬유 밀도는 저하되었으나(도살체중의 효과: p<0.01) 각각 type 의 근섬유 수 및 면적 비율에 있어서는 단지 Type I 근섬유에서만 성×사료 및 사료×도살체중 간의 상호작용(p<0.05)이 검출되었을 뿐 Types Ⅰ, ⅡA 및 ⅡB 에서 공히 성, 사료 및 도살체중의 효과가 나타나지 않았다. Types Ⅰ & ⅡB 근섬유의 직경과 둘레는 두 성 간에는 차이가 없었으나 도살체중이 증가할수록 증가하였고(도살체중의 효과: 각각 p<0.05 & p<0.01), Type ⅡB 근섬유의 둘레는 중에너지사료 구에 비해 저에너지사료 구가 높았다(p<0.05). 반면 Type ⅡA 근섬유의 직경과 둘레는 성, 사료 및 도살체중의 영향을 받지 않았다. 결론적으로, 도살체중 증가에 따라 예상되는 근섬유 type 의 수 및 크기 변화는 육질에 영향을 미치지 않거나 최소한의 영향만을 미칠것으로 예측된다.

The present study was undertaken to investigate the effects of the dietary energy level and the increasing slaughter weight above 110 kg on carcass quality and thereby to find optimal market weights for gilts and barrows and also to develop a late finisher diet and a feeding program for 'large' finishing pigs. CHAPTER Ⅱ: Domestically, finishing pigs are marketed at 110 kg on an average. However, it is thought to be feasible to increase the market weight to 120 kg or greater without decreasing the carcass quality, because most domestic pigs for pork production have descended from lean-type lineages. This experiment was therefore undertaken to investigate the growth efficiency and profitability of ‘high’-market wt pigs and the physicochemical characteristics and consumers' acceptability of the high-wt carcass. A total of 96 (Yorkshire × Landrace) × Duroc-crossbred gilts and barrows were fed a finisher diet ad laibtum in 16 pens beginning from 90-kg BW, after which the animals were slaughtered at 110 kg (control) or ‘high’ market wt (135 and 125 kg in gilts & barrows, respectively) and their carcasses were analyzed. Average daily gain and gain:feed did not differ between the two sex or market wt groups, whereas average daily feed intake was greater in the barrow and high market wt groups than in the gilt and 110-kg market wt groups, respectively (P<0.01). Backfat thickness of the high-market wt gilts and barrows corrected for 135 and 125-kg live wt, which were 23.7 and 22.5 mm, respectively, were greater (P<0.01) than their corresponding 110-kg counterparts (19.7 & 21.1 mm). Percentages of the trimmed primal cuts per total trimmed lean (w/w), except for that of loin, differed statistically (P<0.05) between two sex or market wt groups, but their numerical differences were rather small. Crude protein content of the loin was greater in the high vs. 110-kg market group (P<0.01), but crude fat and moisture contents and other physicochemical characteristics including the color of this primal cut were not different between the two sexes or market weights. Aroma, marbling and overall acceptability scores were greater in the high vs. 110-kg market wt group in sensory evaluation for fresh loin (P<0.01); however, overall acceptabilities for cooked loin, belly and ham were not different between the two market wt groups. Marginal profits of the 135- and 125-kg high-market wt gilt and barrow relative to their corresponding 110-kg ones were approximately -35,000 and 3,500 wons per head under the current carcass grading standard and price. However, if it had not been for the upper wt limits for the A- and B-grade carcasses, marginal profits of the high market wt gilt and barrow would have amounted to 22,000 and 11,000 wons per head, respectively. In summary, 120~125-kg market pigs are likely to meet the consumers' preference better than the 110-kg ones and also bring a profit equal to or slightly greater than that of the latter even under the current carcass grading standard. Moreover, if only the upper wt limits of the A- & B-grade carcasses were removed or increased to accommodate the high-wt carcass, the optimum market weights for the gilt and barrow would fall upon their target weights of the present study, i.e. 135 and 125 kg, respectively. CHAPTER Ⅲ: This study was undertaken to investigate the effects of slaughter weight (SW) of finishing pigs fed a low-energy diet on growth efficiency and carcass quality and thereby to assess the optimal SW. Lean-type crossbred gilts and barrows were fed a diet containing 3,060 kcal DE/kg from 80-kg BW and slaughtered at 110, 125, or 135 kg, after which the belly, the most preferred cut in Korea, as well as the least preferred cuts ham and loin were subjected to physicochemical and sensory analyses. Both ADG and ADFI were greater (P<0.05) in the group slaughtered at 125 or 135 kg than in the 110-kg-SW group, whereas the opposite was true for gain:feed (P<0.01). CHAPTER Ⅳ-1: (Y × L) × D-crossbred gilts and barrows weighing 80.2±0.2kg were fed a “medium-energy” (ME) or “low-energy” (LE) diet (3.2 vs 3.0 M cal DE/kg) and slaughtered at 110, 125, or 138 kg, after which physicochemical and sensory quality traits of major primal cuts of resulting carcasses were analyzed, under a 2 (sex) × 2 (diet) × 3 (slaughter weight; SW) factorial arrangement of treatments. The ADG and ADFI were greater (P<0.01) in barrows than in gilts and also in 125- and 138-kg vs 110-kg SW. Moreover, ADG and gain:feed were greater in ME vs LE (P<0.01), whereas ADFI was greater in LE vs ME (P<0.01). In sensory evaluation, the acceptability of fresh belly was not influenced by any of the treatment factors. Marbling score of fresh ham was greater in LE vs ME (P<0.01) and tended to increase between 110- and 125-kg SW (P=0.10); in loin, the increase of this variable between the two SW was significant (P<0.01). Following cooking, LE was superior to ME in the acceptability in belly and ham, but the effect of SW was insignificant in any of the sensory quality traits evaluated in this study in any of the three major primal cuts. In conclusion, the present results suggest that SW can be increased to up to 138 kg without compromising carcass quality and that LE has some beneficial effects on quality of the whole carcass and the major primal cuts. CHAPTER Ⅳ-2: Investigated in this study were effects of the sex, dietary energy level and slaughter weight on characteristics of the muscle fiber type of the longissimus muscle using the carcass samples which had been used in the study of chapter IV-1. The total number of all the three types of muscle fibers, i.e. types I, IIA and IIB, as well as the density of type II B fiber decreased with increasing slaughter weight (effect of slaughter weight: p<0.05). However, effects of sex, diet and slaughter weight on the number and density were non-significant in each type of muscle fiber, except for significant interactions between sex × diet and diet × slaughter weight in the type I muscle fiber. The diameter and perimeter of types I and IIB fibers, which did not differ between the two sexes, increased with increasing slaughter weight (effects of slaughter weight: p<0.05 and p<0.01, respectively). Moreover, the perimeter of the type IIB fiber was greater in the low- vs. medium-energy diet group (p<0.05). These two fiber size variables of the type IIA fiber, however, were not influenced by sex, diet, or slaughter weight. In conclusion, expected changes in the number and size of muscle fiber types accompanying an increase of slaughter weight are likely to cause no effect or minimal effect if any on meat quality of finishing pigs.
The present study was undertaken to investigate the effects of the dietary energy level and the increasing slaughter weight above 110 kg on carcass quality and thereby to find optimal market weights for gilts and barrows and also to develop a late finisher diet and a feeding program for 'large' finishing pigs. However, it is thought to be feasible to increase the market weight to 120 kg or greater without decreasing the carcass quality, because most domestic pigs for pork production have descended from lean-type lineages. Average daily gain and gain:feed did not differ between the two sex or market wt groups, whereas average daily feed intake was greater in the barrow and high market wt groups than in the gilt and 110-kg market wt groups, respectively (P<0.01).
