Arsenic (As) is a known human carcinogen and widely distributed in the environment. The main route of as exposure in the general population is food and drinking water. Seafoods, especially seaweeds, harvested in Korean coast contain high level organoarsenicals such as arsenobetaine, arsenosugars, arsenocholine which are much less harmful than inorganic arsenic. Inorganic arsenic (iAs) and its metabolites (MMA and DMA) have been commonly used as a biomarker of exposure to inorganic arsenic. Some organoarsenicals (arsenosugars and arsenolipids) can be metabolized to DMA in human body. Therefore seafood consumption can affect urinary levels of iAs and its metabolites. In this study, we analyzed the affecting factors on levels of urinary toxic arsenic (iAs, MMA and DMA) in the university students (n=192), and investigated the effects of seafood consumption on levels of urinary toxic arsenic in volunteers (twenty males and twenty females). Frequency of seafood consumption and seafood consumption within three days before urine sampling were the major affecting factors on urinary arsenic concentration. Urinary arsenic concentrations in the brown seaweed and laver ingestion groups were slightly increased after 9 hours and significantly increased after 12 hours compared with that in control group (p<0.01). The highest urinary arsenic concentrations were shown after 48 hours (after 12 hours from second seafoods ingestion), and then urinary arsenic concentrations were sharply decreased. The excretion pattern of urinary arsenic in the shrimp ingestion group was very different from that in the brown seaweed and laver ingestion groups. Even though total arsenic concentration in shrimp was higher than that in laver, urinary arsenic concentration in the shrimp ingestion group was significantly lower than that in the laver ingestion group. Urine samples after 12 hours from second seafoods ingestion were used for urinary arsenic speciation. Concentrations of arsenobetaine in the shrimp, brown seaweed and laver ingestion groups were 152.4, 23.0 and 28.4 μg/L, respectively. Concentrations of DMA in the shrimp, brown seaweed and laver ingestion groups were 30.3, 33.8 and 68.7 μg/L, respectively. I considered that the difference of urinary arsenic excretion patterns between shrimp, brown seaweed and laver ingestion group was resulted from the difference in compositions of organoarsenicals in seafoods. From these results, I suggest that seafood consumption should be banned at least for three days before urine sampling in using inorganic arsenic and its metabolites (MMA and DMA) as biomarker for exposure assessment to inorganic arsenic.
