Shelf life of perishable foods is often limited by microbial spoilage. Physical and chemical indices correlating with microbial growth have also been searched for monitoring or controlling the shelf life on-line. This study aimed to examine the potential use of package headspace concentration as the shelf life index and develop an innovative system to control microbial shelf life by monitoring it on real time basis. In order to find a convenient way to monitor and control the microbial quality and shelf life of chill-stored perishable foods, microbial growth and package headspace gas concentration changes were measured during storage of three foods (seasoned pork meat, Manila clam and seasoned spinach) at 10 oC, and their interrelationship was investigated. Aerobic bacterial count was the highest among the measured counts of microbial groups including specific spoilage organisms, and thus may be potentially used as an index of microbial spoilage of the foods. Spoilage bacterial growth on the foods accompanied O2 depletion and CO2 build up in package headspace with some delay. There was wide variation among the foods in the headspace package atmospheric change resulting from or related to microbial spoilage. Except for CO2 production of Manila clam, lag times of the O2 and CO2 changes determined by applying logistic function amounted to the times to 105.1-107.3 CFU/g, which is in the range of microbial quality limit commonly used for shelf life determination. Overall, lag times of gas concentration changes may be used as indicator of shelf life periods of the perishable foods to a limited extent. Aerobic bacterial count and package CO2 concentration were measured during storage of a Korean perishable food (seasoned pork meat) at four temperatures (0, 5, 10 and 15oC), and their interrelationship was investigated to establish a mathematical model. The microbial growth at constant temperature was modeled by using equation of Baranyi and Roberts. CO2 production from the stored food could be explained by taking care of its yield and maintenance factors linked to the microbial growth. The temperature dependence of the microbial growth could be described by square root equation to predict the CO2 production and concentration inside the package exposed to fluctuating temperature conditions. Finally an intelligent package headspace gas monitoring system was set up as a prototype to estimate and control the microbial shelf life of the perishable food on real time basis. Real time control logic of microbial shelf life of a perishable food, seasoned pork meat has been formulated which exploits monitoring of CO2 concentration of the package. The potential of the proposed logic was examined for storage at dynamic temperature conditions. The start of increase in CO2 production rate from the food or rate of package CO2 concentration change was found to coincide with the point of microbial quality limit and could be used as an index of microbial shelf life determination. This also corresponded to lag time of CO2 concentration change or time for the CO2 concentration to reach a certain value. The application potential of the proposed logic was confirmed for a sensor system to measure on real time and transmit the CO2 concentration wirelessly to the computer system.
