Recently, the importance of tailored nutrition education for improving the effects of nutrition education is being highlighted. This study aims to develop education contents, by comprehending educational needs and knowledge levels of educational targets and educators for elementary school students and elderly people-centered tailored nutrition education about processed food and food additives which is more effective and reflects the reality. For education for elementary school students, a focus group interview was first conducted with 6 nutrition teachers in elementary schools in Seoul. Based on the investigations, then, a questionnaire was developed, and a survey was carried out with 138 nutrition teachers in elementary schools in Seoul. For education for the elderly, after a focus group interview with 5 nutritionists in senior welfare centers and 10 elderly people to do volunteer work in welfare centers in Seoul, complete enumeration targeting 30 nutritionists working in welfare centers and survey targeting 30 elderly college teachers in Seoul were carried out, based on the investigations. As the result, 100% of nutrition teachers in elementary school answered that education about processed food and food additives is needed, and wanted to receive education about safety of food additives, food additives for each processed food, and flavoring agents and coloring agents in the form of video, PPT and teaching plan. In senior welfare centers, 96.7% of nutrition teachers responded that education about processed food and food additives is required, as well, and wanted to receive education about how to properly buy food, safety of food additives and nutrition labeling of processed food in the form of leaflet, PPT and video. A majority of the seniors did not have experience in education about processed food and food additives, and 98.1% of them replied that it is necessary to provide education on processed food and food additives. Since the seniors were mostly repulsed by processed food, there was a high demand for education about safety of food additives and how to buy food, in a right way. Based on these survey results, educational contents for elementary school students were developed using video clips(grocery shopping and cooking class) about processed food and food additives, teaching‧learning guidance plans, PPT, school newsletters to parents and the social cognitive theory to help them form self-efficacy, and for the elderly, posters and educational guidelines were suggested using educational contents about how to read food nutritional contents labeling, when purchasing processed food, how to check food additives for each commonly consumed processed food and how to reduce intake of sugar and sodium so they can use them efficiently in their every day lives. As the result, the following advices and policies for reducing intake of food additives were drawn, from the developed educational contents. First, practical plans for expanding quality-certified children's favorite foods and reducing intake of them should be suggested, by selecting major food additives of commonly consumed processed food reflecting characteristics of Seoul city. Second, using a cooking guideline manual for cutting down intake of food additives to be practically used for school food service and in senior welfare centers, recommendations for employees in food service facilities and parents have to be proposed. Third, food manufacturers need to show efficient ways of using food additives, by using natural additives, grapefruit, grapefruit seed extract, grain alcohol and others to replace food additives, when manufacturing food, improving the manufacturing environment through retort and gas filling-packing, and securing safety of food additives as much as possible to improve the distribution system through cold distribution(cold system). Fourth, management policy of food additives has to be formulated, by continuously educating and promoting required information of food additives, since there are a lot of interest in processed food and food additives, recently. Moreover, there should be more efforts for communication of risk information about processed food and food additives among elementary school students and elderly people. In conclusion, it is thought that tailored nutrition education which is based on the needs of individual educational targets, educational contents and data to be developed in the future and policies for spreading this education would help to develop upright dietary diet, by conveying proper scientific knowledge about processed food and food additives to elementary school students and the elderly in Seoul, and forming self-efficacy about dietary diet.
