Prevalence of AR genes (gadB, adiA, and cadA genes) was monitored for 61 foodborne E. coli isolates using polymerase chain reaction (PCR). Type strain E. coli K12, E. coli K12 ΔgadB mutant, E. coli K12 ΔadiA mutant, E. coli K12 ΔcadA mutant, and two foodborne E. coli isolates were tested for AR. AR systems 2, 3, and 4 needed the presence of glutamate, arginine, and lysine, respectively, during pH 2.0 acid challenge tests for 2 h after adapted in HCl or organic acids (pH 5.0). Three AR genes were detected in each of 61 foodborne E. coli isolates. In EG medium (pH 2.0) containing glutamate (AR system 2 assay), survival rates of E. coli strains except mutants were 33.19-40.58%, 33.28-38.66%, and 57.24-64.90% after adapted in HCl, citric acid, and lactic acid, respectively. Also in this medium, these E. coli strains could survive after no adaptation.
