이를 위해 먼저 국내 도압장 및 도계장에서 생산된 가금도체에서 살모넬라균의 오염 정도를 조사하고, 분리된 살모넬라균의 혈청학적 특성 및 항생제 내성 등의 특성을 파악하였다. 또한 유전학적 방법에 기반을 둔 자동화된 rep-PCR법과 항생제 내성패턴의 복합적인 적용으로 분리균주 간의 유전적 연관성을 분석하였다. 다음으로 Torrymeter를 가금육에 적용해봄으로 신선도 평가의 활용가능성을 알아보고자 계육의 가슴살 및 다리살을 일정기간 저장하면서 Torrymeter값을 측정하고 가슴살의 저장기간별 pH 및 선도변화와 함께 물리적 상해, 살모넬라 오염, 분변 오염 등이 가슴육에 가해졌을 때 Torrymetr값에 영향이 미치는지 살펴보았다.
살모넬라는 오리도체에서 더 높은 정도로 오염되어 있음을 확인할 수 있었고 오리도체에서 분리된 살모넬라 균주는 항생제 다제내성 균주의 비율이 높았다. 유전자 분석결과, 광범위 베타락테마아제(ESBL)를 산생하는 blaCTX-15 혹은 blaCMY-2 유전자를 지니고 있음을 확인할 수 있었고, 특히 blaCMY-2 유전자를 지닌 균주는 접합 내성전달 시험을 실시한 결과 관련유전자를 비보유균주에 전달하는 것으로 확인되었다. 계육에서 검출된 살모넬라균의 분리율은 동절기(6.7 %) 보다 하절기(23.3 %)에 더 높게 검출되었으며, 계육 유래 살모넬라 균주 중 한 균주도 ESBL을 산생하며 다제내성을 보였다. Torrymeter 측정값은 가슴살의 선도가 떨어질 유의적으로 감소하였으며 (P<0.05), 저장시간과 뚜렷한 상관관계를 보이는 것을 확인하였다.

The main objective of the present study was to evaluate the microbiological contamination and quality properties related to freshness of poultry carcasses sampled in poultry slaughterhouses.
In the first study, the prevalence, serotypes, and antibiotic resistance patterns of Salmonella were determined from fresh raw duck carcasses samples. The isolates with multidrug resistant (MDR) phenotype including third- and fourth-generation cephalosporins were evaluated by PCR assay and the resistance genes to broad spectrum β-lactams, blaCTX-M-15 and blaCMY-2, were detected.
In the second study, the seasonal prevalence, serotypes, and antibiotic resistance patterns of Salmonella were determined from fresh raw chicken carcasses samples. A total of 18 chicken samples (15%) were found to be contaminated with Salmonella, with a higher rate of contamination observed during summer (14 isolates, 11.7%) than during winter (4 isolates, 3.3%). An automated repetitive sequence-based PCR (rep-PCR) system, DiversiLabTM, clearly differentiated the strain with the ESBL gene from strains without ESBL gene.
In the third study, the applicability of Torrymeter in estimating the freshness of poultry meats was evaluated. Additionally, Torrymeter values were analyzed in relation to the growth of bacterial groups occurring on chilled breast meats stored in refrigerator. Torrymeter values significantly decreased with an increase in storage period (P < 0.01), suggesting that Torrymeter can be utilized as the fast and early method in evaluating freshness of poultry meats in the poultry processing plants.
In conclusion, a series of studies presented that a large proportion of carcasses were still contaminated with Salmonella in spite of efforts to control contamination within slaughterhouses. To improve the meat quality and effectiveness of microbiological control in the poultry industry, it is needed for the slaughterhouses to apply sanitation standards without damaging meat quality, taking into account quality attributes that may be affected by microbiological control.
