The purpose of this study was to develop Hanrabong sour starter appropriate for the South Korean environment, use Hanrabong to develop products, and contribute to the income of farmhouses raising Hanrabong in Jeju against the reckless imports of foreign agricultural products, including oranges. For this purpose, baguettes were produced with variation in the content of Hanrabong starter; then, acceptance test was performed by determining appearance, flavor, texture, taste, and overall acceptance; quality characteristics of bread and sensory test was performed as attribute difference test by determining a total of 9 factors: volume, crust color, crumb color, grain size, grain uniformity, firmness, springiness, moistness, and sour taste. CON had the largest volume; a higher sour starter content led to a significantly smaller volume; therefore, the higher Hanrabong sour starter content, the smaller volume and specific volume. The water content was highest in CON and lowest in H10 added with 10% Hanrabong sour starter; however, a higher Hanrabong sour starter content led to a significantly higher water content. As for color variation of Hanrabong sour starter baguettes, a higher content led to significantly lower L values and darker color; variation in the Hanrabong sour starter content in baguettes made no significant difference in a values while b values differed significantly by the sour starter content. pH was measured at sour starter, after the first fermentation, after the second fermentation, and after roasting; at sour starter, it was highest in CON and lowest in H40; therefore, it became significantly higher with the progression of fermentation. At the first fermentation, it was also highest in CON and lowest in H40, showing significant results. At the second fermentation, it was also highest in CON and lowest in H40 in every experimental group, showing significant results. Lastly, crumb pH was also highest in CON and lowest in H40; therefore, the experimental group with a high Hanrabong sour starter content obtained the same values even with the progression of fermentation, showing significant results. H30 scored highest for firmness, showing significant results; H20 scored highest for springiness; thus, those products containing a proper amount of sour starter scored significantly higher.
