All purpose wheat flour is the most commonly and mainly used for dry noodle. The high water absorption of flour is inadequate for noodle making performance of dry noodle because of requirement of relatively long drying time. Generally, formulation for dry noodle uses limited water, but still requires the gluten development for sheeting and cutting, drying, and cooking and texture. Therefore, flour with relatively low water absorption, low damaged starches and low arabinoxylan would be preferred for producing high quality of dry noodle. This study was conducted to investigate dry noodle characteristics of Korean domestic wheat flours and improvement of noodle making performance by varying drying conditions and treating enzymes. In this study, six Korean domestic wheat flours produced at different millers were used for analyzing flour quality, dough characteristics and noodle making performance. The effects of drying conditions and enzyme treatment on dry noodle quality of Korean domestic wheat flours were also evaluated. As flour quality characteristics, the ash contents of the six Korean domestic wheat flours were higher than that of commercial all-purpose flour as the control. Solvent retention capacity (SRC) results represented flour quality showed all Korean domestic wheat flours were much lower lactic acid SRC values and gluten performance index (GPI), compared with the control. Mixograph data of one of the commercial Korean domestic flours showed very narrow bandwidth, which indicated higher damaged starch and arabinoxylan contribution. During cooking dry noodles made with the Korean domestic wheat flours, all noodles showed significant breakage, compared with the control. In addition, the texture of the cooked noodles was less viscoelastic by less springiness, cohesiveness, gumminess and chewiness, compared with the control. Overall, dry noodle making performance of the commercial Korean domestic wheat flours was inferior to that of commercial all-purpose flour, which might be due to higher ash content and lower GPI. Noodles dried at different conditions such as time, temperature, humidity and air blow showed the significant difference in appearance as well as texture of cooked noodles. Regardless of the final moisture content of the dry noodles, noodles dried at high temperature for a short time were broken into small pieces, which reflected the significant effect of drying time and speed on final quality of dry noodle. Gradual drying out moisture with humidity control or drying at low temperature (30oC) with air blowing seemed to be desirable conditions for producing good quality of dry noodles. The effect of enzymes on reducing damaged starches and arabinoxylans confirmed the significantly decreased water SRC values of flour treated with amylase and xylanase. With increasing enzyme concentrations, water SRC values decreased significantly up to 0.025% (flour weight basis) enzyme concentration. Noodles treated enzymes showed significant changes in textural characteristics of cooked noodle. In particular, noodle made with addition of amylase and less water resulted in decreased firmness and adhesiveness, which is similar with non dry noodle and demonstrated the improvement of noodle making performance through diminishing the negative effect of damaged starch in flour on noodle quality. In conclusion, dry noodle making performance of Korean domestic wheat flours were inferior to that of all purpose wheat flour. Lowering milling extraction, varying drying conditions and application of enzymes for reducing water absorption capacity of flour could mitigate the issue of inferior dry noodle making performance.
