This study was conducted to develop a horticulture activity program for improving eating habits of elementary school students and to determine the effects. A total of 208 elementary school students (average age: 11.6 ± 1.5 years) participated in this study, 96 of 3rd grade students at K elementary school and 112 of 6th grade students at C elementary school. This horticultural activity program was conducted in outdoor gardens and indoor place of education in the school during the regular school hours for a total of 12 weeks (once a week, 40 minutes per session). To improve the eating habits of elementary school students, horticultural activity program was constructed including gardening activities, nutritional education, and culinary activities using harvests based on the child’s eating habit improvement mediator model. In order to examine the effect of the horticultural activity program on improving the eating habits of elementary school students, the mediating factors related to eating habits (e.g. dietary self-efficacy, outcome expectancies, gardening knowledge, nutrition knowledge, fruits and vegetables preference, fruits and vegetables intake, and food neophobia) of participating students were evaluated using questionnaire scales before and after the horticultural activity program. In addition, for the assessment of nutritional status of students who participated in the program, a mineral content test was conducted through hair sampling before and after the program. As a result, dietary self-efficacy, outcome expectancies, gardening knowledge, nutrition knowledge, fruits and vegetables preference, and fruits and vegetables intakes of students participating in the horticultural activity program were significantly increased (P=0.000), and food neophobia scale significantly decreased (P=0.014). The content of heavy metals (mercury and arsenic) in the hair of students was significantly decreased after participating in horticultural activity program (P=0.000, P=0.001). The result of correlation analysis between mediators was confirmed that there were significant correlations between most mediators. Therefore, horticulture activity agriculture program of this study was effective in improving elementary school students’ eating habits. This study confirmed the applicability of horticultural activity program as a diet education program for children in actual education field.
